It’s easy to tell real Parmigiano-Reggiano when you can see a piece of the rind, because it is… embossed with its name over and over.

My last column was full of praise for Parmigiano-Reggiano. This great cheese is worthy of all that praise: it is very natural, very healthy, very delicious and very consistent. It is wonderful by itself in chunks, shaved over or grated into foods, cooked or uncooked. It has been so good at doing so many things for so long – over 800 years – that it has earned the nickname in the dairy industry, The King of Cheeses.

But there is one big problem. As good as the cheese is, and as famous as it is, you rarely actually get to eat it – even when you think you are. The English translation of the cheese is Parmesan, and when you buy it in England you get Parmigiano-Reggiano. Its the law. The American translation is also Parmesan, but when you buy it here, you could be getting almost anything – except usually Parmigiano-Reggiano.

So What’s A Vegetarian To Do

There are a couple of alternatives to any kind of cheese flavors such as nutritional yeast and vegan parmesan cheeses made from walnuts . I am not endorsed by any company, just speaking up for newborn animals.

A very popular product on the market now is the whey craze. Whey marketers are targeting vegetarians and athletes on their hunt for protein. Please note, whey is a by-product from cheese production using rennet. Whey is the watery stuff that is left out of the cheese cloth. They powderize that and just discuss its health benefits, but if you are a vegetarian consuming whey, you are a full-blown animal eater. Sorry to tell the truth. Whey is also found in cookies, chocolate and on and on so please read food labels carefully, now knowing what to look out for.

In short, the best, and the only way, to ensure that your diet is not contributing to animal cruelty at all is to adopt a fully vegan diet – egg-free and dairy-free.

  • Paneer and cottage cheese is traditionally made without rennet and is instead coagulated with an acidic ingredient like vinegar or lemon juice.
  • Artisan cheeses from specific areas may be vegetarian. Cornish Yarg, which is wrapped in nettles, usually uses vegetarian rennet, although their cheeses for the US export market may contain animal rennet. Colston Basset Stilton from Nottinghamshire and Lord of the Hundreds, an English ewes milk cheese, are usually made using vegetarian rennet.
  • Some British Protected Designation of Origin and Protected Geographical Indication cheeses are vegetarian. However, PDO or PGI status does not guarantee that a cheese will always be suitable, so always check with the manufacturer. At the time of writing, vegetarian cheeses with PDO or PGI status include: Beacon Fell traditional Lancashire Cheese, Dorset Blue, Dovedale Blue, Orkney Scottish Island Cheddar, Single Gloucester, Staffordshire cheese, Swaledale cheese, Swaledale ewes cheese, Traditional Ayrshire Dunlop, Traditional Welsh Caerphilly and Yorkshire Wensleydale.

    Why Is Parmesan Cheese Not Vegetarian

    Vegetarians across the land will know just how much it hurts to have to turn down Parmesan cheese, aka Parmigiano-Reggiano, in restaurants.

    This hard Italian cheese is not a vegetarian product, unlike the vast majority of world cheeses.

    So why is it not vegetarian? And are there any similar-tasting alternatives that are vegetarian?

    Parmesan, which takes its name from the three places its made , is not vegetarian because its production involves the killing of animals.

    The coagulation process, necessary to make milk, usually requires an enzyme called chymosin, which comes from something called rennet.

    In the case of Parmesan, and most cheeses, that rennet is ritually procured from the one of the four stomachs of a calf.

    For this, the baby cow is killed merely so its stomach can be taken and split open, dried, cut into cubes and added to the cheese mixture to curdle it.

    This stomachs enzyme is so intrinsic to the production of Parmesan that it cannot legally be called Parmesan unless it contains cows milk, salt and calf rennet.

    And Parmesan is not the only cheese to contain calf rennet. Grana Padano and Gorgonzola are other Italian cheeses with rennet in the recipe.

    Others include Gruyere, Manchego, Emmenthal, Pecorino Romano, Mimolette, Camembert, Boucheron and Vacherin.

    Whats more, in the Parmesan-making process, excess whey is produced, then fed by farmers to pigs that are killed to make Parma ham.

  • Vegetarian rennets are either vegetable-based , microbial or made using genetically modified rennet.
  • A high percentage of hard cheese made in the UK is produced using chymosin produced in genetically modified organisms . For example, chymosin can be made by the genetic modification of the yeast Kluyveromyces lacti. To do this, the genetic code, or DNA, for chymosin is isolated from calf cells. This DNA acts as a template. A copy is produced and is inserted into yeast cells, which are cultivated and allowed to grow in a suitable environment. The chymosin produced by these cells is identical to the animal protein and the cheese itself is not made using a GMO but rather a product of this, the enzyme.

    The first step is to ask yourself what youre willing to consume. I made the personal decision to check cheeses when possible and assume acceptable when an ingredient list isnt readily available . That means Ill still take a slice of pizza from the local pizzeria, but you wont catch me eating Paneras macaroni and cheese again, because I know for a fact this isnt a vegetarian choice. Its a compromise that essentially allows me to do the best I canin most meal situations, Ill be able to make an informed choice, but when thats out of my control, Im not going to create an unproportional level of drama about it.

    If you want to avoid rennet at all costs, youll most likely have to avoid cheese in places you cant check the ingredient list . Then, when you head to the supermarket or have access to ingredients, youll simply want to keep a close eye out for rennet.

    Now, not all cheese contains animal rennet. Soft dairy products that contain whey practically never have rennet, because of how theyre traditionally made. Many cheeses at specialty cheese shops, or even at Whole Foods or Trader Joes, will typically list suitable for vegetarians, vegetarian rennet, or microbial rennet on the ingredient list. This indicates its acceptable for meat-free consumers. Occasionally the term enzymes is used, and unfortunately this is a toss up, according to The Vegetarian Times.     So Why Isn’t Parmesan Cheese Vegetarian

    Great question. In this case, it has to do with the use of something called rennet, which is pretty crucial to the Parmesano-Reggiano production process. Rennet is usually taken from the fourth stomach of a relatively young grazing animal like calves, goats, or lambs. That stomach is prized for its concentration of an enzyme called chymosin, which gradually loses its potency over time as grass replaces milk in that animal’s diet.

    Traditionally, getting that rennet has meant slicing the stomachs of young calves into little pieces dropped into salt water or whey, with something acidic like wine or vinegar used to help draw out the enzymes. Once that solution’s filtered out, it can coagulate a significantly larger quantity of milk. More modern methods use a bit of more precise chemistry to yield more potent rennet, but a calf’s stomach is still involved.

    Vegetarian Rennet Does Exist

    Many big brands are starting to use non-animal rennet substitutes due to increased demand. If a brand does this, it’s typically clearly listed on the ingredient list as: “vegetarian enzymes,” “vegetable rennet,” “microbial enzymes,” or “non-animal enzymes.” Don’t see it there? Check on the company’s FAQ page.

    “These days, it is pretty easy to find vegetarian cheese,” says Frances Largeman-Roth, R.D., author of Eating in Color. “Plant- or vegetable-derived rennet can be made from artichokes, nettles, cardoon thistle, or other plants. The enzyme derived from plants works in a similar way to animal-derived rennet, but the results aren’t always consistent. There are also microbial rennets, which are vegetarian-friendly.”

    Plant or vegetable rennet is sometimes obtained by soaking plants above to extract an enzyme that functions similarly to animal rennet, while microbial rennet is extracted from certain rennet-like molds in a lab.

    Is Kraft Grated Parmesan Cheese Vegetarian

    Many cheeses in the US are vegetarian, as they use a microbial rennet source. Still, there are places that use animal-derived rennet sources. Products made with animal-derived rennet sources are not vegetarian. Rennet that comes from an animal is from the stomach lining of a slaughtered cow, sheep, or goat. Some places also use rennet derived from slaughtered pigs. So to answer the question that many people have:

    Is Kraft Parmesan grated cheese vegetarian? Do they use animal or microbial sources of rennet?

    To get the answer to this question I contacted the company directly. Here’s what they wrote back:

    “Here is the information you requested about the enzymes we use in KRAFT Parmesan Grated Cheese.The process of converting milk into cheese is dependent on coagulating milk through the use of enzymes. We only use enzymes purchased from reputable suppliers for processing our various lines of cheese.KRAFT NATURAL SWISS & KRAFT GRATED PARMESAN – Kraft Natural Swiss and Kraft Grated Parmesan utilize microbial rennet which is NOT made with enzymes extracted from animal tissue – grated parmesan may contain lipase . Please check ingredient line on the product packaging. Below are the cheese enzymes.
