Cheddar originally came from Cheddar, a village in the English county Somerset hence the name. According to The Guardian, ordinary village life led to the accidental discovery of the cheese. Sometime in the 12th century, a milkmaid had left a pail of milk in one of the caves of Cheddar Gorge. By the time she retrieved it, the milk had solidified somewhat. While the following eight centuries may have hyperbolized the event, The Independent explains that the caves do in fact help with cheese maturation. The humidity and temperatures stay at a perfect constant for the process. So, the people of the village began to store their cheese in the caves.

How To Store Fresh Cheese
When it comes to storing fresh cheeses, refrigeration is key. Many of these cheeses are sold in plastic containers filled with their natural liquid, and should be kept in the original packaging once opened. While the shelf life for each cheese varies slightly, fresh cheeses will generally last for seven to 10 days in the refrigerator.

Is Cheddar Real Cheese
Cheddar cheese, the most widely purchased and eaten cheese in the world is always made from cows milk. It is a hard and natural cheese that has a slightly crumbly texture if properly cured and if it is too young, the texture is smooth. However, some Cheddars may have a manually added yellow-orange colour.
How Cheddar Is Made
In all aspects, Cheddar boasts immense versatility, meaning that the process of making it has endured many adoptions and variations. Common to all, however, is the process known as Cheddaring, in which loaves of curd are stacked on top of one another, causing excess whey to drain off. It is during this continual layering that the cheese begins to develop its characteristic flavor and texture.
Depending on the type of Cheddar, aging will take a minimum of two months and up to two years for Castello Extra Mature Cheese. During this period, the texture goes from smooth to crumbly, while flavors take on notes of hazelnut, and sharpen in aftertaste.
With annatto as the only real additive, Cheddar is clean in flavor and contains no preservatives or fillers, making it gluten free. Young Cheddars are often pasteurized, while aged variants sometimes are unpasteurized to encourage salt crystals to form. Using either animal or vegetable rennet, the production of Cheddar allows for both vegetarian and non-vegetarian variants.

How To Pick The Best Cheddar Cheese
To our surprise, there is less variation in quality from cheddar to cheddar than we’ve seen in some other categories . Most supermarket cheddars have pretty comparable ingredient lists and nutrition facts, with only a handful of option we wouldn’t recommend.
The majority of the cheddars have 110 calories per 1 ounce, with about 9 grams of fat and 6 grams of saturated fat. The difference in ranking comes from the quality of actual ingredients, sodium content, as well as what the brands themselves are doing to give back to their communities, employees, or the environment.
- Look for a short ingredient list. A cheddar really only needs milk, cultures, enzymes, and salt. Some cheeses use annatto, a natural coloring made from plants, to turn the product orange. While not needed, it’s also not necessarily a problem ingredient.

Record Sized Cheddar Cheeses
White Househistorians assert that U.S. presidentAndrew Jackson held an open house party where a 1,400 pound block of cheddar cheese was served as refreshment this block of cheese would later serve as direct inspiration for two episodes of the Emmy-award winning television series The West Wing.
A cheese of 7,000 pounds was produced in Ingersoll, Ontario in 1866 and exhibited in Wikipedia:New York and Britain it was immortalised in the famous poem “Ode on the Mammoth Cheese Weighing over 7,000 Pounds” by James McIntyre, a Canadian poet.
In 1893, farmers from the town of Perth, Ontario produced The Mammoth Cheese, at a weight of 22,000 pounds for that year’s World’s Fair in Chicago. When placed on exhibit with the Canadian display, The Mammoth Cheese promptly crashed through the floor and had to be placed on reinforced concrete in the Agricultural Building. It was more written about than any other single exhibit at the fair, and received the bronze medal.
A still larger Wisconsin Cheddar cheese of 34,951 pounds was produced for the 1964 New York World’s Fair. It required the equivalent of the daily milk production of 16,000 cows.

Curdle The Milk And Cook The Curds
Curdling is what brings the cheesy texture we know and love to life. An enzyme called rennet is added to the milk mixture to curdle the protein naturally found in milk, separating solids from liquids. When the solid curds form, the watery whey left behind can be drained so only the curds remain.
The curds are then heated to an even higher temperature so they release excess whey and melt together, creating the first signs of cheese.
How To Store Hard/grating Cheese
“Aged, hard cheeses can last a long time in your fridge or cupboard. While other cheeses continue absorbing ambient aromas, these are heartier,” Antonelli shares. “You can just keep them in food storage containers.” According to the USDA, these cheeses do not require refrigeration for safety, but they will last longer if they are refrigerated. Blocks of hard cheese will last for six months unopened, and up to a month after being opened.

The Difference Between Sharp And Mild Cheddar
When it comes to cheddar cheese, the difference in taste comes down to aging. Mild cheddar cheese is generally aged 2 to 3 months, while sharp cheese ages up to a year. You will likely find several levels of cheddar cheese, and they all taste slightly to very different.
- Mild Cheddar: This cheese is aged for the shortest time and has a subtle, creamy taste. The texture is generally smooth and does not crumble easily. If you need cheese for melting, mild cheddar is an excellent choice.
- Medium Cheddar: This variety is aged a bit longer than mild cheddar. Therefore, it has more flavor. This medium cheese is also an excellent choice for melting and slicing.

- Extra-Sharp Cheddar: Aged the longest, this cheese has a bold, prominent taste. It is the sharpest cheddar and does not melt well. It crumbles easily. If you are looking for a cheese to eat without melting or slicing, extra-sharp cheddar is a good choice.

It’s A Big World Of Cheese Out There But This Is The Group Of Essential Cheeses You Should Really Know
We’re not cheese snobs. We’ve confessed to loving a couple classic mozzarellas, a burrata, and a melty American cheese amongst other such pedestrian choices. That said, there’s a time and a place for everything, and even though we might prefer a nice milky creamy ball of mozz on a day to day basis, where would our lives be if we couldn’t indulge in the occasional stinky cheese from a well-curated cheese plate?

Effect Of High Stocking Density
Stocking density refers to the number of animals within a specified area. When stocking density reaches high levels, the behavioural needs of the animals may not be met. This can negatively influence health, welfare and production performance.
The effect of overstocking in cows can have a negative effect on and rates which are two very important traits for dairy farmers. Overcrowding of cows in barns has been found to reduced feeding, resting and rumination. Although they consume the same amount of dry matter within the span of a day, they consume the food at a much more rapid rate, and this behaviour in cows can lead to further complications. The feeding behaviour of cows during their post-milking period is very important as it has been proven that the longer animals can eat after milking, the longer they will be standing up and therefore causing less contamination to the teat ends. This is necessary to reduce the risk of mastitis as infection has been shown to increase the chances of . Sufficient rest is important for dairy cows because it is during this period that their resting blood flow increases up to 50%, this is directly proportionate to milk production. Each additional hour of rest can be seen to translate to 2 to 3.5 more pounds of milk per cow daily. Stocking densities of anything over 120% have been shown to decrease the amount of time cows spend lying down.
What Makes Cheddar Cheese White
As mentioned, any cheddar cheese that does not have coloring added, whether due to annatto, paprika, or artificial food coloring, is white to pale yellow. The cheese may be white or yellow. It depends on the brand and region. For example, cheddar in Vermont or New England is typically white, while the cheddar in Wisconsin is usually a deeper yellow.
White cheddar cheese depends on the season and what the cows are eating. Cow’s milk can range from white to yellow, depending on what they eat and what farmers feed them. The grass cows graze on contains beta-carotene, imparting a yellow look to milk. When you make cheese, the milk affects the color. However, farms now give cows a more uniform diet, and uncolored cheddar is white. Modern white cheddar cheese does not taste different from yellow cheddar.

However, this means you should enjoy cheddar in moderation, not in excess. The dairy fats of cheese won’t harm you in small amounts, but you can certainly overdo it.
