What Is American Cheese Anyway
It happens every time I post a picture on or of a delicious cheeseburgerperfectly crusted ground beef on a soft bun, layered with onions, lettuce, picklesand then a glistening, gooey, melty, bright orange slice of American cheese.
Im guaranteed to be met with What is that plastic on top of your burger?!?
How can anyone with good taste put that crap on their grilled cheese?
Please enlighten us as to why plastic cheese is not a sin on a burger, its the plastic joke turd of food world #notcheese
Dont get me wrong. Not every burger or grilled cheese I eat is made with American cheese, and there are times when Im happy with a slab of sharp cheddar, a slice of Comté, or a crumble of Roquefort on top. But if I had to pick one cheese to stock in my burger joint, youre damn right its gonna be American. No other cheese in the world can touch its meltability or goo factor, and thats really what its there for: texture. If Ive taken the time to select and grind some great beef, I want that beef flavor to shine, not get covered up by a powerful cheese that would fare better on a cheese plate.
The greatest burgers Ive ever eaten are well-seared patties of loose ground beef, bound together with nothing but a lot of hope and a little American cheese.
percentage-wise, theres a good chance that theres more milk and cheese in your American cheese slices than there is meat in your meatloaf

Heinz Goes Beyond Beanz
Last year, the condiment portion of the Kraft Heinz brand expanded its vegan offerings in the United Kingdom with the launch of Good Vegan Mayo and Vegan Salad Cream, which underwent extensive research to remove eggs from their formulation.
Heinz also leaned into Beanz as its hero vegan product. For its 150th anniversary in 2019, Heinz revived Heinz Beanz Pizza, a cult classic product it discontinued in 2003 and gave it a vegan makeover. In partnership with delivery service Deliveroo, Heinz offered the vegan pizza to customers in the United Kingdom for a limited time. During January last year, the company changed its long running Beanz Meanz Heinz slogan to a more vegan-centric message Beanz Meanz Vegan in honor of the Veganuary campaign in the United Kingdom.
The Heinz brand is also going beyond beanz and exploring other possibilities in the plant-based realm. The brand recently filed trademarks under a new VBQ label for 29 new plant-based meats and barbecue sauces. Beans are already a vegan product, so we are looking to take beans as a base for a new plant-based range,Kraft Heinz Ireland head David Adams told The Checkout after the launch of its vegan mayo and salad cream. We are working through a few ideas at the moment and we are excited about the possibilities in the plant-based arena.

Honorable Mention: Bacon Grease
Sadly I couldnt get my hands on any bacon grease in time for my experiment, but I am in no doubt that this would be a top-notch substitute.
I cant think of a better flavor to go with cheese than bacon, and the texture of the grease would hopefully create a nice consistency sauce.
Id just be careful not to add too much or you could end up with an oily texture.

In 2015 Kraft Announced It Would Remove Artificial Yellow Dye From Its Boxed Dinner
While the distinct yellow color of Kraft Mac & Cheese is undeniably nostalgic, many criticized the company’s use of artificial dyes.
One such critic was mom and food blogger, Vani Hari, who runs the site Food Babe. After starting a petition in 2013 to get Kraft to remove the dyes from its food, Hari’s Change.org page received more than 348,000 signatures.

The Cheese Powder Isn’t Just For Macaroni
If you love the unmistakable flavor of Kraft’s patented cheese powder, why aren’t you using it in other dishes? It’s not just for your mac and cheese anymore. Thanks to the geniuses at the Chicago Tribune, we now have several more ways to get more cheese powder in our lives:
- Instead of rimming your Bloody Mary glasses with salt or other seasonings, go for cheese powder. It still gives you a salty kick, and pairs well with tomato and Worcestershire sauce. Just dip the rim in a little lemon juice first to get the powder to stick.
- Make easy cheesy popcorn by sprinkling the powder onto popped buttered kernels and tossing well.
- Whisk some cheese powder into your eggs before scrambling to add a bit of creamy umami to your breakfast plate.
- Homemade Doritos anyone? Yes, it’s possible. Just spray tortilla chips with cooking spray and toss with a mixture of cheese powder, paprika, and cayenne before baking at 300 degrees for 10 minutes.
Why stop there? Mix it into butter, toss it with fries, sprinkle it on top of baked potatoes or veggies… the world is your cheesy oyster.

Americans embraced it .

Kraft Macaroni & Cheese May Contain Allergens But There Are Alternatives
We know that Kraft Macaroni & Cheese does in fact contain real cheese. But it’s a processed powdered cheese, so it’s worth clarifying what that means for allergies and dietary restrictions. First of all, this may be surprising, but Kraft Mac & Cheese is not technically considered vegetarian . That’s because, per a FAQ on Kraft’s corporate website, during the process of converting milk into cheese, enzymes from animal sources are used. Kraft does note that it is “looking into new ways of processing our various lines of cheese products that would eliminate the need for enzymes that are derived from animal sources.” So those who choose not to consume animal products should be aware of this when deciding whether they want to eat this mac and cheese.
Additionally, anyone with intolerance to gluten lactose may need to evaluate if they can eat Kraft Mac & Cheese. On the box’s ingredients list, it clearly states that the product contains wheat and milk. There is some good news for some Kraft does offer a gluten-free version of its boxed mac and cheese.
Kraft Uses Food Dehydrators To Make Its Cheese
The final step in going from cheese to cheese powder involves a process that actually far outdates Kraft Macaroni & Cheese itself food dehydration. The natural version of the process has been used by Indigenous Americans and some Eastern cultures for generations. Food dehydration dates back to the late 18th century . The main function of dehydrating food, either naturally, using heat, or more modern chemical processes, is to make it essentially non-perishable .
Today, it’s so common that you can buy food dehydrators on for less than $45. And that’s basically what Kraft uses, only smaller. Kraft says, “Similar to a food dehydrator you might have at home to dry out fruit like apples, we use a food dehydrator just a much larger version. This removes the moisture from the cheese sauce and turns our Cheese Sauce into dry powder.”

You Can Probably Still Eat It
After the initial panic that the phthalate study caused, prompting scary headlines urging us to ditch our mac and cheese, it was revealed that it’s probably not as bad as it initially seemed. Although it sounds scary, the study shows a higher concentration of phthalates in powdered cheese compared to natural cheese, but not in comparison to… anything else. So we don’t really know how much is too much.
In response to the study, Kraft said, in part, “We want you to know that we do not add phthalates to Kraft Mac & Cheese… The safety of phthalates has been assessed by the US Food and Drug Administration and other authorities, such as the Centers for Disease Control. The trace levels found in the one limited test of mac and cheese are well below any level of concern. Hundreds of servings of mac and cheese would need to be consumed daily over an entire lifetime in order to exceed levels determined as safe.”
Slate reports that Dr. Sheela Sathyanarayana echoed Kraft’s statement, saying it would take a lot of mac and cheese to see negative impacts. “There’s really no dose that we know that will lead to significant health effects,” she said.
The study itself even concludes that “further research is needed on the phthalate levels in food,” so we’ll take our chances until then.

How Much Greek Yogurt Should I Substitute
Use the same amount of greek yogurt as you would butter. Add more if you want more of a tangy taste, but then reduce the amount of milk.
Make sure you add the greek yogurt in at the same time as the milk and cheese powder, so it gets well incorporated into the sauce. If you add it as an afterthought, the taste will be much stronger.

I wanted a timeless stovetop recipe, like the blue box mac and cheese I grew up taking pleasure in. I desired to make my stovetop mac and cheese with actual ingredients. I desired it to be delightfully tacky and creamy however not oozing with so much cheese that I needed to rest afterward.
