How To Make A Cheese Slicer – Homemade Kitchen Gadget

Looking for Wisconsin brick cheese for this pizza recipe. Are there any cheese stores that are likely to carry it?

Global’s a no, already checked Cheese Boutique is the likeliest but they’re very out of the way so they’re not the likeliest option on my list. International Cheese might work though…

Remove Whey & Wash Curds

This step is very important in slowing the acid production required for the sweet cheese body.

Allow the curds to settle and remove 25% of the original milk volume as whey .

Immediately, add back cool water at 65°F until the curd temperature drops to 85°F .

Then continue stirring until the curd is firm enough to mold. The final curds should be cooked well through and should be examined to make sure that enough moisture has been removed. A broken curd should be firm throughout and the curds should have a moderate resistance when pressed between the fingers.

Too much moisture and the cheese will develop late acid and a pasty texture in the aging room.

Too little moisture and the cheese will not consolidate well or ripen correctly due to lack of moisture for enzyme transport.

When this point is reached, the curds can be allowed to settle under the whey and then the whey can be removed down to the curd level again.

Where To Find Brick Cheese In Michigan

One of the things I like to do on this website is carefully monitor what people are searching for and try to provide the specific information they requested. Today, I had a search for where to find brick cheese in Michigan. In case you don’t know what brick cheese is, check out my earlier post on it. I prefer to use brick cheese over mozzarella on my pizzas , so I tried to find it whenever I can. The brick cheese I had in Wisconsin was superior to anything I have been able to find in Michigan so far. Below is a list of the places I have bought brick cheese from before. As I discover more, I will add them to the list.

We look forward to this time of year. This is because were able to order the Brick Cheese. I know we can get in the summer but it has to stay cold. So the cost of shipping in the summer puts out of range. As the cheese ages the taste gets better everyday. You will not be disappointed ordering this cheese. I would bet you order another right after finishing the first one.

    Brick Cheese Vs Mozzarella

The Wisconsin state of the United States is where a cheesemaker made the first brick cheese, and it is hard to find it in other areas because it is not so popular. On the other hand, Mozzarella is very popular, and people even term it pizza cheese. People worldwide use Mozzarella, which is a Southern Italian cheese, unlike brick cheese.

The milk used in making brick cheese is whole cows milk. Traditionally, cheesemakers would use water buffalo milk to make Mozzarella. In modern times a mixture of cow and goat milk or just cows milk.

In terms of fat content, mozzarella cheese has less fat content because it contains more moisture. Statistics say it has the lowest fat content alongside feta cheese. On the other hand, Brick cheese has a fair amount of fat content, which almost doubles that of mozzarella cheese.

Mozzarella is a new kind of cheese because it contains moisture. If left to age, it will lose moisture and become firmer, not what we want when it comes to Mozzarella. It has a shelf life of only two to four weeks. Brick cheese, on the other, is low in moisture and therefore can be aged.

Aged brick cheese is firm and robust because it has lost moisture. Mozzarella, on the other hand, is soft and chewy because it has moisture. Due to this property, aged brick cheese is more challenging to melt than mozzarella cheese. Ease of melting is a reason why people use Mozzarella on pizza.

Is There Another Name For Brick Cheese

The name Brick for an American cheese that hails from Wisconsin is said to have come from the fact that bricks were once used to weight the curd and press out the whey, plus its also brick shaped. Good substitutes would be Lagerkaese, Havarti, Jack cheese, cheddar, or if well-aged brick is called for Limburger.

    Cut Curds & Release Whey

Begin by cutting the curd into 3/4-1 inch squares, then allow this to rest 2-3 minutes for the cuts to heal. The curd will be very soft and this will prepare for a more even cut size.

Then, cut the curd to 3/8″ to 1/2″ pieces as evenly as possible. I use a large whisk with thin wires which I have expanded to a globe shape for this as shown below. Rest again about 5 minutes giving it a very gentle stir every minute or so to keep from matting.

The curd remains quite soft and tends to slump back into a single mass at this point, so careful stirring is important until it firms up more.

The whey should have begun to rise, so now stir gently for 10 minutes .The curd will begin to firm up during this phase.

    History Of Brick Cheese

Anyone know where in town I can find Wisconsin Brick ...

As you can already tell, brick cheese gets its name from its shape, a brick. In general, cheese dates back to 8000BC. At that time, in the Fertile Crescent, the Neolithic farmers began the activity of cheesemaking.

Domesticated sheep and goats were the sources of milk for cheesemaking. The discovery of cheese gave people a survival advantage because it was rich in fat, proteins, and minerals.

The story of Brick cheese began in Wisconsin, US, in 1877. The maker, John Jossi, was an American cheesemaker who was born in Switzerland. During his time working in the Limburger, the plant is when he came up with the concept of making brick cheese.

He got a brick mold from which they used to make clay bricks but presently are not in use. theyThe mold brought out the brick shape of the cheese and hence the name brick cheese. Since he did not have anything to press the cheese with, he used a brick to press the cheeses moisture.

What Does Brick Cheese Taste Like

The taste of cheese would depend on how long it has aged. Young Brick cheese has a mild butter sweet taste. This kind of cheese is excellent when used on sandwich slices. After some time, the brick cheese ripens and becomes stinky with a pungent smell.

Farmers use high temperatures in the culturing of brick cheese, which results in a different protein structure from the white American cheddar and more fat content.

The temperatures influence the taste because it becomes a softer taste with a sharp finish.
