How To Make Mac And Cheese Bites
Heres where the magic happens
You can pick any Mac & Cheese to start with. I used Kraft Mac & Cheese because its easy and cheesy! You can use any type though. Or, if you have a recipe to make it from scratch, totally go for it! Just be careful not to add too much milk.
To make the Mac & Cheese, bring water to a boil in medium saucepan. Then, add the macaroni and cook for 7 to 8 minutes, or until tender. Drain the pasta and let it dry out for a few minutes.
Return the macaroni to the pan and add the cheese packet, butter, milk, egg & 1 cup of cheddar cheese. Mix it well so that everything is combined.
Spray your mini muffin tin with non-stick cooking spray.
Using a spoon or a small cookie scooper, fill the muffin tins with the macaroni mixture.
Sprinkle each Mac & Cheese Bite with a little bit of grated cheese. This will help it get extra crispy!
Bake at 400 F for 15 minutes or until golden brown.
Let the bites cool off for about 5 minutes before removing them from the muffin tin to serve.

Béchamel is one of the mother sauces in the classic French system. Its made by cooking equal parts butter and flour until smooth and golden , then whisking in warm milk to make a smooth, creamy sauce. The thickness of a béchamel sauce is determined by the ratio of milk to butter and flour.
Step : Cook The Macaroni
- Place the macaroni onto a medium-sized saucepan and add just enough water to cover. Dont place too much water. By keeping it to a small volume of water, you allow the starch from the macaroni to be more concentrated, which will then help form a more creamy emulsion once you pour in the cheese
- Add a pinch of salt to speed up the water heating up then bring to boil over high heat. Stir the pan frequently to ensure no macaroni sticks to the bottom of the pan
- Continue to stir until the water has been almost completely absorbed. The macaroni itself will be a bit shy of al dente not soft but not tough. This takes between 6 to 8 minutes

Shred Your Own Cheese
I recommend using blocks of cheese that you shred yourself. I know, I know, but it makes a big difference. Pre-shredded cheese has starch on it to keep it from clumping and is dryer than actual blocks of whole cheese.
If you do end up using pre-shredded cheese in this recipe, you may need to add a little splash of whole milk. The added starch from pre-shredded cheese will thicken the recipe, so you may need something else to loosen it again. You will know at the end if you want to add a little milk to yours or not!
