Sort of. Grabbing cheese that has less than the acceptable 2-4% cellulose is probably in your best interest for now use Bloombergs list as a reference because, as previously mentioned, you wont find the cellulose content on a label anywhere.

Eating cheese with more than the acceptable amount of cellulose isnt the worst thing for you, but its good to know what youre putting in your body and that what youre paying for isnt exactly what it might be labeled as.

Whats The Difference Between Almond Flour And Almond Meal

Almond flour is made from blanched skinless almonds and is super fine, powdery, soft and pale creamy yellow in colour. It has a mild, buttery flavour which is why it works so well in this recipe and in my vegan butter recipe.

Almond meal on the other hand is made with raw almonds, often with skins still on. It is coarser, harder and grainier than almond flour, slightly stronger in flavour and darker in colour with small brown flecks throughout if the skins were still intact.

So What Is Ricotta Cheese Anyway

If the Italian word ricotta doesnt translate to glorious, fluffy cheese clouds in English, Id like to speak to someone about changing that. Because thats exactly what ricotta is: light, spongy, creamy, glorious fresh cheese. You might be a ricotta fanatic. Or you might dabble on occasion. But do you really know what ricottas deal is? What is ricotta cheese, really?

Well, lets start with what its made from. Ricotta can technically be made from the milk of cows, sheep, goats, or water buffalo, but the ricotta that we consume most frequentlythe stuff you can buy at almost every grocery storeis made from the milk of a cow. But historically, that cows milk was used for something else before it was used to make ricotta. Sorry, is that confusing? Allow me to explain.

So, ricotta actually translates to recooked in Italian, and ricotta is whats called a “whey cheese.” When you make cheese, you separate milk into two distinct things. You have the solids, called curds, which will be separated out and pressed to form cheese. And you have the liquid that is left behind, called whey. Most cheeses that we know and love are made from the curds but, traditionally at least, ricotta is made from the tiiiiiny bit of curd left behind in the whey.

How To Make Cashew Ricotta Cheese

Kroger spinach & egg striped cheese ravioli review

Step 1: Its best to soak your cashews in water before starting. There are 2 ways to soak:

  • Soak cashew in cool water for 2 3 hours, drain and rinse .
  • For a quick method of soaking, let cashews sit in hot water for 5 minutes, drain, rinse and continue with recipe.
  • Why soak cashews? Soaking will help soften the cashews by plumping them up with water and helps the cashews blend easily. Soaking is also said to be beneficial for digestion and mineral & vitamin absorption. If youre in a hurry, you can still make this cashew ricotta cheese successfully without soaking. You just may need to add a bit more water while blending.

Step 2: Next, place cashews, water, lemon juice/apple cider vinegar, garlic, onion powder, salt, and pepper in a food processor/blender and blend until creamy. Place in a covered container and place in the fridge until ready to use. Or use right away in any recipe calling for ricotta cheese.

And thats it, vegan cashew ricotta cheese made easy and delicious!

How Authentic Parmesan Is Different From The American Version

Any plate of pasta isnt complete without a sprinkle of Parmesan cheese on top. If youre the type of person who can never have enough cheese on their pasta, you might already consider yourself a Parmesan connoisseur. But what you might not know is that the cheese youre used to seeing on grocery store shelves probably isnt real Parmesan cheese.

According to Today, the first step in finding real Parmesan is checking the label for the words Parmigiano-Reggiano. Unlike the packages of pre-grated Parmesan you find at the store, rinds of real Parmigiano-Reggiano come from Italy and will have the name burned into the rind. Labelling cheese with Parmigiano-Reggiano is legally protected and reserved only for cheese from Italy, so if the rind has the label, you know its authentic. Also, youll get better quality cheese if you purchase a wheel or wedge rather than pre-grated bags or tubs.

Youll pay more than a dollar or two for real Parmesan cheese, too. According to Insider, a wheel of authentic Parmigiano-Reggiano from Italy can cost over $1,000 for an 88-pound wheel, which averages out to over $11 per pound. One wheel of authentic Parm is aged for over a year, and only comes from the Emilia Romagna region of Northern Italy, which is why its rarer, more expensive, and probably not what youve been putting on your pasta.

The offender here is cellulose. Not actual pieces of wood.

You probably havent heard this word since eighth grade science, but cellulose is a natural component of all plants cell walls and is in every fruit or vegetable you eat. Cellulose is made up of oxygen, hydrogen, and carbon. Its most commonly referred to as a dietary fiber and it usually passes through your GI tract without even being absorbed.

Its often considered wood pulp because manufacturers grind up wood to extract cellulose from. Wood is from trees, trees are plants, plants have cellulose. Only in a world of would the logical fallacy that cellulose is the same as wood pulp carry any weight.

There are two major types of tofu: silken and regular tofu. They come in a variety of textures: extra-soft, soft, medium, medium-firm, firm, extra-firm, and super firm. Non-silken tofu is also known as regular tofu. This recipe specifically calls for extra-firm silken tofu. You may find that silken tofu is packaged differently than regular tofu, which means silken tofu may be in a different area of the grocery store. Because silken tofu does not require refrigeration, you may have to look harder to find it. Youll also find both solid and crumbled varieties of silken tofu. The best option to go with is drained and crumbled. Although this recipe lists instructions to mash the tofu with a fork, buying it crumbled will help the remaining ingredients combine with it better, and create a more uniform consistency which some prefer with ricotta cheese. Some vegan ricotta cheese recipes call for blending, but this one does not. If you like a more smooth texture, you can blend the ingredients together.

Is Your Parmesan Cheese Real What You Need To Know

In 2012, the Food and Drug Administration investigated Slippery Rock, Pa.,-based Castle Cheese Inc. for selling a product labeled 100 percent grated Parmesan cheese that was found to be mostly other cheeses and a food filler called cellulose. This lead to an examination of grated Parmesan cheese sold in grocery stores under various brands

Worried about what might be in that cheese you sprinkle on your pasta? Here are some things you should know about grated parmesan cheese and fillers.

    What did they find?

The FDAs investigation of Castle Cheese found the company was mislabeling the cheese as parmesan or romano when it was actually made up of a mixture of trimmings of various cheeses and other ingredients, including swiss, mozarella and cheddar. In addition, your parmesan cheese products do not contain any parmesan cheese, the FDA wrote in its report on Castle Cheese. The other ingredients referred to included cellulose, used to prevent grated cheese from clumping.

The independent Bloomberg investigation reported on Tuesday found that many brand-name and store brand cheeses contained more than the industry recommended 2 to 4 percent cellulose.

Soak the blanched almonds overnight. Or for at least 6 hours.

Chefs note: If youre in a rush, you can use un-soaked almonds and use more water when blending. Though it wont blend quite as smooth.

Add the almonds and the rest of the ingredients to a food processor. Blend till smooth.

Chefs note: For quick almond ricotta then only add half of the water, to begin with, and increase the amount of water, if/as needed. This will stop you from having to drain the cheese at all.

Youll probably need to stop and scrape down the sides of the jug a few times.

Taste and adjust any of the seasonings as needed. I.e., more nutritional yeast for cheesiness, acidity with either lemon juice or ACV, more flavor with garlic/onion powder, etc.

Optionally, place the mixture in a cheesecloth or nut milk bag and let it drain for between 2-3 hours . You could also allow it to chill in the fridge to further set/harden, or use it immediately.
