Vegan Substitutes For Milk In Mac And Cheese

Over the last couple of decades, and increasingly so in the past few years, the food industry has really placed a big focus on animal-free products.

This was probably sparked by the major uptick in uncomfortable dairy intolerances and allergies.

Plus, not only do they tend to have more overall health benefits, but they include much more sustainable ingredients and contribute to major environmental benefits.

This has naturally called for an increase in the production of available options to cater to these dietary requirements.

Mac and cheese, unfortunately, is a staple meal a ton of people previously could not consume due to intolerances and allergies or the choice to lead a vegan lifestyle.

Whatever your reason, luckily, there are now a ton of easy-to-find and extremely healthy non-dairy alternatives.

These alternatives are all plant-based, making them suitable for vegetarian and vegan diets as well.

You can use any dairy-free item you would like, but for today, lets focus on coconut cream, almond milk, and oat milk.

We will focus on how their consistency will affect the mac and cheese as well as their flavor.

How Do You Use Whipping Cream To Make Mac And Cheese

Ultra Creamy Baked Mac and Cheese

Again, whipping cream works well if you are used to creating a roux. Heat the butter, fry in some flour, and then add a cupful of vegetable broth and stir until smooth and thick. Add the cream and a little more broth if necessary, and keep gently heating the mixture until it becomes thick.

You can add as much liquid as is needed, but be cautious of adding too much cream, or your sauce may end up being sickly. The broth ensures that you have enough liquid without too much fat, and stops the dish from becoming overwhelming. If you dont have any vegetable broth, you can just use water instead.

Stir in other herbs and spices, add the cheese once your mixture is thick, and then combine it with the pasta and serve it. You should find that the sauce is deliciously creamy, and youd never know the milk was missing!

Why I Love This Vegan Mac And Cheese Recipe

I started making stovetop mac and cheese with the hopes of recreating my favorite Noodles & Company order, but it also serves as a quick substitute for my favorite baked mac and cheese.

Because sometimes, you just dont want to wait the 30+ minutes it takes to bake that mac and cheese in the oven, no matter how good the end results are. Sometimes, you just want your big bowl of cheesy goodness as soon as possible.

And when youre making mac and cheese on more-than-regular basis because youre pregnant and need a constant stream of carbs and cheese, you just have to keep things simple. So Ive mastered stovetop mac and cheese, and I never want to stop eating it.

How To Make Macaroni And Cheese Without Milk

Begin making this macaroni and cheese recipe without milk by boiling a large pot of salted water. Add the elbow noodles and cook macaroni according to the package instructions.

While the noodles boil, melt the cream cheese and sour cream in a separate large saucepan over medium-low heat . Add in the ground mustard, and the pasta water once the noodles are almost done boiling.

Note: You want to wait to use the pasta water until the noodles have almost finished boiling because you want the water to be loaded with starch for its binding power.

Stir the cheese shreds into the sauce mixture until melted and well combined. At this point, the noodles should be finished boiling, so the cooked noodles can be drained from the water and combined with the sauce.

Note: You can actually make this a one-pot homemade mac and cheese by draining the noodles and combining all of the sauce ingredients with the noodles, however, I prefer the added control of making the sauce in a separate pan.

Are These Substitutes Nutritious

This is difficult to answer but is a frequently asked question. It really depends on what your own definition of nutritious is.

To many people, cows milk isnt nutritious and causes severe inflammatory reactions, while to others it is a crucial part of their daily dietary needs.

Generally, animal-based milk products contain a lot of vitamins and minerals. Plant-based milks usually dont contain as many nutrients because they are often strained and diluted with water.

Before using any substitute, make sure you know what it contains and if it meets your personal dietary requirements.

How Do You Use Plain Yogurt To Make Mac And Cheese

How to make Baked mac and cheese without butter. Simple Classic Dish.

This substitute creates a less satisfying, creamy flavor, but you can use it in a pinch. If you find mac and cheese too greasy, you may prefer a yogurt-based recipe. You should use a full fat yogurt with no sugar, preferably Greek yogurt, and make sure you heat it slowly.

Yogurt tends to split when heated fast, so be careful about this. Use a low heat, and stir the yogurt into the cheese until the cheese has fully melted and they are combined. You dont need to make a roux, because the yogurt should be thick enough to give the sauce a good texture.

Taste your sauce and add seasoning if necessary, and then stir your pasta into it and serve. You may want to add a little sour cream or whipping cream to the sauce if you find it too tangy.

Do These Substitutes Work With Any Variation Of Mac And Cheese

As with any recipe, especially those with a wide variety of variations, it is extremely important to experiment.

Each of the above-mentioned substitutes have their own unique flavors that might not be appetizing with every other type of flavor.

For example, we do not like using almond milk with ground beef mac and cheese, but we do enjoy soy milk with it.

Make sure to take notes when using substitutes, something you can refer back to, to make sure you can improve on the previous recipe and adapt it to your personal liking.

Choose Your Cheeses Thoughtfully

You might think you can just throw whatever cheeses you happen to have in the fridge into your mac and cheese, and, to a certain extent that’s true. But if you’re looking to make the creamiest mac and cheese you possibly can, you’ll want to be a little more discerning. A cheese like Parmesan, for instance, isn’t going to melt super well, meaning it’s better for a topper than for your creamy cheese sauce. Cheddar and similar cheeses that melt well will make your sauce the creamiest it can be.

    Be Careful With The Roux

Though a roux is important for thickening up your cheese sauce, you want to make sure that you don’t add too much of your flour and butter mixture because otherwise the sauce can get too thick, which negatively impacts the creaminess. Too much butter and flour will make your sauce more like glue than a creamy, rich sauce.

Cook Your Noodles In Milk Instead Of Water

Cooking your noodles in milk instead of water makes your resulting mac and cheese creamier. According to The Kitchn, cooking your noodles in milk instead of water makes the sauce creamy before you even add the cheese sauce. The starches in the noodles get released as you cook them, helping to thicken the mixture from the start. That will ultimately help with the resulting creaminess.

Will Mac And Cheese Taste The Same Without Milk

You will probably find that mac and cheese tastes a little different if you skip the milk, although you may find that you actually prefer some of these alternative recipes. On the whole, as long as you have a creamy ingredient, the difference should be slight.

This is because the dish gets most of its flavor from the cheese, rather than from the milk. If you have good cheese, this ought to carry the dish and ensure that it tastes great no matter what.

However, if you find that you dont really like one of the suggested substitutes above, consider giving one of the others a go. This is particularly true for using the plant milks you may have to try a few to work out which one you enjoy.

    Traditional Mac And Cheese

Mac N Cheese Without Milk Recipe

The exact origin of mac and cheese cannot be pinpointed to a day or even a precise origin, but it is believed that mac and cheese originated in Northern Europe.

The first known record of mac and cheese dates back to 1769, still making it a relatively old dish.

Former US president Thomas Jefferson brought this family favorite to the United States after a visit to France.

He loved it so much that it was served at a state dinner in 1802! So, yes, he might have been a little obsessed with this creamy dish, but arent we all!?

Ever since then, mac and cheese has become one of the worlds most popular pasta dishes.

Mac and cheese is not only served as a dish on their own but often are served as an accompaniment to other dishes, especially barbeques or roast dishes.

Mac and cheese is usually made from a combination of macaroni and a thick and creamy Mornay sauce.

Mornay sauce is simply a béchamel sauce that is made from butter, flour, and milk. Then, a bunch of cheese is melted into the sauce to create that delicious pull.

This is usually the first part where people experiment with the flavors of macaroni and cheese.

Traditionally, cheese-like Emmental, Cheddar, Parmesan, or Gruyere is used in this sauce or a combination of them.

Today, people use virtually any and every type of cheesethat can melt nicely. Cheeses like feta wont create a smooth and creamy sauce.

Then, very slowly and in small batches, the milk is whisked in to create a smooth slurry, and eventually the sauce.

Best Milk For Mac & Cheese

    • Plain Oat Milk:Oat milk does kind of taste like oats, but under the cheese and anything else you want to put in your mac n cheese it shouldnt be strong enough to notice. Oat milk has a thicker texture than regular cow or soy milk.
    • Soy Milk: Soy milk is not as thick as oat milk, and you can put almond milk in that category as well. Some companies put other natural thickeners in the milk to give it texture, but in our experience, its not thicker than oat milk.
    • Non-Dairy Cream or Whipping Cream: These are thick just by nature and can be found in non-dairy forms, and whipping cream is much thicker. As you stir whipping cream, youll get a peak after a while, so make sure you really want the texture to be firm and creamy.
    • Cashew Milk: This is like almond milk and will give a nutty tinge to it, but it will still have the consistency of almond milk. Any nut milk is the same.
    • Goat Milk: This makes it a bit creamy and sweeter.
    • Coconut Milk: Its creamy texture out of the can where its more of a solid will do best for creaminess.

    Give Cottage Cheese A Try

When you’re considering which cheeses to use for your extra creamy mac and cheese, you might want to consider adding in some cottage cheese. It’ll make the sauce extra creamy and extra cheesy without complicating the overall flavor profile too much. Again, you’ll want some with a tiny bit of fat if possible for the creamiest, richest sauce, but if you can’t swing cottage cheese with fat, the fat-free kind will work as well.
