  • Low heat it takes a little patience to make the perfect grilled cheese. Keep your heat on low to give the cheese time to fully melt while the bread gets golden and crisp. If browning too fast, turn the heat down.
  • Butter generously the amount of butter may seem like a lot, but it is important for a crispy exterior.
  • Use thick-sliced bread we love using Texas toast because its sliced about twice as thick as normal sandwich bread. You want bread that is about 3/4 to 1 thick, but also avoid bread that is too thick or your cheese wont melt properly. Using bread that is too thin will produce a flimsy and sometimes soggy sandwich.

California Style Grilled Monterey Jack Sandwich With Avocado And Grilled Onions

Ingredients:

  • Two 1/4 inch thick slices large Vidalia or red onion
  • 1 TBS extra virgin olive oil
  • Salt and pepper to taste
  • 4 slices whole wheat sandwich bread
  • 2 TBS of butter at room temperature
  • 4 slices Monterey jack cheese
  • 1/2 of an avocado sliced thinly

Total time: 13 minPrep time: 10 min Cook time: 3 min Serves: 2 people

Directions:

1. Preheat your grill to high for 5 minutes with the top closed.

2. Coat the onion slices with the EVOO and season with salt and pepper. Place the onion slices on the grill. Close the lid and grill for 5 minutes. Check the onions for grill marks and slight tenderness, but not falling apart. If needed, continue to grill for up to an addition 5 minutes until the onions are cooked but not burned.

3. While the onions are grilling, prepare your sandwiches. Butter one face of all 4 slices of bread. Turn 2 slices of bread over so that the unbuttered side faces up. Place 1 slice of cheese on these slices of bread. Place equal amounts of avocado slices on top of the cheese slices. Top the avocado with one onion slice each. Add another slice of Monterey jack to the sandwiches and top with the other piece of bread with the buttered side facing up.

4. Place the assembled sandwiches on the grill and close the lid. Cook for up to 3 minutes until golden brown with light grill marks and the cheese has melted.

5. Cut the sandwiches in half and serve with creamy cabbage and carrot slaw on the side.

    For me, its easier to use a 10-inch skillet and grill just one or two sandwiches at once. Unless you have an amazing stovetop with giant burners, its difficult to have even heat distribution across a very large skillet, leaving your sandwiches with pale patches.

    Need to make a bunch of grilled cheese sandwiches all at once? Try it in the oven:

  • Put bread slices butter/mayo-side-down on a sheet pan, place cheese over each bread slice, and bake in a preheated 425°F oven until the cheese is bubbly.
  • Then close the sandwiches and bake until toasty, about 5 minutes longer.
  • The sandwiches wont be quite the same, being baked rather than grilled, but theyll all be ready to serve at once.

    • 4 slices multi-grain & seed bread
    • 2 TBS of butter at room temperature
    • 16 thin slices of brie cheese
    • 8 thin slices of peaches or 12 slices of large strawberries*
