Creamy Homemade Macaroni and Cheese with Sour Cream / Mac n Cheese without Eggs

My version of Paula’s southern favorite.

  • 1 16 oz box, elbow macaroni, cooked
  • 3 cups cheddar cheese, shredded
  • 1 8 oz colby cheese, shredded
  • 2 eggs, beaten
  • Preheat oven to 350 degrees.
  • Cook pasta according to the directions on the package.
  • Drain pasta and place back into the hot pot.
  • Salt and pepper the noodles to taste.
  • While the pasta is still hot add 3 cups of both cheeses, .
  • Stir to blend cheese and noodles together, melting the cheese.
  • In a separate bowl, whisk together sour cream, eggs, and milk.
  • Add the egg mixture to the cheesy macaroni noodles.

    There are some foods that you just have a particular preference for. Macaroni and Cheese is something that everyone loves, but they love a certain version of it. I grew up eating a baked version and I still love this recipe today. Its a southern style baked macaroni and cheese with cottage cheese!   • Cook your noodles for one minute less than the package states. Once theyre cooked, drained them and let them sit in the pot with about a tablespoon of butter. This gives them a chance to cool off and stops them from getting soggy when you bake them.
  • Dont add your cheese or sour cream until after the heat is turned off. Adding the cheese while the heat is still on can make it stringy. The remaining heat in the roux will be enough to melt the cheese. You also dont want to add the sour cream while the heat is still one because otherwise it could curdle.
  • Depending on the size of the dish you bake the sour cream and onion mac and cheese in, you can use more or fewer chips for the topping.
  • If you dont want to buy three different cheeses just for this recipe, I understand. I mean, I think its worth it, but you can still get an AWESOME result without.
