I got a call the other day from a reader who wanted to make our Herb-Lemon Ricotta Cheese recipe but with lactose-free milk. Would it work, she asked?

I didnt know the answer. So I checked with the people at Green Valley Organics, a company that launched the first lactose-free yogurt and sour cream at Expo West last year, and got their suggestions.

It’s important to note that you can’t use ultra-pasteurized milk to make cheese because UP milk doesn’t contain the cultures that acids interact with to make cheese. And at least in the stores I checked, all of the lactose-free milk was also ultra-pasteurized. Then it occurred to me to to add in cultures by including lactose-free yogurt in the mix. I tried it last week and it worked perfectly!

Lactose-Free Ricotta Cheese

1/2 gallon lactose-free cow milk or goat milk

1 container lactose-free plain yogurt

1/4 cup apple cider vinegar

1 teaspoon noniodized salt

1. Whisk milk and yogurt together in a large cooking pot over medium heat. Stir often to avoid scorching. Bring the milk up to 175 degrees , and remove from heat. Add vinegar while stirring briefly. Tiny bits of curd will form. Set the mixture aside for 15 minutes.

3. Transfer solids to a bowl and add salt, working in gently. Refrigerate in a covered container keeps for about a week. It’s delicious!

What Is Lactose Intolerance

Lactose intolerance is a very common digestive problem. In fact, it affects around 75% of the worlds population .

Interestingly, its most prevalent in Asia and South America, but much less common in parts of the Western world like North America, Europe and Australia .

Those who have it dont have enough of an enzyme called lactase. Produced in your gut, lactase is needed to break down lactose, the main sugar found in milk.

Without lactase, lactose can pass through your gut undigested and cause unpleasant symptoms like nausea, pain, gas, bloating and diarrhea .

Fear of developing these symptoms can lead people with this condition to avoid foods that contain lactose, such as dairy products.

How To Make Your Own Lactose

Here in the U.S. we have access to lactose-free milk fairly easily. Many well-stocked supermarkets have lactose-free cottage cheese, half-and-half and sour cream. Some specialty stores have lactose-free cream cheese, such as the Green Valley Creamery brand.

In the northeast where we are located, we do not have access to lactose-free heavy cream. Now, Monash University has lab tested heavy cream and it is allowed in 1/2-cup portions when whipped and they say 2 Australian tablespoons as a liquid, but heavy cream is such a common ingredient in baking and cooking that I wanted to learn how to make my own lactose-free heavy cream, knowing that I could then extend the technique to milk, half-and-half, light creams etc.

Smaller Portions Fewer Symptoms

Maybe you can’t enjoy a big glass of milk with cookies, but you can try a smaller serving. Start with a 4-ounce glass instead of a full 8 ounces. Gradually increase the amount of dairy you eat until you begin to notice unpleasant symptoms. Listen to your body. It will tell you when you’ve reached your limit. If you want to avoid lactose completely, try lactose-free dairy milk or non-dairy drinks, such as soy milk.

Make Better Cheese Choices

I do not know. I discussed my testing approach with the makers of the strips at Precision Laboratories. They agreed that as the strips turned dark green that we do know that lactose has been converted. We do not know how much.

A cream cheese so creamy and smooth youll be surprised it came from your own kitchen.

Preparation time
  • 2 cups of Natrel Lactose Free 3.25%
  • 2 cups of Natrel Lactose Free 35% Cream
  • ½ tbsp. fine sea or kosher salt
  • ½ tbsp. white vinegar
  • Fine-mesh sieve


  • In a saucepan, combine Natrel Lactose Free 3.25%, cream and salt. Over medium heat, bring to a boil, stirring occasionally to prevent the bottom from scorching. When its boiling, remove from heat and stir in vinegar. Let cool completely.
  • While the mixture cools, place 4 large layers of cheesecloth in a fine-mesh sieve placed over a bowl. The sieve shouldn’t touch the bottom of the bowl to allow the whey to drain.
  • Pour the cooled mixture into the sieve. Place in the fridge and allow to strain overnight. In the morning, scrape the cheese from the cheesecloth into a bowl and whisk well so it’s creamy and smooth. Scoop into a sealable jar.

    Lactaid isnt cheap.

    At my local Associated Supermarket and many other grocery stores, it retails at $7.79 for 96 fl oz . Hong Kong Supermarket in Chinatown, Manhattan sells it for $5.99, a sizable $1.50 difference, but its inconvenient for me to get there often from where I live.

    I polish off the entire bottle within a week or less easily. And the last time I saw it on sale at an online grocery store, I bought 9 bottles of them right away.

    Still, this isnt an ideal situation as $7.79 for 0.75 gallons of milk is simply too expensive. This became even more pronounced after I found that regular milk costs roughly $4 per gallon in NYC.

    Which Cheeses Are Lowest In Lactose

    According to Meyer, cheese lovers may be able to rejoice with cautionâit turns out most cheeses, particularly the hard ones, are relatively low in lactose. “Also, this study shows that most people with lactose intolerance can tolerate 12 to 15 grams of lactose,” she says. “For reference, a cup of milk has about 12 grams of lactose, while cheddar cheese has < 0.1g/ounce.”

    “Hard, aged cheese tends to be lowest in lactoseâthink Parmesan and aged cheddar,” Fineberg says. “Goat cheese also typically sits well with my lactose-intolerant clients. Overall, though, since cheese is much lower in lactose than say a glass of milk, small amounts of any kind are typically tolerated well. That being said, if you’re still having issues, it could be helpful to look at the serving size of cheese you’re consuming or investigate if perhaps there is something else to blame for the digestive distress.”
