I am no purist, and I put all kinds of stuff on my grilled cheese. Just dont overstuff it, or all the goodies will slip out. What goodies, you say? Some suggestions:

A grilled cheese is a grilled cheese, right? I mean, it’s the first meal that most of us learn how to cook at home by ourselves. It’s the perfect midnight snack or soup-dipper. It’s great for kids, but is never turned down by an adult. It’s salty, gooey, crisp, buttery, and comforting in all the right ways.

How To Prepare Vegetables For Grilling

I find that grilling things whole or almost whole is the way to go. The more space you give your vegetables for grill marks, the more flavor youre going to get out of them. It also makes them easier to flip around on the grill without falling through the grill grates, believe me Ive had a few fall down there. Ok, so heres how to prepare your vegetables for grilling.

  • Bell peppers: Seeded and quartered.
  • Onions: Cut into 1 slices with skin left on
  • Yellow squash, zucchini, and eggplant: Cut lengthwise into 1/2 thick strips
  • Mushrooms: Remove stems
  • Asparagus: Cut off the woody ends or follow my easy recipe on how to grill asparagus
  • Corn: Remove silk. I also have an awesome post on how to grill corn on the cob with two different grilling methods
  • Tomatoes: If you use roma, Id cut them in half lengthwise. Cherry tomatoes, I grill on a grill basket like this one. Or you could by small tomatoes that are still on the vine and use the vine as a little handle to remove the tomatoes when they start to blister.
  • Cauliflower: slice into 1 thick steaks
  • Broccoli: Trim off the fibrous bottom half of the broccoli stem, then quarter broccoli head into small trees.
  • Romaine: Yes, you can grill lettuce and trust me, youll love it. Dont believe me, give this Grilled Chicken Caesar Salad a try and youll see how amazing grilled romaine can be.

The stir frying method of cooking vegetables requires more personal attention.

There are two types of grilled cheeses in this world. First, theres the kind you make when you come home at 3 A.M. after a bit too much to drink, when all rules fly out the window and pretty much anything tastes deliciousincluding burnt bread surrounding unmelted cheese.

And then theres the grilled cheese you should be making at all other times: perfectly golden-brown bread, melty cheese, supreme satisfaction. To get this sort of sandwich, the rules are strict but justified. Because when it comes to something so simple, thereâs not a ton of wiggle room between perfect sandwich creation and sub-par, time-of-desperation snack.

This is where we come in. Look no further for the rules of perfect grilled cheese.

Two things can happen if you rush the grilled-cheese-making process. In one scenario, you quite literally take the sandwich off the of the pan before the bread reaches a deep golden-brown. You may be hungry and tired, but accept that it takes a bit of time to get optimally toasted bread. Were also not that sorry, because it doesnt take too much time .

The ratio depends on the size of the bread, but for average slices, you want somewhere in the neighborhood of 1/3 cup of cheese per sandwich. Thin slices are better than thick, while grated cheese is especially good for melting.

    How To Cut Zucchini For The Grill

    How you cut zucchini and squash for grilling can drastically affect cooking time. I slice mine into & frac13 ½ medallions. A lot of people like to do ribbons, but I find the medallions both more difficult to deal with when slicing, and later while cooking the squash on the grill.

The best way to do this is to place the zucchini on its side and take a sharp knife and cut all the way down the length of the zucchini making 4-5 slices per one zucchini. Ive found that this is the best thickness to make sure it grills through in about 6 minutes.

    You may be surprised that many grilling tactics, like pressing the burger down, are the WRONG way to get the perfect grilled burger. Following these simple steps will have you grilling burgers like a pro!

  • Not the time to cut the fat: Fat is actually a major component in adding flavor to burgers. With our current day fat consciousness, Im here to advise when grilling burgers dont cut the fat. I typically use 85% lean grass-fed ground beef. I also use double ground beef, which ensures a better mix of the fat uniformly into the meat.
  • Prepare burger patties and chill them. Making the burger patties early and refrigerating them allows them to better stay intact while grilling. Dont overhandle them which can compress the meat and start to melt the fat. You can even run your hands under cold water before making the patties on a hot day.
  • Stick Your Thumb in It. Pressing your thumb into the center of the prepared burger to make a divot will keep it from bulging as it grills. It keeps the burgers nice and flat.
  • Brush burgers with olive oil before grilling. This might sound excessive but it ensures the burgers wont stick on the grill and will take on a nice sear, sealing the juices inside.
  • NEVER push on a burger when grilling! For some reason it is commonplace as a burger grills to push down on it with a grilling spatula. DONT! This only squeezes out flavorful juices that keep the burger moist.

    How To Form Burgers

    There is definitely a method to shaping the perfect burger. In my opinion, simple is better. Let the flavor of the meat speak for itself. Here is what I recommend.

  • Dont over handle or mix the meat. It will become tough and dry out faster.
  • Use a burger press to get the perfect shape every time. This is the one I use and you can measure it out based on 1/4 lb., 1/3 lb. or 1/2 lb. patties.
  • Bigger is better. Remember the burgers will shrink when you put them on the grill. So as a general rule I form the patties about 3/4 larger than the bun itself.
  • Tips For The Best Grilled Vegetables:

  • Cut approximately the same size. I try to keep my vegetables as close to whole form as possible. For cutting shapes and sizes, follow the instructions above. To help with consistency with certain vegetables, like squash, I use a mandoline slicer.
  • Brush with Oil. Oil with help ensure that your vegetables dont stick to the grill. Just drizzle or brush both sides of the vegetables with oil .
  • Season. I dont like to marinade my vegetables because I find it breaks them down and makes them soggy. I season with sea salt and freshly cracked pepper. If you want more flavor Ive been known to add a balsamic dressing drizzle or a fresh greek dressing to brighten things up.
  • HOT Grill. I like to have two zones on my grill. A direct high heat side that about 350°F to 450°F and an indirect side, just in case some of those veggies cook a little too fast! I start on the direct heat side. Most grills are hotter in certain parts of the grill, usually the back so be sure to pay attention and move your vegetables around so they dont burn.
  • Close the lid. Closing the lid of your grill creates the same environment as an oven, baking the vegetables as they lightly char. Check their progress every.
  • Finish with Sauce or Herbs: One of my favorite tricks to do whenever anything comes off the heat is to finish with fresh herbs, a squeeze of lemon juice or a light sauce to brighten everything back up. I guarantee it will take your vegetables over the top and make them irresistible!

    The Best Pan For Grilled Cheese

    The pan is just as important, if not more so, than the bread and cheese. A flimsy skillet will grill your sandwich unevenly. A skillet thats too small makes it hard to maneuver the sandwich.

    For one sandwich at a time, I like a 10-inch cast-iron skillet.

    Grilled cheese sandwiches dont really stick to the pan, so if you dont have a nonstick pan, its fine. I prefer a cast-iron pan.
