Mozzarella Tomato & Basil Quesadillas With Parmesan Crust

When I was in college, I discovered that quesadillas were pretty much the perfect food. They were easy to make, cheap, and best of all, oozing with melted cheese, which I craved, particularly when final exams rolled around. My college version of a quesadilla was soft and floppy because I cooked it in a microwave. But Ive since discovered a few simple tricks that make quesadillas golden, crisp, and completely irresistible.

Use a nonstick skillet. The best quesadilla is one with a perfectly crisp tortilla, a texture that comes from pan-cooking. I like using a nonstick skillet, which will turn out perfectly golden quesadillas every time. Be sure to cover the quesadillas during the first half of cooking, which ensures that the cheese melts and the filling heats through.

The filling should be cheesy, but dont limit yourself to just one cheese. A combination like the one in the Three-Cheese Quesadillas is as good as it gets. Grating the cheese will yield better results, as it melts faster, which means youre less likely to burn the tortilla before the filling is heated through.

For a snack-time quesadilla, I use cheese plus one or two other ingredients to keep it from becoming too filling, but if Im having quesadillas as a meal, I go to town, combining many ingredients. The possibilities are limitless, so feel free to experiment.

The safest, cleanest and easiest way to flip your quesadilla is by placing a large plate on top of it in the pan, grabbing your pan by the handle, and flipping it over onto the plate. You can then place it back into your pan for another few minutes to get the other side nice and browned and that cheese melted.

How To Cook The Chicken For Baked Chicken Quesadillas:

I poach the chicken the same way I do for any recipe that requires cooked chicken breasts or thighs. Start by heating a 2-quart saucepan with water, along with ½ an onion, a few cloves of garlic, 6-8 black peppercorns, and a tablespoon of salt. When the water comes to a boil, gently lower the chicken into the water and reduce the heat setting so that it just simmers. Let the the chicken breasts cook until they reach an internal temperature of 165ºF using a meat thermometer. It usually takes in the ballpark of 12-18 minutes, depending on the size of the thighs/breasts.

Once the chicken is cooked, remove and allow for it to cool completely. Then shred the chicken using two forks, Ive even seen some people throw it in the stand mix and let the paddle break the chicken down for them!

Freshly grated cheese such as cheddar or Monterey Jack are often used in American-style quesadillas. Pre-grated cheese is handy and melts okay enough, though we recommend grating your own cheese for the best meltability.

Always buy block cheese instead of pre-shredded. Very often, pre-shredded cheese has additives to reduce clumping, which will affect the flavor and texture. Block cheese will taste creamy and fresh and will melt perfectly.

The humble quesadilla wears many hats. Its a quick weeknight meal that can transform yesterdays leftovers into something new and tasty. Its also a fuss-free snack that will satisfy a group of hungry teenagers or the crowd at your next cocktail party. Fill it with plain cheese and beans or with shrimp and avocado the quesadilla is whatever you want to make it.

Making quesadillas is about as easy as it comes. Warm a tortilla in a skillet and top with cheese and fillings. Wait until everything is warm and gooey, then fold and dig in. I prefer flour tortillas for quesadillas theyre usually easier to find in the larger 9- or 10-inch size and they get nicely crispy in the pan without breaking apart when you fold or cut them.

One trick a surprising trick! is to use only a little bit of butter or oil in the pan when cooking the quesadillas. Too much and I find the tortilla ends up soggy and greasy instead of crispy. Just a half teaspoon or so to coat the bottom of the pan ensures a crispy tortilla with golden-brown spots.

Play with the burner temperature, too. On my electric stove, medium heat will cook the quesadilla in a few minutes, with the cheese melting and the tortilla crisping almost simultaneously. On gas stoves in former apartments, I usually cooked the quesadillas over slightly higher heat.

How To Make Quesadillas On A Press

Benefits: This method yields extra toasted, crispy quesadillas. Thats because most panini presses and waffle irons contain bumps and ridges. When toasting a quesadilla using one of these, the tortilla bends and curves to fill the groves in the press, resulting in more toasty bits per square inch of tortilla than simply toasting a quesadilla on a flat surface. Flour tortillas work best because theyre the most flexible.

Equipment: You will need a panini press or a waffle iron and pastry brush.

  • Preheat your waffle iron or panini press to medium high.
  • Brush one side of the tortilla with oil and place that side down on your worksurface. Add a thin layer of toppings to half the tortilla, leaving a 1-inch perimeter with no toppings . Fold the empty half of the tortilla over the toppings.
  • Place the quesadilla in the press, close the press gently and cook until the tortilla is golden brown and the cheese is melted, about 5 minutes.

How to make a Cheese Quesadilla with an IRON

Fajitas are easy to make. Try making one right at home. Here are the steps:

  • Choose your meat .
  • Cut them into strips.
  • Season with salt, pepper, and even herbs. Then, grill or broil your meat and vegetables. Char-grilled or pan-roasted bell peppers and onions are great additions to your fajita. You may also add some baby leaves or shredded lettuce. You may also stir fry your meat and veggies. Remember not to over-fry. That way, your meat will not toughen and your vegetables will not overcook.
  • Arrange your meat and vegetable strips on a serving platter. Add some cilantro and other baby leaves if you like.
  • Prepare your condiments. Sour cream, guacamole, salsa or diced tomatoes, and shredded cheddar cheese are great choices. Serve them in separate bowls.
  • Prepare your corn tortilla . You may heat them on the grill or heated pan for a bit to get that spotted brown crisps. Arrange them on a separate plate.
  • Bring out your fajita platter, condiment bowls, and tortilla plate to serve family and other guests.
