The traditional Mexican street corn is turned into the best dip ever. Its so good, you wont even need the chips. Just grab a spoon and eat!

Mexican street corn. Have you tried it? I was always skeptical about it myself I mean, mayonnaise on corn? But boy, was I wrong. I recently tried it at my local farmers market and I was in heaven. I loved it so much that I think I ate about 3 of these, ditching the rest of the vendors there!

But as I devoured all three of them, my face was a mess and there were tons of corn kernels stuck everywhere in my teeth. It was so bad, I even thought to myself that I would never have Mexican street corn again. But I just couldnt bear that thought so here we have it in an epic dip form. And yes, there should be no corn kernels getting stuck here.

Best of all, this takes just minutes to whip up. And the toppings here are just out of this world mayo, lime juice, chili powder, and cotija cheese. Its amazingly creamy with a hint of tanginess and a bit of spice. And as I always say just ditch the chips and grab a spoon here. You wont be needing the chips at all.

Find Reputable Brands Or Grate The Parmesan Cheese Yourself

In America, if you want cheese that is truly 100% Italian style Parmagiano Reggiano, search for authentic manufacturers and cheese-makers, or buy whole pieces of Parmesan cheese and do the grating yourself. This choice also saves trees from being ground into wood pulp.

Not only does freshly grated Parmesan cheese offer a better flavor and texture that melts in your mouth, but its also more cost-effective than pre-grated cheese. To grate your own Parmesan, you can use a Microplane, box grater or food processor.

On the bright side, you finally have a reason to plan that trip to Italy for some real authentic Italian cheese. In Italy there is one and only one type of Parmesan cheese, and it is Parmigiano-Reggiano.

While many Italian food dishes can be replicated in the states, authentic Parmigiano Reggiano is truly unparalleled compared to imitation cheese. Very simple recipes, like risotto or spaghetti, have a distinctly different flavor when made with freshly grated Italian parm. Alas, when it comes to cheese, we give you the same advice we have for love: never settle your taste buds and plate of pasta will thank you for it.

Mexican Street Corn Dip

Fiesta in a bowl!

Hola, everyone! In honor of Cinco de Mayo, Ive whipped up a little Mexican-themed dip for you.

I got the idea for this last week, when I tried Mexican Street Corn for the first time. This is an amazing dish where you take fresh corn on the cob, grill it, slather it with Mexican crema , and roll it in crumbly Cotija cheese with plenty of spices.

So of course, as soon as I tried this fantastic recipe, I just had to find a way to turn it into a dip. Because thats just the way I roll.

If you want your dip to be really authentic, you can grill the corn in the traditional way and cut the kernels off but if you just want it to be easy, you can start with canned corn kernels. Saute those with some butter, garlic, and jalapeno peppers and mix them with a blend of mayo, cream cheese, sour cream and zesty Mexican spices.

Top all that with cilantro and Cotija cheese, and you can get this fiesta started!
