This better than store-bought blue cheese dressing is incredibly simple to make and you probably already have most of the ingredients you need to make it in your kitchen. This creamy dressing is just as easy to make as our buttermilk ranch dressing, this creamy Caesar and our homemade Italian vinaigrette !
Heres what you will need to make it:
Sour cream and mayonnaise For the best blue cheese dressing, use both. A combination of sour cream and mayonnaise make the dressing extra creamy. Mayonnaise can be heavy by itself. Adding sour cream lightens up the dressing a bit. If youre used to only using mayonnaise, try adding a bit of sour cream next time. Its a game changer. If youre in the mood, you can make homemade mayo, too. Heres our no-fail mayonnaise recipe.
Blue cheese Use a blue cheese that you love. We usually go for something that isnt too expensive and that tastes rich and creamy. Gorgonzola is a good option.
Fresh parsley Were big fans of fresh herbs, so we add them to just about everything. Fresh parsley adds both color and flavor to the dressing.
Salt and pepper There will be some salt in the mayonnaise and cheese, but we always end up adding some additional salt to the dressing to make the flavor pop. Pepper adds some spice.
Just a few seconds of stirring turns the dressing into a creamy and delicious mixture.
For a lighter dressing with fewer calories, you can swap the mayonnaise for light mayo and the sour cream for plain yogurt.

- 100 g blue cheese
- 128 g premium sour cream
- 63 g olive oil mayonnaise or avocado oil mayonnaise
- 30 g lemon juice, freshly squeezed
- 7g garlic grated or 1/2 tsp garlic powder
- 1.5 g salt
- 0.3 g black pepper
1. Into a small bowl add all of the ingredients: the blue cheese, the sour cream, the mayonnaise, the lemon juice, the garlic, salt and pepper
2. Stir well to combine. Cover bowl with cling wrap and refrigerate for at least 2-4 hrs. or overnight for best taste. Take out of the fridge and let the dip get to room temperature. Enjoy!

Its kind of like when you have to render out the fat on a duck breast in order to get it crispy. Parboiling boils away some of the excess fat so we can get a thin layer that crisps more easily than a thick and flabby layer.

Dry the skin well Water and moisture are the enemies of crispy, so you will need to make sure to dry the chicken skin thoroughly so they can get supremely crispy.
Flip once during cooking Its a little more work to flip the pieces over during cooking, but it really is essential. They wont get as crispy all over unless you flip them over and give the other side a chance to brown.
Buy party cut pieces Its true that you can sometimes save a tiny bit of money by cutting the chicken yourself into wingettes and drumettes, but pre-cut pieces tend to be more consistent. This consistency in size is essential for even cooking and browning. If you have some larger pieces and some smaller, youll have a mix of over and underdone chicken.

To get started, melt a half stick of unsalted butter in a saucepan:

Next add Franks, and the exact one you want is Franks Red Hot Original Cayenne Pepper Sauce.
They sell quite a few varieties, but its this original one that you want in particular:
Next add worcestershire sauce. Only a little bit is needed:
Then add ground cayenne pepper to the buffalo sauce:
When you want more heat, always add more ground cayenne pepper instead of extra Franks sauce. Otherwise youll throw off the balance of acidity.
Whisk this all together until its emulsified:
If you havent tried chicken wings baked instead of fried, its one of my most popular recipes since 2012 and many people like them more than fried wings.
One more note on the sauce: it will change in consistency as it cools off, because butter tends to firm up as it chills. For that reason, we make the sauce while the wings are cooking. You can reheat it as needed.
Can you make buffalo sauce ahead? Yes, just reheat on the stove or in the microwave and whisk together to combine.
Also, we dont add any salt to the sauce, as there is a substantial amount in the Franks. But you can adjust to taste if youd like.

And the best part this dip can be transformed into a blue cheese dressing with the addition of another few tablespoons of milk, half and half or cream. Just keep adding it in small increments until it reaches the consistency you like.
You could also add a splash of red or white wine vinegar if you like your blue cheese dressing to have a bit more tang, which I do love.
