    For one sandwich at a time, I like a 10-inch cast-iron skillet.

    • Put both slices of bread in the skillet butter-side-down
    • Arrange half the cheese over each slice. Once its halfway melted, invert one slice onto the other.
    • Press down lightly with a spatula .
    • Finish grilling as needed until the cheese is melted and both sides of the bread are golden brown.

    Open-face grilling makes it easy to insert accouterments like tomato slices or chutney midway through grilling. The partially melted cheese bonds to the filling and keeps it from sliding around.

    Tips For Grilled Zucchini

    • I like to use small zucchini that Ive cut into quarters. Cooking with larger pieces of zucchini helps to prevent it from getting mushy on the grill. If you prefer to slice your zucchini you can, just make sure the slices are at least 1/2 inch thick.
    • I use dried Italian seasoning in my marinade, which is widely available in the spice aisle of most grocery stores. If you dont have Italian seasoning, you can use equal parts of dried parsley, oregano and basil.
    • Fresh lemon juice is best here, do not use the kind in a bottle.
    • I like to garnish my grilled zucchini with fresh herbs such as chopped parsley. If you dont have parsley on hand, other great options are fresh dill, basil or chives.

    Unsalted butter: I love using creamy European butter, but any butter will be great.

    Milk or cream: I usually opt for whole milk.

    Eggs: I use large eggs in most of my recipes, this one included.

    Salt: I use sea salt. If using coarse kosher salt, you can use a little more of it.

    Coconut flour: An excellent flour substitute. Itâs highly absorbent, so try to measure it by weight and not by volume. Every extra gram makes a difference.

    Baking powder: Make sure itâs fresh before using it.

    Sharp cheddar: You can use other melty cheeses such as provolone. But I love cheddar.

    Sliced white bread is a go-to, but subbing in different breads can lend your grilled cheese more flavor and texture.
