Cheese Sauce From Shake Shack
Welcome to the Cheese Sauce that you didnt even know you needed in your life. Soon you will be making this sauce bi-weekly and cursing my name that you are no longer able to consume chips, fries, or broccoli without it. ITS LEGIT GUYS.
Its not Queso. Its not nacho cheese. Its just CHEESE, sharp cheddar cheese, but in dip form. Perfect for your fries, your chips, or your spoon.
Its the original recipe from Shake Shack. Remember last year when quarantine first started, and all these restaurants started publishing secret recipes for everyone? Shake Shack shared their cheese sauce recipe.
First of all, if you have never been to Shake Shack, get in the car and start driving. It is my FAVORITE place to eat fast food. Better than In N Out. Better than Five Guys. Shake Shack has the best burgers, the best shakes, the best fries
Anyway, of course I had to try out their recipe. I made it and then ordered 3 large cheese fries from Shake Shack to be delivered, so that I could compare.
No surprise, the homemade one was better. It was more flavorful. I followed the exact recipe as shared on their Instagram account, but they must have to add some preservatives or something in order to mass produce? I dont know. What I do know is that this stuff is liquid gold and Im now adding cheese sauce to everything.

How To Make Loaded Cheese Fries
I wanted this recipe to be as simple as possible, so I used a bag of frozen fries, but feel free to make some from scratch if you prefer. I started by baking the fries in the oven according to package directions, until they were crispy and golden.
Although this is a recipe for fries, you can swap them out for tortilla chips to make nachos, or you could use tater tots, potato wedges, whatever you want! Next time I make these I’ll definitely be making a nacho version.

Chili Cheese Fries Recipe Ingredients
As you can probably tell from the name, this classic dish consists of three main components:
Well start with #1: the chili! Typically, chili cheese fries are smothered in beef chili. In my vegan version, I make homemade chili with plant-based ground meat instead. I love its hearty texture and smoky, spicy flavor in this recipe, but if you prefer, you can substitute regular veggie chili. My Easy Vegetarian Chili would be great here!
Next up: the cheese! Shredded cheese and cheese sauce are both common toppings for classic chili cheese fries. Here, I go the sauce route, loading up my fries with my go-to vegan cheese sauce. Its oozy, gooey, and positively cheesy! You wont believe its made with plant-based ingredients like sweet potatoes, cashews, and nutritional yeast.
Last but not least: the fries! Because I make the chili and cheese sauce from scratch, I use store bought frozen fries as the base of this recipe. That way, once the sauce and the chili are ready, it just takes a few minutes to assemble everything.
Spread a layer of fries in a large bowl, on a baking sheet, or on a plate. Top them with spoonfuls of the cheese sauce, followed by scoops of the chili. Drizzle more sauce on top. Finish the fries with your desired fixings, and enjoy!

Perfectly double-fried french fries smothered in a garlic cheese sauce that can be made in 5 minutes!
Sometimes I feel like an old lady. Im 24 years old yet I hate clubs , bars , and I dont like coming home past 7 PM . To top it off, I went to bed at 8:45 PM last night.
I know that its so out of the norm to be going to bed so early but in all honesty, I think I like being an old lady. I like staying home on a Friday night and whipping up an amazing batch of cookies late into the night, and if I could, Id sleep at 9 PM everyday!
Anyway, being the non-24 year old that I am, I made these fries again. Yep, double deep-fried french fries deep fried is the only way to go, right?. But instead of the whole buffalo sauce shebang, I topped them off with a garlicky cheese sauce. It was kind of like the nacho cheese you get at the movie theaters except its 100000x better and much more gourmet.
Okay so maybe its not exactly like movie theater nacho cheese but it had that thin cheesy texture just blooming with so much garlic flavor. If only movie theaters actually had this kind of cheese sauce

So we bought a new couch and had to sell the old one. Well. Sell is an overstatement. Its a 13 year old couch that has been jumped on for hundreds of hours worth of childrens pillow fights
So after the couch sat online for a few days with its $20 price tag, we lowered the price to free. I guess we should have known.
Then we started getting calls. Eric told me that several women called, asking questions like, Is it a comfortable couch? How old is it? Are there any stains?
Then finally a man called. Is the couch still available? Can I come get it in 40 minutes?
Two young guys showed up and hauled off the couch in 5 minutes flat.
I kid you not, these guys did not even sit on the couch to see if it was sit-able. They did not check under the cushions or inspect it in any way. There was no waffling or questioning.

Ways To Customize This Recipe
The best way to customize your homemade cheese sauce is to change which cheeses are used. My recommendation is to always use two kinds of cheese, one creamy, and one strongly flavored. However, there are a lot of cheese sauce recipes that only use sharp cheddar.
Creamy cheeses would include American cheese, Monterey Jack, and Havarti. Strongly flavored cheeses could be any spicy cheese, smoked cheese, or aged cheese. Pepper Jack could go into either category.
You can also add roasted garlic to make a garlic cheese sauce, your favorite hot peppers for a spicy kick, or smoky bacon! If using bacon, I would also dribble in a little bacon grease for added flavor.
Finally, dress up this easy recipe with your favorite seasonings such as smoked paprika, cayenne pepper, or Old bay seasoning.

Chili Cheese Friesfor Dinner
These chili cheese fries taste decadent: but theyre actually lighter than most recipes. In fact, you can get away with calling them dinner. Heres why:
- The fries are just potatoes and olive oil. This is part of a healthy diet!
- The chili is vegetarian and made of mostly vegetables. Black beans, corn, quinoa, tomatoes, onions: all healthy, good-for-you ingredients! You can choose a meaty chili if you like, which will make this recipe heavier and more caloric.
- The cheese sauce is minimal. Many cheese sauces pack in loads of cheese. This recipe has just enough. If youd like to go even more minimal, simply sprinkle with a few handfuls of cheddar cheese and pop it in the broiler to melt the cheese.
How To Make Chili Cheese Fries Step By Step
Step 1: Bake the Fries
Preheat the oven to 425 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper then add the French fries in an even layer. Bake for 15 to 20 minutes, stirring halfway through to ensure even baking.
Step 2: Brown the meat
In the meantime, add the ground beef and onion to a large skillet over medium heat. Crumble the beef and cook until browned, about 10 minutes. Add the garlic, chili powder, cumin, and salt to the pan and cook for about 2 minutes or until the garlic becomes fragrant.
Step 3: Simmer
Stir in the tomato paste, Rotel, and kidney beans and reduce the heat to medium-low. Let it simmer for 15 minutes or until it has thickened.
Step 4: Prepare the cheese sauce
While the chili is simmering, prepare the cheese sauce by melting the butter in a medium saucepan over medium heat. Whisk in the flour until it starts to turn a light brown color. Stir in the onion powder, garlic powder, chili powder, cumin, pepper, and salt.
Step 5: Whisk the cheese sauce
Gradually pour in the heavy cream, whisking constantly. Continue to whisk until the sauce starts to thicken. Add cheese to the pan one cup at a time. Allow it to fully melt before adding another cup. Once all the cheese has been added to the pan, continue to whisk until fully melted then remove the pan from the heat.
Step 6: Assemble and serve

La Street Meat Cheese Fries
These street meat cheese fries is where its at! Theyre loaded with everything you love from a Mexican style or street meat hot dog. Topped on mexican seasoned fries and sooo good!
If youre native the Southern California, the term Street Meat is something youre probably familiar with. In the LA area, street meat vendors are always something to find after a sporting event, or late night in the city.
If youre not familiar with the term, These are hot dogs wrapped in bacon, topped with peppers and onions, and sometimes jalapeno, cilantro, and a little ketchup and mayo. Theyre out of this world! Screw a coney dog. This is where its at!
Now think about that, but turned into cheese fries. Ultimate food truck food!
I tried to keep these street meat fries true to what I love about these style hot dogs. But, I had to add a little extra oomph to this by taking some leftover barbacoa rub that I made, and use it to dust the fries.
It added a ton of flavor and heat to this meal, and I cannot suggest it enough!
