Easily liquify cheese spread and avoid unpleasant clumps in cheese dip with these essential tips to know before melting American cheese in the microwave:

  • Dice, grate or slice your cheese prior to microwaving it. America cheese will melt quicker if its in small pieces.
  • Let the cheese come to room temperature for 20 to 30 minutes before you melt in microwave.

How To Make Easy Cheese Sauce:

Its so simple! This is how to make it on the stovetop, which is my recommended method, but you can scroll down to the recipe card for more detailed directions as well as microwave directions. In the microwave, it likes to boil over, so use a big bowl and keep an eye on it!

  • Melt butter and whisk in flour. I like to use unsalted butter so you can season to taste at the end, because cheese can add a lot of saltiness to this sauce.
  • Slowly stir in Simple Truth Milk while whisking sauce. You can use fat-free milk, but I recommend 2% milk or whole milk for best results.
  • Continue to cook until mixture thickens. Remove from heat and whisk in shredded cheese and any other ingredients youd like to add.
  • Thats it! Its so easy and such a delicious thing to know how to make.

Lactose Intolerance A Sad Realization And An Ode To Kraft

Recently we discovered that my daughter is lactose intolerant. She had been dealing with stomach issues for at least a year. We had several tests run to rule out various other allergies such as wheat/gluten. As for lactose, the doctor just suggested not using it for a couple of weeks and seeing what happens. We did try to be careful but did not fully cut lactose out of her diet at that time as her symptoms seemed to subside.

A few months ago, my daughter got really sick. She was sick to her stomach and kept throwing up. After we ruled out the stomach flu or food poisoning, we narrowed it down to the crazy cheese fondue fest we had one evening. Since then we have really endeavored to change her, and our, eating habits. This has proved more difficult that we originally thought. We have friends that are allergic to all kinds of things and knew how to adjust the meal when they came to visit. Finding lactose-free food for every single day, 3-4 times a day has really been a challenge. Milk is in EVERY thing!

For example, one night she asked for a snack

While the ingredients list here is still pretty short and simple, it’s not quite on par with the top picks. That’s why these cheese singles land smack in the middle of our list. Watch out for high levels of sodium and higher levels of fat. The ingredient list also contains sodium phosphate, which is often used for meltability in cheese singles, and food coloring from commercially synthesized carotenoids. While the inclusion of these ingredients isn’t a deal breaker, it’s also not completely necessary, which makes this a wasted opportunity for a cleaner product.

Do Most People Seriously Think Kraft Singles Are Real American Cheese

Ive recently discovered that virtually everyone outside of America and a large chunk of Americans associate American cheese with the individually wrapped yellow slices of cheese sold by Kraft. Some people even lump spray cheese and Velveeta into the same category. After scouring the internet, I realized that most people dont even know that that real American cheese exists!

As someone who grew up with Land-O-Lakes white American sliced at the deli, I am honestly shocked by this. Its certainly no gourmet cheese, but theres nothing more satisfying to me than a grilled cheese with American . Saying you dont like American cheese based on Kraft Singles is, in my opinion, akin to swearing off all ham because you dont like canned SPAM. .

So as cheese enthusiasts, I have to ask: do you equate Kraft Singles and American cheese? Who among you has had true American cheese ? And, if you have, do you think that deli American and Kraft Singles are similar?

    What Is American Cheese

Let’s get one thing straight. When I say American cheese, I am referring specifically to process American cheese. The kind that comes either in individual slices from the refrigerated dairy case or sliced off of a rectangular block at the deli counter. There are many incredible cheeses produced in Americasome of the finest in the world, like Humboldt Fog, Moses Sleeper, and Bent River. They may be great cheeses that are American, but they are not “American cheese.”

Let’s get another thing straight. All cheese is processed. All of it. It is a man-made product that does not exist in nature. Even the simplest cheese, like halloumi, is made by treating milk with rennet , draining the resulting curds, and pressing them together. More complex cheeses go through further steps of processing. Mozzarella and queso Oaxaca are kneaded and stretched, for instance. Gruyère and Comté are washed with a bacteria-infested brine called morge.

Most cheeses are inoculated with bacteria and allowed to ferment and age, during which time they develop flavor and rinds and lose moisture.

Heating, curdling, pressing, inoculating, aging…those are all processes.

*Oddly, one of the USDA stipulations for process American cheese destined for use in government programs is that none of the ingredients shall have previously been property of the government, meaning that the phrase “government cheese” does not actually apply to government cheese…until it becomes government cheese.

The description kind of says it all: “reduced-fat pasteurized process cheese food with added calcium.” It’s not even cheese! Yes, yes, they’ve added calcium to it, but if you’re looking to ‘cheese food’ for your daily intake of calcium, it may be time to reevaluate the rest of your diet. With a high sodium count and a subpar ingredient list, we recommend skipping at all costs.

Is Velveeta And Kraft Singles The Same Thing

Although Velveeta isnt quite American cheese, it comes close. Its made of a combination of old cheeses, much like Kraft singles, and is processed using emulsifiers to hold it all together before being processed again to give it the ideal meltiness. The term Velveeta actually refers to the velvety texture it has when melted. When you enjoy its melty delight, look for Velveeta recipes to prepare.

    Of Course American Cheese Melts

    Real cheese does melt!!!

Since processed cheese or pasteurized cheese product, as its more technically called, does indeed melt, this explanation needs some tweaking! What you will have noticed is that American cheese melts differently from, say, cheddar cheese. American cheese melts and becomes creamy, but the fat does not separate from the solids. It stays nice and smooth! Other natural cheeses, depending on the fat content and firmness, will separate, so that the fat becomes a liquid that is not bound with the solids. This can result in a clumpy, greasy mess sometimes, depending on how you use the cheese.

So, notwithstanding that all cheese is processed, so-called processed cheese and natural cheese both melt, but in different ways, with different properties. The ability of Velveeta cheese to melt into a perfect creamy dip that holds its emulsion is why we use it for nachos so often! You dont have to add anything other than your salsa or other ingredients to get a perfect dip for your tortilla chips.

The magic word here is emulsion. What is different about American cheese is that it is cheese that is mixed with whey protein and other emulsifying ingredients. These ingredients hold the fat together with the solids and resist letting it go, even when heat is applied. If youve ever made a bechamel or white sauce, youve made an emulsion. Mayonaise is also an emulsion. Lets expand:
