There’s nothing quite like bacon jam. Let’s be realthis is the edible form of crack. It’s sweet and salty goodness comes from slowly rendering bacon and then cooking it down with brown sugar, caramelized onions, and red wine vinegar until a thick and chunky jam develops. Add some fresh ricotta, nutty parmesan, and crispy Brussels sprouts and you’ve got one serious bacon jam and ricotta sandwich on your hands.
The Secret Ingredient For The Best Grilled Cheese
My cheesemonger friend got me onto using mayonnaise instead of butter.
Its always spreadable, it gives you a fabulous golden-brown crust thats not as apt to burn as butter, and it offers just a little zip.
My favorite brands are Hellmanns/Best Foods and Dukes. I havent tried Miracle Whip , but I figure its too sweet to work well here. You can also make your own mayoits actually just as easy as making a grilled cheese!
Give mayonnaise a shot! Use the same amount as you would butter.
If you are 100 percent Team Butter, I understand. You can either butter the bread directly or melt a pat of butter in the pan. I prefer to butter the bread directly, but lets say your butter is straight from the fridge and rock-hard. In that case, melt it in the pan.

Choose A Cooking Method
When it comes to cooking your grilled cheese, you have three options.
- Stovetop: A standard skillet is the most straightforward and convenient method. Preheat a skillet over medium-low heat, then cook the assembled sandwich uncovered, flipping halfway through, until both sides are golden, about 3 to 4 minutes per side.
- Oven: Making grilled cheese for a crowd? Save yourself time and effort and simply cook sandwiches on a rimmed baking sheet in a 450-degree F oven. Cook, flipping halfway through, until the cheese is melty and the bread golden, about 10 minutes total.
- Panini Press: For a maximum crispy sear with minimal effort, try cooking grilled cheese in a panini press. Preheat a panini press to medium heat, place sandwich in press, close the top and cook until lightly browned and the cheese is melted, about 5 to 6 minutes.

How Much Cheese To Use
This is a very personal issue. Its possible to overdo it, but no one wants a skimpy grilled cheese, either. Theres plenty of space in the middle ground.
Two ounces of cheese per sandwich is a good rule of thumb, but a better rule of thumb is to eyeball it. Three ounces gives you a more decadent grilled cheese. Its your call!
Either way, grate as much cheese as you need to pile loosely on both slices of bread. A good, fluffy handful should do it.

Our Best Panini And Grilled Sandwich Recipes
Spread one french bread slice with pesto. Set aside. Butter the other slice of french bread. Place butter side down onto a heated skillet. Add cheese onto bread. Place other slice of bread with pesto on top . Press down the top of the sandwich with a heavy skillet until sandwich flattens like a panini.
Brush top and bottom of each sandwich with olive oil. Place in a panini grill and press until bread is crisp and brown, and cheese has melted slightly, 9 to 10 minutes. Challah or Brioche are also yummy! Just make sure the slices arent too thick so the cheese can still melt.
If youre getting a little more gourmet, rye and pumpernickel go great with some lighter cheeses such as havarti or gouda. Or go with Swiss and deli mustard for some Reuben vibes.
Sometimes I like to make grilled cheese with a sunflower seed or whole wheat to make my sandwich feel a bit healthier. But generally, there isnt an ideal bread for grilled cheese, it just comes down to what you like best!
