Kraft Macaroni & Cheese Uses Patented Powdered Cheese

We Finally Know How Kraft Mac & Cheese Is Really Made

When Kraft Mac & Cheese made its debut around World War II, it was an instant hit. But before this revolutionary boxed meal came an even bigger innovation from J.L. Kraft, the man behind the Kraft foods empire. In 1916, Kraft was awarded the first patent ever for creating processed cheese which is basically a method for making a cheese product that is shelf stable and won’t spoil quickly. We won’t get into the chemistry of it all, but it is safe to say that processed cheese fundamentally changed the ways we eat.

After Kraft’s processed cheese became a hit , the company wanted to expand to feed the masses . Processed cheese led to the invention of powdered cheese, and eventually the boxed mac and cheese dinner was born. This was right around the Great Depression and World War II, so the cheap, easy, and yet elevated meal became a staple in many American households .

Reheating On The Stove

Stovetop reheating is often a fan favorite for Kraft mac and cheese lovers.

Reheating on the stovetop does not have to be difficult and can leave you with delicious mac and cheese.

Put the mac and cheese you are going to be reheating into a saucepan. Add about a third cup of milk or cream. The saucepan should be over medium heat until all the contents are warm.

This typically takes around ten minutes. You may choose to add more milk or cream.

Mac and cheese is a staple comfort foodthat is delicious on its own. However, mac and cheese can also be tasty when itis reheated. Following these steps can help ensure that your leftovers remaincreamy and cheesy.

Kraft Macaroni & Cheese Is Made With Phthalates But It’s Not Clear What That Means

While you won’t find preservatives and artificial flavors in Kraft Mac & Cheese, you will find another controversial ingredient. Kraft’s powdered cheese has been found to contain high levels of chemicals known as phthalates . On its website, Kraft notes that it does not add any phthalates to its product, but the chemicals can apparently wind up in some manufactured products during the production process .

The issue with phthalates is that it’s not clear how safe or harmful they actually are. Some medical experts believe these chemicals may disrupt humans’ hormonal systems. CNN reports that phthalates have been banned in children’s products since 2008 by the U.S. Consumer Product Safety Commission. On the other hand, the Centers for Disease Control and Prevention says, “Human health effects from exposure to low levels of phthalates are unknown.” On top of that, Kraft claims, “The trace levels found in the one limited test of mac & cheese are well below any level of concern.”

What Is That Loose White Powder In Your Easy Mac And Cheese

If you’re feeling really hungry, you may not even notice the loose, white powder strewn among the noodles in your single serving cup of Kraft Triple Cheese Macaroni & Cheese.

Kraft doesn’t promise “natural ingredients,” and with a nuclear orange cheese powder that comes ready to stir from an aluminum packet, it’d be foolish to think “natural” is what you’re getting. Ahem:

But even before you stir in that iconic cheese powder, your uncooked noodles are already dressed with a bit of powder.

You can probably mix up a bowl of instant mac and cheese with your eyes closed, which means you rarely read the label. Upon closer inspection you’ll see this little note:

So, what exactly is this mystery macaroni dust? The Huffington Post reached out to the Kraft Foods Consumer Center, where a representative identified the stuff simply as “modified food starch.” According to the representative, the starch is added to prevent the product from boiling over in the microwave. Starch thickens water, which keeps it from boiling so violently.

It’s good to know that this little addition to the noodle bowl is keeping microwaves from becoming a mess chances are, if you’re eating a portable bowl of something promoted as “cheesy made easy,” you’re not planning to spend a lot of time on clean up.

Kraft Macaroni & Cheese May Contain Allergens But There Are Alternatives

We know that Kraft Macaroni & Cheese does in fact contain real cheese. But it’s a processed powdered cheese, so it’s worth clarifying what that means for allergies and dietary restrictions. First of all, this may be surprising, but Kraft Mac & Cheese is not technically considered vegetarian . That’s because, per a FAQ on Kraft’s corporate website, during the process of converting milk into cheese, enzymes from animal sources are used. Kraft does note that it is “looking into new ways of processing our various lines of cheese products that would eliminate the need for enzymes that are derived from animal sources.” So those who choose not to consume animal products should be aware of this when deciding whether they want to eat this mac and cheese.

Additionally, anyone with intolerance to gluten lactose may need to evaluate if they can eat Kraft Mac & Cheese. On the box’s ingredients list, it clearly states that the product contains wheat and milk. There is some good news for some Kraft does offer a gluten-free version of its boxed mac and cheese.

Kraft Macaroni & Cheese Starts With Real Cheese

As counterintuitive as it may seem, the bright orange, processed cheese powder that brings Kraft Macaroni & Cheese to life actually begins more like the cheese sauce it will become. And it all starts with real cheese. Kraft says for its powdered cheese, “We start by making our own cheese. We then blend that cheese with other ingredients to make a cheese sauce that has the one-of-a-kind taste you love.” This cheese sauce gets a small amount of sodium phosphate added to it, which is the magic ingredient that helps bind the oil and water in cheese, so that it stays smooth and creamy when it melts . At this point, the cheese is resembling something more like the Velveeta shells and cheese sauce we know and love. So how does it go from this to powder? Keep reading to find out.

What’s The White Powder In Easy Mac

If you’ve ever made Easy Mac Kraft’s microwavable alternative to stovetop mac and cheese you might have pulled back the lid and noticed a white powder inside. No, it’s not the cheese powder that’s contained in its own packet. So what is it?

If you checked the cooking directions, you would see that the package reads “Note: You will see loose white powder in pasta. This is necessary for proper cooking.” The Huffington Post reached out to Kraft to find out just what that loose white powder might be, and were told that it is actually modified food starch. The representative explained that the starch is there to prevent the Easy Mac from boiling over in the microwave and acts as a thickening agent.

According to Bob’s Red Mill, modified food starch is in just about all instant and processed foods these days, and it’s commonly made from corn, wheat, potato, and tapioca something to keep in mind if you have allergies.

Can You Put Kraft Mac And Cheese In The Refrigerator

Kraft Mac & Cheese Only $0.64 a Box at Target ...

You would do better storing your box of Kraft Mac and Cheese in your pantry or your cupboards, instead of putting it in your refrigerator.

Putting your box of unopened Kraft Mac and Cheese will not really do much to lengthen its shelf life. There is a high level of humidity inside the refrigerator, which means a box of pasta that is kept inside it, without first being tightly wrapped and sealed, will be even more susceptible to any moisture that might seep in and cause the mac and cheese to become clumpy or moldy.

You can freeze cooked mac and cheese, yes, but not for long, as it will congeal. Moreover, thawing cooked pasta will reduce the flavor and the cheese will never quite be the same.

Does Kraft Mac And Cheese Expire

Shelf-stable food like a box of macaroni and cheese has a rather commendable latitude in terms of expiration dates. Unopened, they can technically be eaten well past their expiry date, and the same can be said for Krafts Mac and Cheese.

So, technically, a box of Kraft mac and cheese, left unopened can be consumed well after its expiry date, and with no noticeable change in quality. You do not need to fear a massive bout of food poisoning, either, by consuming a product after its so-called expiry, use-by, sell-by or best-by dates.

These dates are solely indicators of freshness, used by manufacturers and producers to convey when the product is at its peak. This does not mean that food becomes inedible after the use by or best-by dates. A box of Krafts mac and cheese does not go bad or become inedible.

Properly stored, an unopened can or box of Kraft Mac and Cheese will retain its original quality for up to two years. The dry mix sachet or the sauce mix that comes with the macaroni, however, needs to be checked before you decide whether it has gone bad or is still edible.

Kraft Uses Food Dehydrators To Make Its Cheese

Kraft Macaroni And Cheese Review Which Is Best? Humorous Day 6

The final step in going from cheese to cheese powder involves a process that actually far outdates Kraft Macaroni & Cheese itself food dehydration. The natural version of the process has been used by Indigenous Americans and some Eastern cultures for generations. Food dehydration dates back to the late 18th century . The main function of dehydrating food, either naturally, using heat, or more modern chemical processes, is to make it essentially non-perishable .

Today, it’s so common that you can buy food dehydrators on for less than $45. And that’s basically what Kraft uses, only smaller. Kraft says, “Similar to a food dehydrator you might have at home to dry out fruit like apples, we use a food dehydrator just a much larger version. This removes the moisture from the cheese sauce and turns our Cheese Sauce into dry powder.”
