Thoughts: It was much softer and comparable to the Trader Joe version rather than being the consistency of regular cream cheese. We didnt mind the flavor overall but Larisha did say for her there was a bit of a soapy taste at the end.

I am a huge bagel and cream cheese addict. Ask anyone that knows me and they will verify that Ive had cream cheese with some kind of a bread item almost every single morning of my life for the past 20 years or more! Not kidding! When I was a vegan for a few years as a teen, I ate the Tofutti brand cream cheese because I recall it was the only kind available back then . While it tastes nothing like the Philadelphia brand cream cheese blocks that were always my preference, it has its own special taste that I grew to love. When I decided to go vegan again a few years ago , I began a quest of trying out all of the vegan cream cheeses I could get my hands on. Ive made quite a few vegan cream cheese recipes as well. This is an ongoing quest of course, but so far in this adventure, this Traders Joes vegan cream cheese is the absolute best tasting one on the market .

The consistency is so smooth and if you give it a good whipping when you first open the container , it turns into a luxurious creamy spread! The flavor is mild with a bit of tang to it. Its a coconut oil-based spread but it does contain soy . The ingredients say that there are vegan cultures in it so maybe thats where the tang/zip is coming from since theres no lemon or vinegar listed. I dont know but its pretty darned good!

Can I use another kind of nut other than cashews? Cashews really work best for this. They create that smooth texture. Different kinds of nuts will create different textures, which may still taste great and can work well for different things, like almonds work super well for vegan ricotta.

Can I use something other than coconut cream/milk? As mentioned above, the coconut cream helps with thickening and also making it extra creamy. That being said, we did try a version of this using water instead of coconut cream and it still worked! It was just thinner and didnt thicken up as nicely in the fridge. So you can use a non-dairy milk or a different kind of non-dairy cream or even water and it would still work in this recipe.

Can I use apple cider vinegar instead of white vinegar? No. The distilled white vinegar really creates magic here with the flavor. It really does. Apple cider vinegar will work in a pinch but it is not going to be nearly as good. Seriously. The distilled white vinegar really works magic in this recipe.

Can I make this in the food processor? If you dont have a blender and all you have is a food processor, then sure. It will not come out as smooth as this though. It will have a slightly grainier texture. Not necessarily bad but if you have a blender, then a blender is the preferred option.

Making vegan cream cheese only takes a few simple steps:

  • Soak cashews. Soften the cashews by soaking them in hot water for 10 minutes. Alternately, soak them for 2 3 hours in cool water. Cashews dont need any longer than 3 hours to soak but will be fine if soaked overnight. Soaking also aids in digestion and is good for those with sensitivities.
  • Blend. Add the ingredients to the blender cup and process until creamy, stopping to scrape down the sides every now and then. Taste for flavor, adding more lemon or apple cider vinegar for more tang.
  • Eat as is or chill. Serve right away or keep in the refrigerator to chill and thicken even more.

Thoughts: There was an immediate aroma as soon as we opened the package which was a bit weird and immediately made us think of the older Daiya products that many people, including us, dont like.

This one was very, very thick. And hard to get out of the tub. Andrew didnt like it at all and Larisha said that it wasnt as bad as she was expecting, but its absolutely the older Daiya product flavor versus the newer cutting board chickpea line.

I used it for vegan sushi and it was perfect. On a bagel it kind of melted like the other vegan cream cheeses I have tried but tasted good. Definitely needs to be mashed a bit to improve spreadability. Texture is similar to a Philadelphia block cream cheese. This cc has the best flavor of the few I have tried .

This one was a pleasant surprise I had written off the Daiya because I don’t typically love its cheeses but was delighted after taking a bite out of my third bagel to find a sweet, creamy spread that did a pretty good job of mimicking the original dairy spread. Surprisingly sweet, as if it had a dash of vanilla in it, this cream cheese is a perfect companion for a cinnamon raisin bagel or anything you want to add a hint of sweetness too.
