Grating Your Own Cheese

Although it seems obvious and convenient to grab a bag of shredded cheese at the supermarket, grating your own is not as difficult or time-consuming as you might think. Besides, it’s likely that you’re paying more for grated cheese compared to the whole wedge, and that the pre-packaged shredded cheese includes additives to keep it from clumping together and becoming moldy.

A little extra effort can save you money and additives in your food.

If you use a lot of cheese and prefer to grate your own, you should consider getting a good box grater for basic cheese shredding1 cup of shredded cheese will take under two minutes. If you use the food processor, you’ll have grated cheese in 10 seconds. In addition, a Microplane makes quick work of fine grated Parmesan cheese.

Can You Freeze Macaroni & Cheese

While were on the topic of cheese, what about macaroni and cheese? You can freeze that too!

This can be a huge time-saver, especially if you are teaching independence and letting kids get their own lunches ready during the day.

Heres how to do it:

  • Prepare the macaroni and cheese the same way you normally would, and let cool.
  • After the macaroni and cheese to cool down, place in freezer-safe zip bags, spreading the noodles as flat as you can in the bags, to help with even re-heating later on.
  • To reheat, place in a microwave-safe bowl and stir macaroni halfway through reheating. You can add a drop or two of water to keep it moist.

What You Need To Know About Freezing American Cheese

Like most firm and semi-firm cheeses, American Cheese freezes well with little change in flavor texture. Heres how you need to do it:

  • Wrap or pack your cheese. Most American cheese slices come pre-packed, so you can skip this step.If your cheese is unwrapped, or you have a block of cheese, wrap the slices in cling film or wax paper. If you have shredded cheese, pack them into airtight freezer bags.
  • Then place your wrapped cheese slices in another container. You can pack them into an airtight box, or into a large freezer bag. This step is important as cheese can absorb other smells from your freezer. Storing them in another bag or box will give them an added layer of protection.
  • Label your container or box. Frozen cheese is safe to consume for up to 6 months, so either label it with a best-by date or with the date youre freezing the cheese.
  • Place in the freezer. It is best to put them in a spot that isnt the coldest in your freezer.
  • Which Cheeses Freeze Best

    Spicy Melty American Cheese

Not all cheese freezes the same way! Youll find the most success with hard and semi-hard cheeses.

Freezing wont affect the flavor of harder cheeses. Look for things like big, smooth blocks of sharp cheddar which will hold up better to freezing than many other types of cheese. Extra hard cheeses like Parmesan and Romano will come out of the freezer best.

In this post, well also talk about shredded cheese, which does well in the freezer, especially if you plan to use it for cooking.

Soft cheeses, like cottage cheese and cream cheese, can become watery or grainy after thawing, so its best to stick to the harder cheeses. You also want to avoid freezing cheeses like queso fresco, swiss, and brie neither of which will come out of the freezer tasting, or looking right.

American Cheese: The Gift That Keeps On Giving

Sandwiches arent the only things you can use American cheese in. You can also use them in sliders, cheesesteaks, burgers, and the classic grilled cheese sandwich.

But you can explore by adding slices of cheese to things like casseroles, stews, and soups, as they act as a thickener and add a creamy texture and flavor to these dishes. Baked mac and cheese also pair well with fistfuls of shredded American cheese, as does the fusion version aka Chili Mac.

Chowders, cheesy potato soups, thick broccoli soup, and cheese sauces are all excuses to add copious amounts of American cheese to a dish. You can also use them in quesadillas, tacos, and burritos.

Even Middle-Eastern wraps and kabob sandwiches get a boost with American cheese. Queso is also a great option, and you can serve it alongside different chips and dips during a football game or watch party.

You can also add them to any potato dish: mashed potatoes, fries, tater tots, and even things like latkes and other variants of potato pancakes. Crumble some over a baked potato, or add it to your hash browns-you wont regret it!

Last but not the least, there are many pasta dishes you can add it to, as well as pasta sauces like alfredo to thicken them.

        Pairing Cheese And Wine

How To Make American Cheese At Home! EASY! (Processed Cheese)

There are no rules in pairing cheese and wines, and much depends on personal likes and dislikes. Like having a good cheesemonger, having a good wineseller is equally important and should be someone whose opinions you trust and whose knowledge of wines is good. In many cases, you will discuss many characteristics found in both wine and cheese. Good cheese and wine pairings take some thought, and its important to consider both the wine and the cheeses texture and flavor profiles before making final selections. Remember, the goal is to create harmony and balance between the wine and the cheese and not overpower one with the other. Excellent resources for American cheese and cheese/wine pairing practices are The New American Cheese and The All American Cheese and WineBook , both by Laura Werlin.

      • Keep pairings simple: pick one distinct wine and one distinct cheese that pair well. For example, full-flavored cheeses, such as creamy washed rind cheeses require medium to full-bodied wines, such as Merlot, Zinfandel, or Syrahs. Likewise, pair light cheeses with light wines, such as Rieslings, Pinot Gris, or Pinot Noirs.
      • Pair wine and cheese according to the area of origin or even on the local region. Just as the growing conditions impart particular characteristics to a regions wines, these same characteristics may be imparted to the cheeses through the vegetation on which the animals graze.

        Horizon Organic American Singles

I always want to like the organic, “better quality” option in these taste testsnot to validate my own palate, but because I want so badly for food manufacturer marketing to live up to its advertised promises. I want to not feel bamboozled by health halos and instead, be delighted by a real one. So my expectations for Horizon Organicone of the leaders in pioneering organic dairy, a partner in the creation of the USDA’s national programwere high.

Unfortunately, they did not meet them, no thanks to a new recipe released just earlier this year. And apparently, I wasn’t the only one let downit earned less than 1.5 stars on their own website by users begging for the old recipe back.

Cold, this is a harder, stiffer cheese than its competitors. It bites like a thin-sliced cheddar, but without the sharp, distinctive flavoror much flavor at all, really. It had barely any salt, but then left a vaguely milky aftertaste that wasn’t there while you were powering through the dry bite. This was also the poorest melter of the batch. When left to do so on its own, it ended with a chalky granularity akin to shredded cheeses cut with too much dehydrating cellulose. It was stubbornly slow to melt until nuked too, which revealed some creaminess and mildly warm flavor. But like a carrot on a stick, this pleasure was quickly taken away as it cooled quickly, drying out fast into a waxy coat far from ideal.

        Kraft Deli Deluxe American 2%

        Cheese Samosa

The only true American cheese in the batch, on par with what you’d get from the deli counter. Its use of 2% milk puts it on a more even footing with the rest of the regular cheese food products. Packaged like a fancy single on the outside, it proved itself to be a regular Eliza Dolittle on the inside, as the un-resealable wrapper revealed annoyingly smushed-together slices with nothing to separate them. This basically defeats the purpose of buying sit-in-your-fridge-forever cheese.

Nonetheless, it found redemption a few chews in. After a few seconds of nothing, a mild cheddar-like sharpness emerges as it warms up in your mouth, leaving you with a rich, salty aftertaste that lingers comfortably. With heat, it melted well naturallyfaster than Velveeta, actually, and second only to the original Kraft Single. In fact, it almost disappears when left to melt by itself. This was unexpected since cheese is supposed to stay solid longer than cheese food by theory of composition alone. Because it melted so quickly, though, microwaving it creates a skin, similar to the Borden.
