My cheesemonger friend got me onto using mayonnaise instead of butter.

Its always spreadable, it gives you a fabulous golden-brown crust thats not as apt to burn as butter, and it offers just a little zip.

My favorite brands are Hellmanns/Best Foods and Dukes. I havent tried Miracle Whip , but I figure its too sweet to work well here. You can also make your own mayoits actually just as easy as making a grilled cheese!

Give mayonnaise a shot! Use the same amount as you would butter.

If you are 100 percent Team Butter, I understand. You can either butter the bread directly or melt a pat of butter in the pan. I prefer to butter the bread directly, but lets say your butter is straight from the fridge and rock-hard. In that case, melt it in the pan.

The Bread: While were talking about the bread burning before the cheese melts, that risk is also present when you use really thick bread. Add to that the cheese-to-bread ratio is off, and I find it best to use a hearty bread sliced to about 1/2 thick.

On the topic of bread, toast BOTH sides. This serves two purposes. First, it prevents the bread from getting soggy from the liquids in the cheeses as they melt. Second, adding the cheese to a hot toasted surface helps it to start melting faster.

The Butter: Unless butter has been sitting at room temperature for several hours, its hard to spread. If youve ever tried to spread cold butter on bread, you know its a pain in the backside. So, melt the butter in the pan, and add the bread to it. So much easier this way.

The ingredients for a grilled cheese sandwich are few. You just need bread, butter, and cheese. With so many different breads and cheeses, you are bound to make a delicious creation.

The key to the perfect sandwich is the toastiness of the bread and the melt of the cheese. The best way to achieve this is to use a cast-iron pie iron sandwich maker or grilling directly over the campfire on foil or a griddle.

What Cheese Is Best For Grilled Cheese

This is part personal preference and part general guidance. From a personal preference perspective, you may prefer provolone or Swiss cheese to Gruyère, for example.

If thats the case, by all means switch them out. If you like things a little more spicy you might switch one of the cheeses for some pepper jack again thats personal preference. The cheeses used here are simply my favorites, and they play nicely together.

For a general guideline I would tell you to choose cheeses with high moisture content, like the ones I use. Other cheeses like blue cheese or Monterey jack are also terrific.

That said, I dont recommend the harder cheeses with lower moisture content. Those cheeses dont melt as well, so keep those for your charcuterie board.

Finally, as much as I like extra sharp cheddar, I find it gets too oily when melted so I stick with mild cheddar.

These are the steps you need to follow to make grilled cheese on grills:

  • Start by preheating your grill to a medium heat. Meanwhile, brush your grates until they are fully clean. Thats where you will place the grilled cheese, and bits of charred leftovers dont go well with bread.
  • Now, spread the butter on both sides of the bread. We love it when its extra buttery, but this step depends on your preference.
  • Once the bread has been buttered, it is time to assemble the sandwich. Add the cheese and any other extra ingredients you might like. We recommend a couple of pieces of thinly sliced turkey for a delicious smoky flavor.
  • After assembling the sandwich, you can place it on the grill. Using a spatula, press down firmly to get those distinctive grill marks. Then close the grill lid and let the sandwich cook for around four minutes.
  • At minute two, check the sandwich. If the temperature is right, let it cook for another two minutes. Then flip it and let it cook for another four minutes on that side until the cheese is melted completely.
