For that reason, I recommend storing leftovers in an airtight container in the fridge for up to a day only. Do not freeze, as pasta and dairy dont freeze well.

The pasta wont spoil after a day. Its just that it will soak up the sauce and just wont taste as good. However, feel free to store it for between 4-5 days if you want.

Reheating: Its best to reheat the pasta gently on the stovetop with an extra splash of milk/broth to bring back the saucy consistency. Alternatively, you can use a microwave in 40-second increments .

A few downsides come with all that consumption, says Amy Keating, a registered dietitian at Consumer Reports: Cheese is an excellent source of protein and supplies calcium, but its easy to nibble on and the calories, saturated fat, and sodium can add up.

An ounce of cheddar, for example, supplies nearly 7 grams of protein and 200 mg of calciumthats 20 percent of your daily calcium need. But it also has 114 calories, 5 grams of saturated fat, and 185 mg of sodium. That can put you over your daily limit if youre mindlessly snacking on a cheese plate, Keating says. A good idea, Keating says, is to stick to 100 to 200 calories worth of cheese as a snack or at parties.

By now, so so many of you have the latest issue of Joy the Baker Magazine and it is my great hope that you have the mac and cheese page earmarked for Thanksgiving dinner. This is our family mac and cheese Ive adapted from my dad. I add a hint of chili powder for smokiness and pepper jack cheese for a little kick of spice. But heres the thing Thanksgiving is all about welcoming the whole fam-dam AND their dietary restrictions to the table. In our family, when were all together, we watch our sodium intake. We want to watch our sodium without sacrificing any of the flavor in the dishes we bring to the table so we always have Dash Seasoning in the kitchen.

Todays recipe offering is my familys creamy mac and cheese made with less sodium and loads of flavor using Dash Garlic & Herb Seasoning. Friends its SO GOOD: savory, full of flavor, bright and satisfying. Salt who? Lets spice things up without adding salt!

Low Sodium Stovetop Macaroni And Cheese

My favorite pre-Menieres mac and cheese is Alton Browns baked mac and cheese. The sauce has so much flavor and its not dry like most other baked mac and cheese recipes. But every time I tried to modify or recreate a low sodium version , I ended up with something very bland and very dry and still a bit higher in sodium than Id like . So I decided to convert to stove top methods. The pasta absorbs less of the sauce, so you dont need as much to get the same flavor and better yet, its fast and can be done in a single pot. I modified Melissa Clarks stovetop Mac and cheese recipe by adding a little water to the cream, some herbs and spices to the cheese mix, and topping with the toasted panko bread crumbs I love from Altons recipe. The result is 6 cups of creamy, cheesy, crunchy mac and cheese at just 43 mg of sodium per serving. Theres no flour or butter, it only takes 30 minutes from start to finish, and it reheats well.

Servings: Makes 6 cups

Sodium: 43 mg sodium per cup

Time: 30 minutes

Ingredients:8 ounces of dry small elbow macaroni

1/3 cup heavy cream

1 tsp dry ground mustard

1 tsp fresh thyme leaves

pinch of nutmeg

4 ounces Swiss cheese, shredded

For the topping:1/4 cup panko bread crumbs

pinch garlic powder

1 tablespoon oil or butter

But I think that this is about the lowest Mac and cheese you can make and still be the real thing while still being true to its name. So lets just call it low sodium compared to any other Mac and cheeses.
