Depending on how much time you have, you may either prepare just parts of this recipe ahead of time or the whole thing and store it in the refrigerator until youre ready to bake and serve.

The easiest way to save time is to cook the chicken ahead of time. Poaching and shredding chicken takes approximately 40 minutes, start to finish, so if you can knock that out and have the chicken ready, youre already way ahead of the game.

You can also prepare the entire dip recipe. Simply cover your prepared dip with plastic wrap, and store in the refrigerator until ready to bake.

How To Make Shredded Chicken

There are a number of ways you can prepare the shredded chicken for this recipe. See the methods below and choose your preferred option!

Use a rotisserie chicken: The easiest method is to purchase a pre-made rotisserie chicken or make one yourself and simply remove the chicken from the bone.

Slow cooker: Place chicken breasts in a slow cooker and cook on high for 2-4 hours or on low for 4-6 hours. Shred using two forks.

Instant pot: Add the chicken breasts and chicken stock to the bowl of your pressure cooker. Arrange the chicken breasts so that they are spread out in an even layer. Cover and set the pressure cooker lid valve to sealing. Pressure cook on high for 10 minutes, followed by a 5 minute natural release, followed by a quick release to release whatever pressure remains. Remove the lid and use two forks to shred the chicken.

Boil chicken breasts: Place chicken breasts in a large pot of boiling water and allow to simmer for about 20 minutes until cooked through. Shred chicken.

Canned chicken: For another easy option, use canned chicken packed in water. Simply break it up with a fork and add in the remaining ingredients.

How To Make Ahead And Store

Make ahead and store: Refrigerate stirred dip in an airtight container for up to 3 days. Give it another stir before serving. Or add all ingredients to a bowl, cover and refrigerate like this, and then combine right before serving.

Freeze? I have not tried freezing it and am not sure whether yogurt will separate and dip become watery. Please report if you do. If serving 3 people or less, cut recipe in half.

Ideas for leftovers: If you have a lot leftovers, stuff chicken breasts with spinach dip, sear for 3 minutes per side and then bake for 25 minutes in preheated 375 degrees F oven. Similar to this chicken stuffed with brie.

Substitutions For This Spinach Artichoke Dip Recipe:

There are a few substitutions for this recipe, as well as some answers to questions about making spinach artichoke dip.

Cottage cheese: I havent tested this recipe without cottage cheese, but if youre asking because you dont like it just put it in there. I dont like cottage cheese either but I swear you can *not* taste it in this.

Low fat cheese I find that low fat cheese do not melt as well as regular cheeses. I dont know how they will work in this recipe.

WW Freestyle Note: You can try making this a lower point dip with fat free cheese, but Im not sure how it will turn out.

Fresh spinach: I wouldnt recommend using fresh spinach in this. I think it makes the dip too watery. If you only have fresh spinach cook or steam the fresh spinach first for about 5 min. Drain any excess water out of it to prevent a watery dip.

Spice: If you like a little kick add 1/4 teaspoon of red pepper flakes to the dip!

Frozen artichoke hearts: I wouldnt recommend using frozen artichoke hearts. If you need to, you can cook first, allow to cool slightly and drain any excess water. Canned artichoke hearts are much easier to use!

    Olive oil. You could also use butter, but in sticking with our healthy theme, I like to use heart-healthy olive oil. Only a little bit is necessary to sauté the veggies, about two teaspoons.

    Onion and Garlic. The base of any good buffalo chicken dish. And just about anything else.

    Greek Yogurt. You can use whole milk, low-fat, or non-fat Greek yogurt. Just make sure its plain and not flavored. I usually buy one of those little seven-ounce containers of FAGE or Chobani Greek yogurt.

    Shredded chicken. For this particular recipe, I used the leftovers from this Roast Chicken, so it was a combination of dark and white meat, which I think gives the dip more flavor. You can buy a rotisserie chicken and shred it. You can also roast a chicken breast, then shred it. Whatever is quickest and easiest for you!

    Crumbled blue cheese. I usually use crumbled gorgonzola, but whatever blue cheese you prefer will work great.

    Sliced green onion. We love plenty of sliced green onion! I love the texture and mild onion flavor green onions add to this.

    Light mayo. As we mentioned, this is a healthy buffalo chicken dip WITHOUT cream cheese, but we need something with just a hint of creaminess. Thats where the mayo comes in. All you need is just a tad! A tablespoon will do. I have been crucified before for saying I believe light mayo tastes the same as full-fat mayo, but I truly dont believe using full-fat will reap any greater results.
