In Europe, anything that dons the label “Parmigiano-Reggiano” does in fact contain rennet, and vegetarian Parmesan is generally given other descriptive names, like “Italian hard cheese.” In the U.S., some rennet is actually obtained from fungus, which is listed as “microbial rennet.” Also, any U.S. Parmesan with “romano” in the title likely isn’t vegetarian, according to Business Insider, but you can probably check the ingredients or call the manufacturer to make sure.

Unfortunately, Parmesan isn’t the only type of cheese that uses the animal-based ingredient. Certain types of gorgonzola, Pecorino Romano, Grana Padano, Camembert, Vacherin, Emmenthaler, Gruyère, and Manchego often use rennet in the coagulation process, as well. Again if being completely free of animal-based products is important to you, we strongly suggest double-checking with the manufacturer, or seeking out a verified vegetarian brand, before diving headfirst into that delectable shaker.

Luckily, you won’t have to search too far and wide to find a veg-friendly version of these cheeses in fact, major brands such as Kraft claim to use microbial enzymes in lieu of the questionable ingredient. Anything labeled as “cheese product” also strays from using rennet, as it isn’t considered “real cheese.” Bottom line? Do a little research, consider opting for a vegan variety, or simply find an animal-free brand you like we promise your pasta nights aren’t completely canceled.

Why Is Parmesan Not Considered Vegetarian

Parmesan cheeses are not vegan-friendly because the primary source of rennet used is from animals. It may not be suitable for meat-free dinners, all thanks to the inclusion of a stomach-turning ingredient called animal rennet, which is traditionally taken from the stomach of calves.

Parmesan and some other cheeses contain the stomach linen of young cattle who spend their entire short-lived lives in confinement before they are killed for veal.

I originally shared this vegetarian lasagna recipe back in 2009, about two months into my food blogging career. Have I really been doing this for seven years?! Crazy!

Ive actually been making this simple vegetarian lasagna recipe for much longer than even that. Its adapted from a recipe that was in my very first vegetarian cookbook, The Moosewood Cookbook. And if I remember correctly, its one of the recipes that convinced me, when I decided to become a vegetarian in my 20s, that it was all going to be okay. Because, hello, recipes like this vegetarian lasagna are amazzzzzing just the way they are absolutely no meat needed!

When I blogged this recipe the first time, I called it Vegetarian Lasagna Even Hardcore Carnivores Love This Stuff. Which is totally true! Ive fed this to many, many meat-eaters over the years and every single one has loved it.

Now that Im rebooting and resharing the recipe, however, Ive decided to go a bit bolder and claim it The Best Vegetarian Lasagna Recipe Ever.

I know, I totally know, that calling something the best ever is a bit over-the-top and could never really be true because theres no way you one can really try every single recipe out there for comparison. But seriously, to me, this is truly the best vegetarian lasagna recipe ever.

So why do I think its the best ever?

    Parmesan is a hard cheese, and as such a product it lasts quite some time. Unopened, the parmesan should last about 7 to 9 months. Of course, the label should include a use-by or best if used by date, or something like that. Once you open the package, the parmesan should retain best quality for about 1 to 2 months.

Since its price was reasonable, cheesemakers had no reason to look for alternatives. Consequently, the majority of cheese produced in the United States at that time was made with animal rennet.

    According to Lutzke, the 1980s saw animal rennet supplies become more inconsistent, resulting in price fluctuations and even product shortages. Dave Potter of Dairy Connection, Inc., of Wisconsin, a supplier of enzymes to many cheesemakers, attributed the decline of calf rennet use in cheesemaking and the inconsistent supplies of the animal enzyme to the faltering veal industry, which became more unstable in the ’70s due to the animal protection movement. Rennet produced by microbial fermentation became more available. Approximately half of all rennet used in the ’80s was microbial.

    2 pound chuck roast, trimmed and diced

    3 tablespoons of all-purpose flour

    ½ teaspoon dry rosemary

    3 tablespoons of olive oil

    4 cloves of garlic, chopped

    2 medium-sized yellow onions, finely chopped

    1 tablespoon of tomato paste

    1 bay leaf

    3 cups of beef stock or broth

    3 cups of red wine

    Salt and pepper to taste

    1 16-ounce package of whole grain egg noodles

    Directions

    1. Preheat the oven to 350 degrees. Pat the stewed meat dry with kitchen paper. Mix the flour, rosemary and thyme in a large bowl. Fold in stew meat until coated.

    2. Heat the olive oil in a Dutch oven over medium to high heat. Add stew meat in batches and brown evenly put aside.

    3. Add onion and garlic to pan, reduce heat and cook until onion is translucent. Add beef Stir in tomato paste, bay leaves, broth and wine until the meat is just covered. Bring to a simmer, then cover and place in the oven.

    4. Cook 3 hours checking at 2 hours Add more broth when the pan gets dry. If the meat is tender and easily shredded, keep it warm until ready to serve.

    5. Prepare pasta al dente according to the instructions on the packet drain. Serve beef and sauce over hot noodles. Makes 6 servings.
