The Best Cut Of Beef For Cheesesteaks

Its important to use a cut of beef that does not require a long cooking time to get tender. Ribeye is a common choice but the cost is beyond what Im willing to spend, especially considering this recipe calls for 2½ to 3 pounds of beef.

My favorite cut of beef for this Philly Cheesesteak recipe is sirloin, specifically petite sirloin. Top sirloin is a wonderful choice but petite sirloin is less expensive and still plenty tender enough to create a fabulous Cheesesteak. Its also a thinner cut so there is a bit less slicing involved. Ive been able to pick up value packs of petite sirloin for less than $4 per pound at my local Safeway. You just cant beat that!

To get a closer look at petite sirloin and see this recipe in action, be sure to watch the video at the end of this post .

Youll need a good, sharp knife to slice the sirloin as thinly as possible against the grain. Once sliced, cut the beef into very small pieces.

Kitchen Tip

Place your sirloin in the freezer for 20 to 30 minutes to make it easier to slice.

What Cheese Goes On A Philly Cheesesteak Sandwich

American cheese, deli provolone, or Cheez Whiz are the only acceptable cheese options for a real cheesesteak. I recommend white American cheese.

If you use provolone, use the soft deli kind. Avoid aged provolone, which tastes too strong and does not melt as well.

John Kerry made an enormous unforced error in his 2003 Presidential campaign when the candidate, already battling an out-of-touch reputation, attempted to order a cheesesteak with Swiss cheese at Phillys famed Pats King of Steaks. It did not go over well. In fact, the reverberations of the event are still analyzed in politics to this day, such as in this Economist article.

Cheesesteaks should never, ever come with lettuce or tomato or anything like that. Ever.

Peppers And Onions In Cheesesteak

Its true, a classic cheesesteak sandwich does not usually come with peppers, onions or mushrooms. HOWEVER, I use every opportunity I can to sneak in veggies for my family, and since the combination of caramelized onions, peppers and mushrooms pair so nicely with the thinly sliced steak, we go for it.

It bulks up the filling, meaning I can serve more people, and everyone is happy. That being said, if youre not a fan of any of these ingredients, feel free to leave them out!

What Meat Is Used For A Philly Cheesesteak

How to Make a Philly Cheese Steak Sandwich

A classic cheesesteak is made with thinly sliced steaks from various cuts of beef, with rib-eye considered the best choice. The meat is often sold frozen in multi-sliced, shingle-shaped portions, or you can buy your own meat and cut it yourself. One tip: Its easier to slice it thinly if its partially frozen.

Choosing The Right Ingredients For The Philly Cheesesteak

Choosing the right ingredients for your Philly Cheesesteak makes all the difference.

  • The best cheese for Philly cheesesteak: Provolone cheese works best for a Philly cheesesteak due to its neutral flavor and melt. A strong runner-up would be sliced white American cheese slices . In Philadelphia, youll even find some food trucks and restaurants swearing by Cheez Whiz.
  • The best cut of beef for Philly cheesesteak: Thinly sliced ribeye is the go-to meat choice for a classic Philly cheesesteak. The marbling of ribeye is ideal because it creates a tender, easy-to-bite sandwich.

  • Philly Cheesesteak Sauce Mayo is the perfect sauce for a Philly cheesesteak. If you are wanting more of a punch, add horseradish to the mix or a touch of Worcestershire sauce.
  • Other Cheesesteak Toppings Some cheesesteak shops only add caramelized onions. Some also add bell peppers or mushrooms. Use all three or just one. The choice is yours!

What Is A Reuben Sandwich

A classic Reuben is a sandwich consisting of corned beef, Swiss cheese, sauerkraut, Russian dressing between slices of rye bread that is grilled until the bread is crispy and the cheese melts.

Though the sandwich may be enjoyed hot or cold, we love serving it HOT. The meat is heated and cheese melts and the tangy dressing penetrates into the sauerkraut creating an irresistible grilled sandwich.

What Kind Of Cheese Goes On Philly Cheesesteak

How to make a philly cheese steak sandwich

It depends. There are different approaches when it comes to the cheese. If youre using sliced cheese, like American or provolone, put the on the bread before the steak, so they will be softened by the heat of the meat, or put them on the meat while its on the grill before you put the whole mess on the roll.

Cheez Whiz, if that is your thing, is melted and drizzled over the steak in the sandwich.

What Is A Philly Cheese Steak

A Philly cheese steak sandwich is basically a sandwich made on a hoagie with smaller, thinner pieces of beefsteak and cheese. What cheese goes on a Philly cheese steak depends it can be provolone, American, or Cheez Whiz.

Two of the most famous places to actually buy a Philly cheesesteak sandwich are in Philadelphia , and they sit directly across from each other, Pat’s King of Steaks and Geno’s Steaks.

Originally a hot dog stall, Pat’s was founded in 1930 by two brothers, Pat and Harry Olivieri. They are the ones who actually invented the famous cheesesteak in 1933.

An ordinary steak sandwich eventually became the cheesesteak and led to the brothers opening a restaurant in place of the hot dog stall.

So opinion varies on what cheese to use. It really is a debate if you research it.

The traditional consensus says either Cheez Whiz or provolone. Some even say American cheese pairs well with the provolone.

We tried it with both, and while I love the provolone, the Cheez Whiz won my taste buds over. However, it’s up for debate in our house too because a couple of my guys really love the provolone.

What Other Toppings Go On A Cheesesteak

A traditional cheesesteak is only meat, cheese, and, maybe, onions. But some are starting to loosen up about the correct toppings to put on a cheesesteak. As Ray Boyd wrote in an article from 2019:

As a city, its time for us to claim the cheesesteak as a whole, not just the handful of ingredients that we arbitrarily deem are right because theyre classic. Weve seen green peppers pop up on various cheesesteak remixes and purists always get offended.

Here are some toppings that some enjoy:

  • Cheesesteak hoagie: chopped lettuce, tomato and fresh or fried onions with a sprinkle of oregano and, if desired, some olive oil and vinegar.

  • Bruschetta cheesesteak: tomato, celery, and basil

  • Hot peppers: jalapeno, long hots, cherry peppers, banana peppers

  • Green peppers

What Type Of Cheese For Cheesesteak

There is much debate on which type of cheese to use for a good Philly Cheesesteak Sandwich. While some are insistent on a classic American cheese sauce, I prefer something more mild, like Provolone.

Try to avoid using a smoked provolone, which can be over-powering. You can also use gruyere cheese.

Really, the choice is up to you. Make it how you like it! Its a sandwich for crying out loud!

How Do I Make This As A Freezer Meal

To make this as a freezer meal, you simply prep most of the meal and then put it into a gallon size freezer bag as instructed in the recipe.

Tip: Squeeze out most of the air to prevent freezer burn.

On cooking day, just thaw and cook as normal. Even the buns can be frozen for later since youll be toasting them up in the oven!

Popular variation

A popular variation on the traditional Philly Cheese steak includes bell peppers. It is not a traditional recipe, but its still really good! I personally love bell peppers, but theyre not for everyone. If you dont like bell peppers, or want to be a traditionalist, then simply dont include them.

CHOOSING YOUR MEAT

There are many different types of meat you can use to make a Philly cheese steak. Traditionally, ribeye is recommended for home preparation. Ribeye, however, can carry a price tag. Beyond the ribeye, you may read or hear about using top round. For this recipe, however, I use sirloin but sliced thin. Sirloin has the perfect amount of fat to compliment this dish and cook itself. Youll also see that it cooks really well in the Instant Pot and is so tender, juicy, and irresistible.

How Do You Make An Authentic Philly Cheesesteak Sandwich

An authentic Philly cheesesteak recipe combines the right ingredients and the right technique. Heres what to do:

  • Split a soft hoagie roll most of the way through.
  • Fry diced onions in a skillet until translucent and lightly browned.
  • Add the thinly-sliced ribeye steak. Season and cook in the pan.
  • Layer cheese on top of the steak and onions. Lay a split hoagie roll on top of the steak, then flip right side up onto a plate.
  • Techniques For Thinly Slicing Beef:

A great cheesesteak is made possible by using extremely thinly sliced meat. Wrap your steak in plastic wrap and freeze it for 30-40 minutes to make slicing it easier .

Removing any superfluous fat and silver skin before thinly slicing across the grain with a sharp knife is the next step.

In order to save time, request that your meat be finely sliced by the butcher. If you plan ahead of time, they might put the steak in the freezer while you go shopping to purchase those paper-thin slices of steak.

    • Boneless Ribeye is the preferred cut of meat but its usually super expensive. Sirloin works just as well and here is a little secret a lot of the real cheesesteak joints actually use this or a blend of Sirloin and Ribeye. Most butchers will properly slice the meat for you, you just need to give them a heads up when you first get in the store so that they can freeze the meat for 1/2 hour before thinly slicing. Or, better yet, call it in so its ready when you get there !
    • If you cant get them to slice the meat for you, you can freeze it for 20 to 30 minutes and use a very sharp chefs knife to thinly slice against the grain. Another option is an at-home meat slicer. If you are going to be making a ton of cheese steaks or plan to make Homemade Philly Cheese Steak sandwiches on the regular, this might be a good investment!

HOW TO MAKE PHILLY CHEESE STEAK SANDWICH

The most widely consumed cheese is mild provolone. A number of provolone brands were tested, and the only one that did not meet our expectations was Costcos aged provolone.

The flavor of the aged provolone cheese was overpowering. Another common option is white American cheese, which is similar to Swiss cheese. Some Philadelphia restaurants use a cheese that is similar to Velveeta, but we prefer provolone.
