4. Cook 3 hours checking at 2 hours Add more broth when the pan gets dry. If the meat is tender and easily shredded, keep it warm until ready to serve.

5. Prepare pasta al dente according to the instructions on the packet drain. Serve beef and sauce over hot noodles. Makes 6 servings.

  • A high percentage of hard cheese made in the UK is produced using chymosin produced in genetically modified organisms . For example, chymosin can be made by the genetic modification of the yeast Kluyveromyces lacti. To do this, the genetic code, or DNA, for chymosin is isolated from calf cells. This DNA acts as a template. A copy is produced and is inserted into yeast cells, which are cultivated and allowed to grow in a suitable environment. The chymosin produced by these cells is identical to the animal protein and the cheese itself is not made using a GMO but rather a product of this, the enzyme.

    How Do You Know If Cheese Is Vegetarian

    Cheese is only vegetarian when animal enzymes are not used. Those animal enzymes come from rennet, which is derived from the stomach of slaughtered young calves.

    Some cheeses that are traditionally made using rennet like feta can also be made using vegetal rennet. They are becoming more and more common, as vegetal rennet is easier to produce and cheaper.

    Another option is to not use rennet, and use a food acid instead. The most common acids are lemon juice and vinegar, as they are very good at curdling milk.

    To notice all of this you have to look at the label on the cheese packaging. It should mention vegetal rennet, or lemon juice, or vinegar. If youre buying the cheese from a farmers market, be sure to ask the farmer how they made the cheese.

    Most Violife cheese products have more saturated fat than real dairy cheese. The saturated fat in Violife cheese comes from coconut oil, rather than milk fat.

    One of the reasons why cheese is commonly said to be unhealthy is its saturated fat content. In fact, cheese is reported to be the biggest source of saturated fat in the American diet.

    You might assume that vegan cheese would be lower in saturated fat. After all, most plant-based fats are unsaturated.

    And indeed, when you look at other brands of vegan cheeselike Daiya and Follow Your Heartthey are generally lower in saturated fat than real cheese.

    But you actually cant say the same about Violife. This is because Violife is made from coconut oil, which one of the few sources of plant-based saturated fat.

    Keep in mind: Saturated fat from some sources may be healthier than others. I do not mean to necessarily equate coconut oil with dairy fat by making these comparisons.

    Anyway, lets compare the saturated fat content of Violife to real cheesestarting with the mozzarella:

    What if you compare Follow Your Heart with another leading brand of vegan cheese, Daiya? How do they stack up against each other?

    When I compare these numbers, heres what I see: Daiya and Follow Your Heart are basically the same, nutritionally.

    The main difference is just that Follow Your Heart contains slightly more fat, while Daiya contains slightly more carbs. Follow Your Heart also has slightly more sodium. But the numbers are very close.

    What if we look at the ingredients? Well, the top ingredients in Daiya are tapioca starch and coconut oil. Thats very similar to the palm oil and potato starch in Follow Your Heart.

    Another difference is that, when it comes to the mozzarella shreds, Daiya doesnt have carrageenan, while Follow Your Heart does. So if youre worried about carrageenan, then Daiya may be the better choice.

    Ultimately, Id say there is no meaningful nutritional difference between Follow Your Heart and Daiya. Theyre both made of similar processed oils and starches, and they have very similar nutrition facts.

    Steve Lutzke of Chr. Hansen, a leading enzyme company, said the supply of animal rennet was consistently high through the 1970s. Since its price was reasonable, cheesemakers had no reason to look for alternatives. Consequently, the majority of cheese produced in the United States at that time was made with animal rennet.

    According to Lutzke, the 1980s saw animal rennet supplies become more inconsistent, resulting in price fluctuations and even product shortages. Dave Potter of Dairy Connection, Inc., of Wisconsin, a supplier of enzymes to many cheesemakers, attributed the decline of calf rennet use in cheesemaking and the inconsistent supplies of the animal enzyme to the faltering veal industry, which became more unstable in the ’70s due to the animal protection movement. Rennet produced by microbial fermentation became more available. Approximately half of all rennet used in the ’80s was microbial.

    Heres what Im noticing when I compare these cheeses:

    • Follow Your Heart is equal to Kraft in calories and fat. And that includes saturated fat. Usually, vegan products are lower in saturated fat compared to animal products, but Follow Your Heart contains palm oil, which is one of the rare plant sources of saturated fat.
    • Follow Your Heart is higher in sodium . High sodium can lead to high blood pressure, which is considered a risk factor for heart disease and stroke over the long run. So its best to limit sodium, and Follow Your Heart is worse than real Kraft cheese in this area.
    • Follow Your Heart is much lower in protein . Most people consider more protein a good thingits satiating and helps build muscle. But theres also research showing milk protein can feed cancer growth and other issues. So, its up for debate which cheese wins here.

    As you can see, there is no area where Follow Your Heart was the clear winner. Some people would argue that being cholesterol-free is a win for Follow Your Heart. But its really not clear that dietary cholesterol is as unhealthy as we once believed.

    So, depending on your views on animal protein and some other issues, Follow Your Heart is probably not any healthier than Kraft cheese.

    For example, nutritional yeast has a bit of a cheesy taste but it doesnt really mimic real cheese at all. Texture-wise, its completely different.

    There are many recipes out there for cashew cheese, along with others for almond cheese, pistachio cheese, and more. Nuts have healthy, unsaturated fat, so this is a great base for non-dairy cheese.

    Vegetarian Rennet Does Exist

    Many big brands are starting to use non-animal rennet substitutes due to increased demand. If a brand does this, it’s typically clearly listed on the ingredient list as: “vegetarian enzymes,” “vegetable rennet,” “microbial enzymes,” or “non-animal enzymes.” Don’t see it there? Check on the company’s FAQ page.

    “These days, it is pretty easy to find vegetarian cheese,” says Frances Largeman-Roth, R.D., author of Eating in Color. “Plant- or vegetable-derived rennet can be made from artichokes, nettles, cardoon thistle, or other plants. The enzyme derived from plants works in a similar way to animal-derived rennet, but the results aren’t always consistent. There are also microbial rennets, which are vegetarian-friendly.”

Some people consider coconut oil to be very healthy But there are also studies showing that coconut oil raises LDL cholesterol, much like other forms of saturated fat. Also, like all other oils, coconut oil is very high in caloriesnot the best for weight management. Personally, I try not to eat much.
    • Violife cheese is made of processed starch. Some of the main ingredients in Violife products include: Modified food starch, potato starch, and corn starch. Although not used in huge quantities, these are processed, high-glycemic carbohydrates. Not the healthiest.
    • Violife cheese has added salt. Too much sodium can lead to high blood pressure and increased heart disease risk. The amount of sodium in Violife is not horrible but the Parmesan Wedge is extra salty, at 390mg of sodium per 1-ounce serving. Thats 17% of the daily value of sodium, just from 80 calories of a vegan cheese topping.

    Most Violife cheese products have similar sodium content as real dairy cheese. Violifes Just Like Parmesan Wedge is one of their products highest in sodium, with 390mg of sodium per 1-ounce serving.

    Too much sodium can your raise blood pressure and increase the risk of heart disease, stroke, and many other complications. So its worth checking the sodium content of the foods you eat, especially processed foods.

    The first step is to ask yourself what youre willing to consume. I made the personal decision to check cheeses when possible and assume acceptable when an ingredient list isnt readily available . That means Ill still take a slice of pizza from the local pizzeria, but you wont catch me eating Paneras macaroni and cheese again, because I know for a fact this isnt a vegetarian choice. Its a compromise that essentially allows me to do the best I canin most meal situations, Ill be able to make an informed choice, but when thats out of my control, Im not going to create an unproportional level of drama about it.

    If you want to avoid rennet at all costs, youll most likely have to avoid cheese in places you cant check the ingredient list . Then, when you head to the supermarket or have access to ingredients, youll simply want to keep a close eye out for rennet.

    Now, not all cheese contains animal rennet. Soft dairy products that contain whey practically never have rennet, because of how theyre traditionally made. Many cheeses at specialty cheese shops, or even at Whole Foods or Trader Joes, will typically list suitable for vegetarians, vegetarian rennet, or microbial rennet on the ingredient list. This indicates its acceptable for meat-free consumers. Occasionally the term enzymes is used, and unfortunately this is a toss up, according to The Vegetarian Times.
