    To keep up with the increasing demand, plant-based cheese companies are expanding. Northern Californias Miyokos Kitchen recently upgraded to a 29,000-sq-ft facility that can handle 2,000lb batches of nut cheese, while the Vancouver-based Daiya is moving to a manufacturing facility more than six times the size of its current one to keep up with sales, which since 2012 have skyrocketed from $17m to $127m.
