How To Make Buffalo Chicken Dip Without Cream Cheese
Sauté the onion and garlic. Heat a medium saucepan to a medium heat. Sauté the onion and garlic in olive oil for a few minutes until it becomes soft and fragrant. Season with salt and pepper.
Mix in remaining ingredients. Stir in Greek yogurt, chicken, blue cheese, green onion, mayo, salt, and hot sauce. Stir to combine.
Simmer. Reduce the heat to medium-low and heat the mixture until hot and bubbly. Stir frequently so it doesnt stick to the bottom or burn.
Serve! Pour into a casserole dish or one of these adorable Mini Slow Cookers. Garnish with more sliced green onion and blue cheese if desired.
How To Make It
Before you get started, make sure you have a heat safe baking dish. I like to use a medium sized cast iron skillet because I always get consistently good results. Whenever I have the option to make something in it, I do.
Start off by adding all the ingredients into a large mixing bowl and mix everything together. This will be a ton easier if your cream cheese is softened to room temperature first.
Once everything is mixed together, spoon the spinach dip into your heat safe baking dish and bake for 25 to 30 minutes, or until the dip is hot and bubbly.
Served warm with slices of french bread, crackers, or sliced vegetables.
How To Make Ahead And Store
Make ahead and store: Refrigerate stirred dip in an airtight container for up to 3 days. Give it another stir before serving. Or add all ingredients to a bowl, cover and refrigerate like this, and then combine right before serving.
Freeze? I have not tried freezing it and am not sure whether yogurt will separate and dip become watery. Please report if you do. If serving 3 people or less, cut recipe in half.
Ideas for leftovers: If you have a lot leftovers, stuff chicken breasts with spinach dip, sear for 3 minutes per side and then bake for 25 minutes in preheated 375 degrees F oven. Similar to this chicken stuffed with brie.

Spinach dip is served so many different ways. One of the classic ways is in a bread bowl, but with this recipe youll probably want to leave it in the pan. Try spreading it on lightly toasted baguette slices to make Crostini!

How To Make A Bread Bowl
Get yourself a nice round loaf of sour dough or pumpernickel bread. Really, any round loaf should work!
Then cut out the inside using a large serrated knife. Point the knife on a downward/inward angle and cut a circle around the top portion. Be careful not to cut too much off the top!
Then, using your hands, pull off the top. Rip out any extra breading inside the loaf. You want to create a hole. Be careful not too cut or rip out too much. All you need is a medium sized hole to fit the dip inside.
Reserve any of the bread you cut out and reuse it for dipping!

Lo and behold, he was right on the money. I made my spinach dip in a frying pan and within 10 minutes I had a rich, cheesy, beautifully melted and flavored dip that rivaled the 60 long minutes of oven cooking. - Make sure to remove all the water from the spinach. You don’t want your spinach dip to be watery and thin. To get a thick and creamy dip, you have to make sure to wring out all the water from the spinach, whether you are using frozen spinach or fresh. The easiest way to do this is to squeeze the spinach and let the water fall through your fingers. I usually take a small handful of spinach at a time and squeeze out the water 3-4 times. Then, I move on to the next batch. I then go back and repeat until no more water comes out.
- Customize the dip. You can easily customize this baked spinach dip by adding different ingredients. Some of my favourite ways to switch things up is to add in ½ cup of artichoke hearts or cooked bacon .
- How to make ahead. You can assemble this spinach dip a day before you bake it. Just complete all the steps and stop just before baking. Then, wrap your dish tightly with plastic cling wrap and refrigerate until ready to bake. When ready to bake, remove the dip from the fridge and let it sit at room temperature for about 30 minutes to bring it to room temperature first .
- How to store. Store leftover baked spinach dip in an airtight container and store in the refrigerator for up to 4 days.

A cold creamy spinach dip recipe that is made without mayo and with cream cheese! It is one of my top party dips and so easy to whip up. I like to make this dip ahead of time and then add it to a freshly cut bread bowl when guests arrive!

That’s all you need to make this classic spinach dip! And maybe some hungry bodies! It’s one of those recipes that you’ll want to whip up again and again!
This recipe is the best cold spinach dip I have come across because it uses cream cheese and no mayo. I also added sour cream which adds even more creaminess and some tang. Any appetizer that is easy to make in advance and can be served cold is a winner in my house. It is one of my most popular recipes for good reason.
I like to put this spinach dip in a sour dough BREAD BOWL. It looks so festive this way! Plus, you don’t have to worry about asking for your Tupperware back if you bring it to a party!
I’ll typically serve the spinach dip in a bread bowl and then add some crudites and if I’m feeling good, lots of fresh pita triangles on the side.

How Long Can You Leave Out A Party Dip
Whenever you serve a help yourself dish like a party dip, you should always keep track of how long it sits at room temperature.
For most foods, the general rule of thumb is that a perishable item should not be in the danger zone for more than two hours. And by danger zone, this is usually at or just above room temperature.
Since this dip will be served warm, that should give you another 30-60 minutes before needing to keep track of the dip. So, in total, this dip can be left out for an absolute maximum of three hours, depending on the temperature of the room. However, be sure to still check the dip every now and then and make your best judgment.
Once you pass the recommended time, you can heat it up in the oven again.
For best results, Id recommend using a warming tray so that the creamy spinach dip stays warm and above the danger zone temperature.
What Makes This Spinach Artichoke Dip Healthy
- Lower Fat: Spinach artichoke dip is usually made with tons of shredded cheese, cream cheese and even mayo which makes it super high in fat. I swapped out cream cheese/dressing for greek yogurt and cottage cheese.
- Higher in protein: The greek yogurt/cottage cheese mix still makes this rich and creamy, with way less fat and a whole lot more protein!

Substitutions For This Spinach Artichoke Dip Recipe:
There are a few substitutions for this recipe, as well as some answers to questions about making spinach artichoke dip.
Cottage cheese: I havent tested this recipe without cottage cheese, but if youre asking because you dont like it just put it in there. I dont like cottage cheese either but I swear you can *not* taste it in this.
Low fat cheese I find that low fat cheese do not melt as well as regular cheeses. I dont know how they will work in this recipe.
WW Freestyle Note: You can try making this a lower point dip with fat free cheese, but Im not sure how it will turn out.
Fresh spinach: I wouldnt recommend using fresh spinach in this. I think it makes the dip too watery. If you only have fresh spinach cook or steam the fresh spinach first for about 5 min. Drain any excess water out of it to prevent a watery dip.
Spice: If you like a little kick add 1/4 teaspoon of red pepper flakes to the dip!
Frozen artichoke hearts: I wouldnt recommend using frozen artichoke hearts. If you need to, you can cook first, allow to cool slightly and drain any excess water. Canned artichoke hearts are much easier to use!
How To Thaw Frozen Spinach
How to freeze spinach for dip. Spread the mixture in the pan, cover, and freeze. It would retailer nicely for as much as 3 months. It will store well for up to 3 months.
Repeat this step if the leaves are very dirty. If you are using the spinach to make a smoothie, soup, or add to a cooked dish such as a casserole or curry, you can add it straight from frozen without thawing. It will store well for up to 3 months.
To heat, bake at 350 for 40 minutes or until warm. If you are concerned about the loss of the dips quality, you have the option to freeze the unbaked dip. Click on to see full reply.
The problem with freezing spinach dip is that the consistency could turn runny or watery once it’s been defrosted. Unfold the combination within the pan, cowl, and freeze. Is Spinach Dip Hard To Make
Ive seen some recipes for spinach dip that require a lot of active time, with elaborate ingredients, overcomplicated instructions, and cooking on the stovetop. And while none of that is a bad thing, I personally like to take a more hands-off approach when I want to serve a hot dip.
For this recipe, you only need to do two things: thoroughly mix all ingredients together and bake them in a dish. Really, thats it! It will probably take you longer to cut the french bread than it will to get the dip ready for serving.
Plus, this method is ideal for a party, because if the dip ever gets too cold you can pop it back in the oven for 5 minutes to bring it back to melted cheesy goodness.
Using Fresh Spinach Vs Frozen Spinach
Fresh spinach will work in this recipe BUT you will need to chop it down before you go any further. Some fresh spinach leaves are so large, if you just throw them in the dip as is, you’ll get a “stringy” spinach dip…and trust me…no one likes “stringy” dips.
I recommend sauteing your spinach before you add it to your dip. It will help the leaves to break down a bit resulting in wilted spinach which is what you want for this dip.

What You Need & Modifications
- Spinach– it is easiest to buy already cooked and frozen spinach that you simply thaw and squeeze out the moisture, but you can easily cook down fresh spinach if you prefer.
- Artichoke hearts – these come in a can and you simply drain them and dice them up.
- Feta Cheese –feta cheese is a rich cheese that packs a rich flavor punch. If you don’t like feta, you can swap for mozzarella here.
- Onion & Garlic – use any onion you like, a shallot would be great in here. I often opt for red onion as it is a bit more mild when using it raw.
- Greek Yogurt & Cottage Cheese– these 2 are the replacements for mayo and sour cream. The cottage cheese is blended to make a smooth, yet thick consistency.
- Worcestershire, Sriracha, and lemon juice – add a bit of flare to the rich dip. Feel free to swap for your favorite hot sauce. Use bottled or fresh lemon juice.
- Parmesan Cheese – This is added just on top for the melty cheese layer, but again, feel free to swap this for a milder cheese like mozzarella if you prefer.
Cream Cheese Spinach Dip Ingredients
- Cream Cheese The cream cheese makes this baked artichoke dip so creamy and craveable. Learn how to soften cream cheese quickly.
- Mayonnaise Mayo is also a great base for creamy dips! Olive Oil Mayo is my go-to.
- Sour Cream Theres nothing quite like the creamy tang of sour cream for an added touch in a dip. I prefer full fat, but if youre trying to cut back this is an easy place to do it!
- Chopped Spinach frozen spinach is best for this recipe, I like to buy the steamable packages.
- Monterey Jack Cheese Fresh grated jack cheese makes this dip sooooo creamy! Avoid pre-shredded cheese, as its covered in a flour like substance that helps it resist sticking and melting.
- Minced Onion adds a subtle burst of flavor.
- Minced Garlic I find that buying pre-minced garlic is a great shortcut.
- Crushed Red Pepper Flakes Crushed red pepper flakes in this recipe are not enough to make it hot, but just enough to spice it up a little.
- Parmesan Fresh grated or store bought, your choice! Parmesan doesnt melt quite like the creamier cheeses, so fresh grated isnt as important.
- Black Pepper For a little spice!
- To Garnish: Diced Red Pepper I add a little diced red pepper or red pepper flakes to the top for a pop of vibrant color. Totally not necessary if youd prefer to skip!
