How To Make The Best Vegan Mac n Cheese Tasty

I got this idea from The School Night Vegan blog! I had literally never heard of anyone making vegan mac and cheese by making a dry cheeze powder until I came across his blog post. Its such a smart idea! His cheeze powder used a few ingredients that I dont normally stock, so I just made it a little more pantry-friendly for what I normally have on hand. But the cheeze powder method is his genius idea and he has a super fun website with lots of vegan recipes that is worth some perusing if you like plant-based recipes!

What Is Nutritional Yeast

Nutritional yeast plays a big role in making vegan mac and cheese. Its a deactivated yeast that you can buy as flakes or as powder.

It can usually be found in the bulk aisle or in the natural food section of many supermarkets. Nutritional yeast has a strong cheesy and nutty flavor, which makes it the key ingredient in many cheese substitutes.

What Makes This The Ultimate Vegan Mac And Cheese

Easy Vegan Mac and Cheese Recipe (Stovetop or Baked)

With no roux to fuss with and no cheese to separate into unsightly curds, making vegan mac and cheese is easier than any other homemade version Ive tried. If you can use your microwave and blender, then you can whip up a vegetable-packed vegan cheese sauce any night of the week.

Replicating the taste of cheese is no small task, but close your eyes and imagine the sharp, buttery, earthy, and even acidic flavors you find in each creamy bite of cheese. Now swap in steamed sweet potatoes which are more vegetal than sweet and cashews and coconut milk for creamy heft. Fresh lemon juice and Dijon add a savory and acidic bite, and the nutritional yeast is the missing piece of the puzzle, adding that richness that takes this sauce from creamy puréed vegetables to vegan cheese sauce.

Raw cashews and nutritional yeast may sound exotic, but do not drive all over town to specialty shops you can usually find them on the shelves of your regular grocery store.

What Makes A Mac And Cheese Perfect

Although making vegan mac and cheese is easy, its tricky to get the right flavors and textures. Over the years, I have tried hundreds of recipes in search of a perfect recipe. But unfortunately, I havent had a very memorable experience. All these vegan mac and cheese are either too bland, too dry, or too tangy. In short, there is always a punch missing.

Thats what compelled me to create my own recipe. I took notes, and thanks to my unlimited brainstorming sessions, I came up with a recipe that gives you a mac and cheese with the following characteristics:

  • Cheesy: The perfect mac and cheese have to be cheesy without too much overpowering flavor. Now I have used a combination of nutritional yeast or noni juice and coconut milk which is not just a vegan ingredient but also gives this macaroni cheese a cheesy flavor.
  • Velvety: The texture should be rich and velvety. Its the Cashews and coconut milk that give you the perfect velvety texture.
  • Creamy: You can either add heavy cream or dairy milk to get creamy mac and cheese in a traditional recipe. However, for a vegan version, Cashews and coconut milk shine here.
  • Buttery: You dont need butter to make mac and cheese buttery. You can use Coconut milk which helps to give a buttery flavor.

How Do You Thicken Vegan Mac And Cheese

You will be able to thicken and improve the consistency of your sauce if you use corn starch. If you prefer, you can substitute potato starch for this. The garlic powder has a flavor thats optional. It is also possible to substitute onion powder for this, or substitute half garlic and half onion powder.

How To Make Vegan Mac And Cheese

This vegan mac and cheese is ultra cheesy yet we did not use one shred of actual vegan cheese in it. So if youre living somewhere where its hard to find vegan cheese in the supermarket, no worries, this recipe is for you.

I did try a version with some vegan cheese added to the sauce, and quite honestly I just didnt think it worked as well as the version without, so this is it.

I created a bechamel sauce with some vegan butter, all purpose flour, coconut milk and vegetable stock and once that was thick and creamy like a white sauce should be, I added some cheesy flavorings in the form of dijon mustard, nutritional yeast, onion powder, garlic powder, smoked paprika, salt and pepper.

The spices in this sauce really make it, you wont have any doubt that this is a cheese sauce. We used our cheesy garlic vegan alfredo sauce as major inspiration for this.

Add the cooked macaroni to your big pot of sauce and toss it all together and then transfer into a 9×13 baking dish, top with breadcrumbs and bake for 20 minutes until beautifully golden brown on top.

Super easy and extremely satisfying.

What Are The Best Brands To Make A Vegan Cheese Sauce

Vegan Mac and Cheese

When you make something like a vegan cheese sauce recipe you likely want to know exactly how we made it in order to get the best test.

We have not found a major difference in what brand of butter beans you use, so no worries there.

As far as dairy free milk, we typically go with Targets Good & Gather Oat or Almond milk depending on what we have on hand. However you can use whatever your favorite is. We do recommend unflavored, unsweetened dairy free milk.

We usually use the Now Foods brand of nutritional yeast.

As far as vegan butter, this again is one that we think you use your favorite, but we have used country crock plant based sticks and Earth Balance with a lot of sucess.

For vegan parmesan we use the Violife wedge as our go to but if you cant find any you can also make your own vegan parmesan cheese

Lastly, for vegan cheese, you can use a block or shreds. We have particularly really loved the Violife Epic Cheddar block and shred it ourselves inside, however we had had success with other brands like Violife and Daiya cutting board blend.

For cream cheese, we like Wayfare and Violife.

What Is Vegan Macaroni And Cheese Made Of

While I do enjoy plant-based mac and cheese recipe variations that are made with potatoes, carrots, butternut squash, cashews, or cauliflower, I think that using vegan cheese to make the cheese sauce tastes the most like classic macaroni and cheese. If you’re not a fan of store-bought vegan cheese, you should give this recipe a try!

The process to make vegan macaroni and cheese is still the same as before you were vegan, you just need to make a few substitutes:

  • Make a roux
  • Let the cheese melt
  • Pour the vegan cheese sauce over cooked noodles
  • The only difference is that you need to use vegan butter, non-dairy milk, and vegan cheese instead of dairy products. Pretty simple if you ask me!

    Easy Vegan Mac And Cheese

Who misses Kraft-style shells and cheese? I do, I do. After a long shift at my high school job, I would come home famished and down a whole box of Kraft Mac n Cheese. Since ditching dairy, Ive missed that classic shell pasta enveloped in creamy, cheddar cheese sauce. But after cracking the code on our vegan cheddar cheese, we immediately thought to try it with pasta and it worked perfectly! The resemblance to boxed shells and cheese was uncanny! And it tastes like the real deal, too!

We know youre going to LOVE this 1-pot, 5-ingredient dish that comes together in just 15 minutes! Let us show you how its done!

The star of this recipe is our easy vegan cheddar cheese. Made with a base of cashews and carrots, its wholesome but tastes indulgent and comforting. We recommend making a batch ahead of time and storing it in the fridge or freezer. Itll be perfect for making mac and cheese and grilled cheese sandwiches in no time!

If youre more of a store-bought vegan cheddar fan, that can work too. Our top cheddar recommendation is Field Roast Chao Vegan Slices Creamy Original .

For the noodles, we used a shell shape for Kraft reminiscing but also to maximize the amount of sauce in every bite. But you can use any noodle variety you prefer. A legume-based pasta such as Banza will give this meal more protein, fiber, and staying power.

We hope you LOVE this vegan mac and cheese! Its:Cheesy

Vegan Mac And Cheese: Frequently Asked Questions

What type of non-dairy milk is best here?

Cashew milk is a great option and is highly recommended if you can find one that isnt too watery! Almond milk was pretty good, oat milk was great, and soy milk is great if you can find one with no flavor we had a batch that was supposedly unsweetened and unflavored but definitely tasted like vanilla, so youll want to look for a milk with as neutral of a flavor as possible.

Can you make this vegan mac and cheese in the Instant Pot?

Yes and it turns out great! Check out the notes for how to do this at the bottom of the recipe card.

How do I store my extra cheese powder?

Just store it at room temp in an airtight container.

How long does the cheese powder keep?

If stored in an airtight container, it should keep for up to 6 months.

    • Swap the sweet potato. If you dont have sweet potato on hand but you still want to try this recipe, dont worry. An equal amount of diced carrot or butternut squash would work just as well.
    • Make it smoky. Blend 1/4 to 1/2 teaspoon smoked paprika, to taste, into the vegan cheese sauce for a smoky twist. Or, for texture, stir in a handful of crumbled tempeh bacon bits!
    • Spice it up. Make spicy vegan mac and cheese by pureeing the sauce with 1 tablespoon pickled jalapeños or a chipotle pepper from a can of chipotles in adobo.
    • Go gluten-free. Use your favorite gluten-free pasta! I like to use brown rice elbow macaroni.
    • Add extra veggies. Of course, this vegan mac and cheese tastes good on its own, but adding extra veggies certainly doesnt hurt. Stir in thawed frozen peas, spinach, or steamed broccoli for a bright pop of green.

The Best Vegan Mac and Cheese (Classic, Baked)

Why not? Even if a classic mac and cheese have dairy ingredients in it, you can still satisfy your craving by switching a few ingredients. Choose plant-based substitutes for dairy ingredients, and thats it! A few tricks can help you enjoy rich, creamy, and tasteful mac and cheese.

Moreover, most brands of pasta available in the market are vegan, which is very good news for us. However, you should still double-check the labels.

    How To Reheat It

Fridge: You need to add at least ¼ cup of unsweetened coconut milk or water to the pasta to help loosen up the sauce as you reheat it in a large pan over medium heat.

Frozen: Remove the frozen pasta from the freezer and put it in the fridge to defrost for 24 hours. Add at least ¼ cup of unsweetened coconut milk or water to the pasta as you reheat it in a large pan over medium heat.

Can You Use Any Other Shape Of Pasta For This Recipe

Of course, you can. I mean, as long as it is pasta, the shape doesnt really matter, does it? Most people use elbow-shaped pasta because they are pretty common. However, you can use a spiral shape, shell, or any other shape you like. Even spaghetti will work if you dont have any other shape available in your kitchen pantry. It doesnt really matter.

    Does Daiya Vegan Cheese Melt

Because Daiya is melt-able, it melts slightly better than standard melting cheeses and, in some cases, better. When aged cheddars/gruyéres/manchego and other high-oil cheeses are aged, they tend to have an oily residue and broken sauce that spoils the velvety texture however, with this type of cream, they retain their silky texture without these issues.
