What Is Rennet What Types Of Rennet Do You Use To Make Your Cheese

Rennet is an enzyme that helps coagulate the milk during the cheesemaking process. For the majority of our cheeses, we use a fermentation-produced rennet that has Kosher and Halal certification and is vegetarian-friendly. This rennet is used to make all of the following varieties of Tillamook cheese: Medium, Sharp, Special Reserve Extra Sharp, Kosher, and Reduced Fat Cheddar cheeses, as well as Monterey Jack, Mozzarella, Colby, Colby-Jack, Pepper-Jack, Provolone, Muenster, Swiss, and Reduced Fat Monterey. For a few of our aged white cheddar cheeses , we have historically used a traditional, bovine rennet that was not considered vegetarian. However, we have recently transitioned to exclusively use the fermentation-produced, vegetarian-friendly rennet. Please note that while we have already begun making our aged white cheddars with the veggie-friendly rennet, these cheeses are naturally aged anywhere from 60 days to 3 years, so depending on the cheese, it will take some time for the new white cheddar to reach stores. Be sure to look for our call out, contains no animal rennet on the packaging to know if it is made with vegetarian rennet.

I love Tillamook cheese and have for as long as I can remember. Way back before we had kids and actually, now that I think about it before I got married , the hubby and I happened to be driving past Tillamook, Oregon, and noticed that they had tours. We were on a meandering trip down to California from Washington so we decided to take a few hours to visit.

Even back then, in the very early 80s, before most manufacturers really cared about the nutrition and quality of their products, Tillamook did. We were so impressed by the cleaniless of their operation, the openess of allowing us the consumers to peek in, and of course the taste. It was seeing the cheese and all the care taken to make it that has made me a customer for 30-years.

Now that Im taking an even closer look at my food, Im thrilled to find out that Tillamook meets almost all of my tough criteria!

Currently, all of the milk and cream used in the production of Tillamook dairy products, e.g., cheese, butter, ice cream, yogurt, and sour cream comes from cows not supplemented with artificial growth hormones.

All of our cheeses are made with a microbial/vegetable based enzymes, with the exception of Tillamook Vintage White Medium Cheddar Cheese and Tillamook Vintage White Extra Sharp Cheddar Cheese, which use a traditional rennet.

When comparing labels, watch out for:

  • Slice vs. block. Cheeses that come sliced may look lower in calories, saturated fat, and sodium because their labels list a smaller serving than blocks or shredded cheese .
  • Skinny slices. Its not easy to tell whether really skinny slices like Kraft Slim Cut or Sargento Ultra Thin are better or worse than ordinary slices because the slims and thins labels show both a 1-slice and a 3-slice serving. It comes down to how many slices you use and whether the cheese is reduced-fat or full-fat .

Here’s What I Used In My Green Chile Queso Sauce:

  • Butter and Flour: To thicken the sauce. I use this to add creaminess to many of my sauces.
  • Vegetables and herbs: I finely chopped up onions, bell peppers, green onions, garlic, and cilantro in my handy dandy chopper like I did in the Vegetarian Mexican Casserole.
  • Seasoning: Taco seasoning .
  • Dairy: Milk and cheese! I use Tillamook Cheese . They use a vegetarian-friendly rennet. Really important to not use pre-shredded cheese here. I would cut this in cubes or freshly shred the cheese before adding to the sauce. This will avoid any stringy clumps in your queso. I am hoping to create a vegan version of this recipe really soon so keep an eye out for it!
  • Green Chili Enchilada Sauce: So, the Chuy’s boom boom sauce says it uses green chiles, tomatillos, green onions & cilantro. But I really didn’t have ALL those ingredients. What I DID have was some green chili enchilada sauce in my pantry and that’s what did the trick!

I loved eating this sauce topped over enchiladas and as a dip. You can use it with any of your favorite Mexican dishes!

    “Rennet is an enzyme that comes from the stomach of ruminant animals like cows and goats,” says Abby Cannon, R.D., who personally follows a plant-based diet. “Because it’s obtained after slaughtering the animal, it’s not considered vegetarian.     A pack of Kraft mac and cheese 7.25 oz box has the following ingredients:

    • Macaroni enriched with wheat flour, ferrous sulfate, durum flour, niacin, and vitamin B1 , vitamin B2, Folic acid, and cheese sauce mix.
    • The cheese sauce mix would contain milk fat, whey, milk protein concentrate, salt, sodium triphosphate, lactic acid, citric acid, sodium phosphate, calcium phosphate, turmeric, less than 2 percent of tapioca flour, and annatto.

    How To Cook Halloumi Cheese

    Its very easy to cook halloumi. It can be pan-fried, grilled and baked.

    Halloumi has a high fat content, so it doesnt require adding oil when cooking.

    Here are some simple ideas for cooking this grilling cheese:

    Pan fry:

  • Cut the cheese into slices that are about half inch thick. Some products already come precut and packaged.
  • Cook each side in a non-stick frying pan over medium heat.
  • Let each side dry-fry for about 12 minutes, until it becomes brown and crispy.
  • Bake:

  • Add half-inch slices to an overproof dish or baking sheet and drizzle them with olive oil.
  • Bake at 390 degrees Fahrenheit for 1015 minutes until the cheese begins to brown on edges.
  • Grill:

  • Coat half inch cheese slices with olive oil and grill over high heat.
