Make The Cheese Sauce
While the macaroni is cooking, make the cheese sauce. It’s really easy but there are a few notes that we’ll go over to ensure your success!
Make a Roux
This homemade mac and cheese sauce starts with a roux. What is a roux? It’s a mixture of fat and flour that is used to create thick sauces. Start by melting the butter and then adding the dry ingredients .
Use a whisk to combine the ingredients until the mixture is homogenous . Let it cook for about 60 seconds before moving on!
Add wet ingredients.
After the roux has cooked for 60 seconds, add the milk and whisk the mixture really well. Add the sour cream or Greek yogurt and whisk again. At this point the mixture will be fairly runny. Cook over medium heat whisking every 10-15 seconds until the sauce starts to thicken.
Do NOT let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Once the sauce has thickened enough to stick to a spatula, turn the heat to low. Then it’s time for the next step…
Add the cheese & whisk until smooth
Add the cheese and whisk until the sauce is smooth and all the cheese is melted. This will take 1-2 minutes over low heat. At this point it is important to taste the cheese sauce and adjust the salt/garlic according to your tastes!
Tips For The Best Mac & Cheese
Freshly grated cheese dont use pre shredded. They have anti caking agents that can make the sauce grainy.
No bloated overcooked pasta Cool macaroni slightly and lightly coat in butter. This stops the macaroni from absorbing more liquid while baking, resulting in bloated overcooked pasta and less sauce.
To avoid lumps in your sauce, stir constantly as you slowly pour the milk in and keep stirring once the milk is all added. If necessary, switch to a switch to get rid of stubborn little lumps!

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.
I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

I use three different kinds of cheese in this recipe: Gruyère, extra-sharp Cheddar, and Parmigiano Reggiano. Using more than one type of cheese adds dimension to the dish. When I say Im making a Kasespatzle recipe, people look at me funny. Like Im making up new words out of thin air.

Many folks believe that macaroni and cheese is a purely American dish.
Theyre surprised when I tell them that most European countries not only have their own versions, but that some of theses recipes appeared on the culinary map long before macaroni and cheese became popular in the United States.
The Italians, stalwarts of all things cheese- and pasta-related, combined these two ingredients into many a hearty dish, such as baked ziti and cacio e pepe.
The Swedes have their makaronipudding, a simple, stoic casserole of macaroni and any number of northern cheeses, such as Gruyère or Emmentaler.
The French quite possibly perfected cheese sauce with their lovely Mornay, sister sauce to Our Lady of Béchamel, expanding upon the basic roux and milk combination with a few handfuls of shredded cheese.
Kraft Macaroni & Cheese Is Made With Phthalates But It’s Not Clear What That Means
While you won’t find preservatives and artificial flavors in Kraft Mac & Cheese, you will find another controversial ingredient. Kraft’s powdered cheese has been found to contain high levels of chemicals known as phthalates . On its website, Kraft notes that it does not add any phthalates to its product, but the chemicals can apparently wind up in some manufactured products during the production process .
The issue with phthalates is that it’s not clear how safe or harmful they actually are. Some medical experts believe these chemicals may disrupt humans’ hormonal systems. CNN reports that phthalates have been banned in children’s products since 2008 by the U.S. Consumer Product Safety Commission. On the other hand, the Centers for Disease Control and Prevention says, “Human health effects from exposure to low levels of phthalates are unknown.” On top of that, Kraft claims, “The trace levels found in the one limited test of mac & cheese are well below any level of concern.”
