What Is The Best Kind Of Griddle For A Grilled Cheese Sandwich
Theres quite the debate concerning the absolute best electric griddle on the market. Professional chefs prefer the Presto Liddle Griddle, which has great surface space, a consistent cook time, and no messy clean-ups afterward. Its the griddle of any grilled-cheese-eaters dreams!
When it comes to grilled cheese sandwiches, its all about the flip. Being able to easily flip your bread from one side to the other can make or break the strength of your grilled cheese. Something like the Presto Liddle Griddle provides plenty of room for you to get your flipping skills right.
This type of griddle is similar to a breakfast griddle, with a smooth, flat grilling area. While some at-home chefs prefer the panini press, many have found that the flat breakfast griddle is the best for making the perfect grilled cheese sandwich.
Melted Butter Is A Must
The key to an evenly-greased and toasted bread is to brush the top and bottom of the sandwich with melted butter. You can microwave the butter and easily brush the liquid on each slice. This allows you to control how much of the fat is applied so it doesnt get too soggy.
Do this step right before adding to the preheated pan. If you have salted butter, that would enhance the flavor further. The milk solids in the butter transform into nutty, deep golden brown hues when gently heated and this elevates the taste and texture.
Slow And Low That Is The Tempo
All you cooks who are afraid of turning your burners up past mediumthis ones for you.
Though searing heat will certainly give you the instant Maillard reaction of crunchy bread crust caramelization, subjecting your sandwich to high temperatures for an extended period of time will make your bread burn long before the cheese melts.
Keep the heat no higher than medium-low and use a well-seasoned cast iron pan, and youll get a crispity crunchity coating for the gods.

Not Enough Butter Or Oil
Weve already established that you should use plenty of butter on the bread, but if youre having issues with grilled cheese sticking to the pan, you may need even more. Try adding butter or cooking spray to the pan in addition to the buttered bread, and your sandwich will slide from skillet to plate beautifully.
And The Best Cheese For Grilled Cheese Is
Were partial to regular old cheddar cheesesharp or medium, depending on your preference but a great grilled cheese sandwich can be made out of lots of different cheeses, and our grilled cheese recipe will work with almost any cheese you favor. Here are a few great melters to try:
- Monterey Jack. This mild, creamy white cheese is an even better melter than cheddar, and is extra lovely mixed with a little sharp cheddar.
- Gruyère. Nutty and delightfully salty, Gruyère is an Alpine-style cheese that is widely available in the U.S. and makes for a richly flavorful grilled cheese.
- Raclette. Another gorgeous Alpine-style cheese that is quite literally made for melting. This washed-rind cheese is funkier than Gruyère and will definitely take your grilled cheese into grown-up territory.
- Blue / Chevré. Tangy chevré or sharp blue cheeses can be delicious additions to a grilled cheese, but we like to use them sparingly and coupled with mild, melty cheeses like Jack or cheddar.

Dress Up Your Grilled Cheese
I am no purist, and I put all kinds of stuff on my grilled cheese. Just dont overstuff it, or all the goodies will slip out. What goodies, you say? Some suggestions:
- Cooked greens: kale, mustard greens, or spinach
- Fruits and Vegetables: roasted red pepper, thin slices of apple or pear, tomato slices

What Pan To Use
I prefer to use my cast iron skillet as it maintains a consistent heat better and gives a superior crispy surface. A nonstick skillet works well and prevents sticking if using sweeter types of bread. In either case, you want to use very moderate heat for making the sandwiches, about medium-low or low if the bread is toasting too quickly.
Cheese: Grated Or Sliced For A Grilled Cheese Sandwich
Grated cheese melts more evenly, plus it allows more even bread coverage. That means you can pack more cheese on every bite! And if you are blending a few cheeses, you can mix grated cheeses together better.
Dont feel like messing around with a cheese grater? Fine, skip it. Youll still wind up with a grilled cheese sandwich. But youll miss out on those little shreds that slip out of the sandwich and slowly crisp up in the pan. You know what Im talking aboutthe cheese crispies. I love those! Do you?

How To Master A Classic Grilled Cheese
Here are our tips for getting this classic comfort food just right.
CHOOSE THE RIGHT INGREDIENTS
A grilled cheese presents its elements bare, without the safety net of side dishes or elaborate presentation. It’s a showcase for the cheese select one that melts evenly, such as cheddar, Swiss, or Monterey Jack. That said, almost any cheese will do. After all, even if eating the sandwich gets messy, it’ll be polished off quickly — another triumph of the true art of cooking.
Choose breads and accompaniments that will flatter the cheese. The bread should be thick enough that it’s crisp outside and soft inside, but not so hefty as to bury the cheese. A slightly acidic or tart partner, such as slices of tomato or pickle, will nicely offset the cheese’s richness. Go with a dressy classic, such as croque monsieur, or create an uncomplicated pairing, such as Swiss with turkey and mustard.
KNOW WHEN TO FLIP
To properly melt the cheese without burning the bread, cook the sandwich on one side over medium-low heat flip it as it begins to turn golden brown. Grill the other side, then flip the sandwich back onto the first side to reheat. Grilling both sides at once, whether in a sandwich press or using a second heated skillet to press the sandwich as it cooks, is efficient but yields a much denser texture.
4 slices firm white sandwich bread
1/4 pound cheddar cheese, sliced 1/3 inch thick
Unsalted butter, room temperature
Pile On Extra Ingredients
Want to give your grilled cheese some personality? Layer on flavorful toppings to make your own custom sandwich. Don’t pile the ingredients too high because it will be hard to flip your sandwich. Flat items like deli meats, pickles and hot peppers, bacon, sliced fresh tomatoes, apples, and pears, and leafy greens are all good additions. Try our Gourmet Grilled Cheese with Bacon.

What Can You Add To A Grilled Cheese Sandwich
Ham Add slices of cooked ham for a heartier sandwich.
Mac and cheese Add Mac and Cheese to the sandwich and grill according to the instructions below. This gives it a gourmet touch.
Bacon- It can be crumbled or sliced but has to be cooked first.
Pepperoni Add cooked pepperoni for a pizza version.
Jalapeno popper Add slices of jalapeno, some cream cheese instead of cheddar cheese.
Pesto Spread a thin layer of my homemade Basil Pesto Sauce or a store-bought pesto on each slice .
Guacamole Spread a thick layer to add flavor and creaminess.
Eggs Add a fried egg into the sandwich for a gooey and rich addition of flavor and protein.
Sloppy joes Add leftover Instant Pot Sloppy Joes.
BLT Add Bacon, fresh Lettuce, and tomato for a fun spin.
Sun dried tomatoes and basil Chop sun-dried tomatoes and add that, along with freshly chopped basil to give it an Italian flavor profile.
Garlic bread Add minced garlic to the mayo and then spread onto the bread for added favor or you can just use thick crusty garlic bread instead of regular bread.
Vegetables Add roasted vegetables such as eggplant, bell peppers, or zucchini.
Caramelized onions This almost turns it into a gourmet sandwich. Be sure to pair it with Gruyere or Jarlsberg cheese.
How Much Cheese To Use
I find that using at least 2 thick slices, about to ¼-inch max, of sharp cheddar provides just the right ratio of cheese-to-bread. If the slices are any thicker, itll affect the melt time. If using a block of cheese, you can grate or shred it to make an even layer, although it will melt quicker than slices.
When placing the cheese on top of the unbuttered side of the bread, leave a little bit of space along the edges so the cheese doesnt spew over, unless you like a little bit of fried cheese on the edges.

Use a variety of cheeses together to add your own unique flavor.

Recipe: Cast Iron Skillet Grilled Cheese
This grilled cheese is simple to prepare and absolutely irresistible. If you don’t already own an inexpensive cast iron skillet, the time is now to get one!
Prep TimeCook TimeTotal Time
Heat your cast iron skillet over medium high heat. Melt a big pat of butter while its heating up. Swirl the butter in the pan to coat it evenly. Use an oven mitt so you dont burn your hand on the skillet handle. Have a heavy plate, lid or a fry pan ready so you can place it over your grilled cheese as it cooks.
Coat each piece of bread with a thin layer of mayonnaise. Top each slice with cheese & then make a sandwich. Place the sandwich in the hot pan. Let the first side cook until golden brown. Flip & do the same to the other side.
Add more butter to the pan & swirl it around. Flip sandwich again. Now you need to watch things carefully, its easy to burn your sandwich. Place the lid or another pan over the top of your sandwich & watch the cheese start to melt. Flip a number of times, covering & watching the bread carefully, adding more butter as grilled cheese absorbs it.
Remove from pan when the bread is crispy & browned and the cheese is completely melted. Serve immediately.
Frying In Extra Butter
If you like extra crispy bread and a little more grease, you can add some butter to the pan to fry the grilled cheese. Just watch for the browning of the butter solids, you dont want that to become burnt. If this happens, wipe the pan clean if needed, and in between batches when making more than two sandwiches.

What Temperature Should You Cook Grilled Cheese At
When it comes to perfecting grilled cheese, slow is the way to go. Lets look at some different cooking methods and the temperature youll need to use to achieve the best results.
- Stovetop Heat the pan over medium-low heat when cooking on the stove.
- Electric griddle The ideal temperature for making grilled cheese on an electric griddle is 275 degrees Fahrenheit.
- Oven If youre making grilled cheese sandwiches for a crowd, try the oven! Preheat oven to 450 degrees, cook for 5 minutes, flip and bake for an additional 5 minutes.
- Panini press Set the panini press to medium heat for deliciously crispy bread.
The Best Cheese To Use
My top choice is sharp cheddar cheese because its combination of firmness and flavor. This cheese has a solid structure that holds together and stretches nicely when heated, and during its aging process, it undergoes complex flavor development as it ripens. Other fallback options with similar firm characteristics are swiss cheese, gruyere, gouda, Monterey jack, pepper jack, and mozzarella.
Plastic wrapped American cheese is a convenient choice, although its flavor tends to be saltier. Kids usually dont mind, but this may turn off some adults. Soft and spreadable brie while delicious, can get a bit greasy when melted. For a stronger flavored sandwich, you can sprinkle on Parmesan or blue cheese in combination with one of the mild-flavored firm cheeses.
Option 3 Cooking Your Grilled Cheese On Cast Iron/oven/stove :
Put a cast iron pan in a cold oven. Crank your oven to 450° and let the cast iron come to temp. Meanwhile, heat a second pan on your stovetop with just enough butter to cover the bottom of the pan. Once the butter is fully melted and bubbling but not brown, cut your assembled grilled cheese in half and add to pan. . Once the sando is on the stove, remove your preheated cast iron pan from the oven and place directly on top of your cooking grilled cheese. Press down slightly and cook 5-10 mins or until cheese is melty, ooey-gooey and the bread toasted to crunchy golden brown perfection. Enjoy!
How Do You Make Grilled Cheese Without Burning It
The best tip for making grilled cheese without burning it? Keep a close eye on it. Dont walk away from the pan, but rather watch it closely to ensure it doesnt burn. After one side of the sandwich has cooked for about 2 minutes, lift one corner of the grilled cheese to make sure its golden brown. If so, flip and cook the other side until its browned to your liking.
