Banza Elbows & Classic Cheddar

Weâve already talked about the sin of trying to make mac and cheese healthy, so itâs not a surprise that Banza Elbows & Classic Cheddar is next on the chopping block. Itâs made with chickpea pasta, which is what sets it apart from its bleached-flour cousins. The cheese is a âclassic cheddar,â which is likely an attempt to equate it with more classic mac and cheese options like Kraft. Now, chickpea pasta can be delicious, but is it really the best type of pasta for mac and cheese? Judging by Banzaâs recipe, no. But while the flavor of the pasta is lacking, the texture of it isnât bad.

However, there is one caveat. Not everyone can enjoy a gluten-heavy mac and cheese without feeling awful . This chickpea pasta is gluten-free, so it is a good option if youâre missing the mac and cheese of your childhood. And to be fair, weâd rather have this chickpea pasta than whole wheat pasta any day.

  • Boiling the pasta cook the pasta less than you normally would. I like to boil my elbow pasta for between 4 and 5 minutes. The pasta will continue to cook in the oven, and you dont want it to get mushy.
  • Use room temp liquids if you can cold liquids generally take longer to thicken than warmer ones. I usually set my milk and half and half out while the water for the pasta is coming up to a boil.
  • The cheeses use your favorites! Our personal favorites are the cheddar and gruyere used in this recipe, but you can be very creative with the cheese selection here. Mozzarella, gouda, smoked gouda, swiss, monterey jack, colby jack, colby. There are plenty of reader comments down below the recipe that talk about the cheeses they used!
  • Shred your own I know its a pain, and its SO tempting to use the pre-shredded cheese in the bags. But those bags of cheese contain a starchy substance that keeps the cheese from clumping which also prohibits it from melting as well as it should.

Add Your Favorite Cheese To The Cheese Powder

All boxed mac and cheeses come with a packet of cheese powder, but if you’re a serious cheese enthusiast, then those small, salty packets aren’t likely to hit the spot on their own. But if you add some actual cheese to the powder, both the flavor and texture will get a very welcome boost.

Food blogger and recipe developer Ashley Schuering of Confessions of a Grocery Addict says that her cheese of choice for this process is a slice of American cheese. “I know it’s processed, but so is the neon orange cheese powder, so what’s the harm? It will give the mac a bit of cheese pull, which makes it feel almost like the real thing,” says Schuering.

If American cheese isn’t your thing or you want to add even more depth of flavor, feel free to sub in other cheeses like cheddar, gruyère, fontina, smoked gouda, or pepper jack.

Bone Broth Gives The Mac And Cheese Plenty Of Umami

Most boxed mac and cheese instructions tell you to cook the noodles in boiling water before making the cheese sauce. But if you want to add deeper, more savory flavor notes to your finished dish, replace some of the cooking water with bone broth or stock.

“I always have some homemade bone broth in my freezer, so whenever I want to add a little boost of nutrient density and depth of flavor to a box of mac and cheese, I’ll use half water and half broth for my pasta cooking liquid,” says BuzzFeed Tasty test kitchen manager and Belly 2 Baby Nutrition co-founder Karlee Rotoly.

What Are The Best Cheeses For Baked Mac And Cheese

As I mentioned above, the secret to creamy baked mac and cheese is Velveeta cheese! This American cheese just melts smoother than other cheeses and gives the sauce that creamy mouthfeel that weâre all looking for. Iâve found that an equal ratio of cheddar cheese and Velveeta cheese yields the best of both worlds â a smooth, creamy mac and cheese with plenty of rich, sharp cheddar flavor.

If you like a combination of other cheeses, you can feel free to replace some of the cheddar with other good melting cheeses. Try Gruyere, Pepper Jack or Monterey Jack, gouda, smoked gouda, Swiss or mozzarella. The options are endless, so pick your favorites!

Mushrooms + Thyme + Grated Gruyre

For a comfy weekend vibe, I drew some inspiration from this dreamy baked eggs recipe. Sauté sliced mushrooms in a pan with a knob of butter and fresh thyme, chopped. Once the instant mac is ready to go , mix in the sautéed mushrooms and grated Gruyère. Or, if you’re feeling extra cozy, transfer the mac and cheese to a casserole dish, sprinkle the Gruyère on top, and toss the whole thing under the broiler for a few minutes to create a bubbly, browned crust.

The Mac And Cheese Magic Explained

How to make Mac ‘n’ cheese blue box style

Note that while the milk was doubled, I halved the butter in the recipe. . Still, the mac was the creamiest version I have ever had, and the cheese sauce was luxurious and had fully merged with the pasta instead of just being a soupy slick on the outside.

The reason is simple: Like in any one-pot pasta, minimal liquid becomes intensely saturated with the starch coming off the cooking pasta, making your sauce silky and eliciting great texture. It amps up a creamy mouth-feel without needing to add so much butter. The fact that you then are at about an 8-10-minute bowl of mac, with only one pot and one spoon to wash, and no need to dig the colander out of the cabinet, is an extra little mac miracle.

So, whether you are having a once-in-a-great-while indulgence of a childhood fave or have a weekly mac attack if you are cooking solo or for your kids I bet once you try this version you may never go back except for seconds.

And it was just about the best thing ever.

Literally everywhere you turned, ooey gooey cheesy dishes were being served. And youd better believe we took full advantage of them. And we left feeling so happy. And soooo full, ha.

That said, there was one dish notably missing at the festival. But, it just so happens that Ive been on a mission this month to nail down my all-time favorite recipe for it. So yesterday, we decided to round out our cheesy weekend by taste-testing a final version of this recipe. And ohhh guys, I think weve got it. Im humbly calling it

How Much Water Do You Need For Boxed Instant Pot Mac And Cheese

I found that one cup of water worked great for this recipe. You dont have to add a ton of water, drain pasta, then mix in the rest. With the one cup it is perfect to stir in the cheese packet and enjoy. Which is so handy, and will save you a step compared to the stovetop.

I am all about simplifying my life, and this recipe has done that.

How To Avoid Grainy Cheese Sauce:

Ranking The Best Boxed Mac
  • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
  • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
  • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
  • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

To Bake Or Not To Bake:

You dont have to bake the mac and cheese in this recipe. Everything gets fully cooked and is essentially ready to eat after the cheese and noodles are added. However, I love the extra gooeyness that comes when the cheese is baked and I think baking it adds a level of sophistication you just dont get without.
