Helpful Tips For Making Homemade Ricotta Cheese
- Using buttermilk: Im pretty sure youre thinking, But I never have buttermilk in the fridge! I dont either but I have it in the freezer! I need a 1/2 cup of buttermilk once in a while to make some of my favorite recipes, so Ive taken the habit of freezing store-bought cultured buttermilk, so I always have it on hand. Simply store it in airtight containers in 1/2-cup or 1-cup quantities. It defrosts in the fridge overnight or at room temperature in about half an hour.Important note: When Im out of buttermilk, I like to make instant buttermilk by mixing a tablespoon of lemon juice in a cup of milk and letting it rest for 5 to 10 minutes. This type of buttermilk wont work for making ricotta. You need to use cultured buttermilk or use Aimées method to make your own 24-hour buttermilk .
- About the ricottas fat content: This recipe uses a cup of half-and-half cream , which enriches the texture and taste of the homemade ricotta cheese. If you prefer, you can make the recipe with 5 cups of whole milk and forgo the cream. The ricotta will be leaner but still better than any store-bought light ricotta cheese.
- Storing ricotta cheese and whey: Homemade ricotta cheese will keep in an airtight container in the fridge for up to four days. You can also freeze ricotta for up to six months. Make sure to keep the whey: you can use it in smoothies, soups, or any recipe that requires milk. The whey will keep in an airtight container in the fridge for up to two weeks.

Enjoy Dairy On The Side
Instead of eating or drinking dairy products by themselves, try having them with food that doesn’t contain lactose. For some people, combining dairy with other food may reduce or even get rid of their usual symptoms. So don’t just drink a glass of milk in the morning. I didnt know that it made no difference if I peeled them or not. I didnt know it would change neither the color nor the taste of the milk.
Fortunately, this time, peeling almonds was effortless.
Once soaked or blanched, you can remove the skin very easily.
The traditional ricotta recipe contains lemon juice. So I kept it in my dairy-free cheese version to make it tangy, which naturally results from the fermentation process. Then, since all cheeses are salty, I added a little salt too, and to give it taste, I added garlic.
In short, making this almond lactose-free ricotta is very simple.
Simply drain a mixture of creamy almond, previously processed in the food processor. Use a cheesecloth and apply a light pressure.

Make Better Cheese Choices
With lactose intolerance, you can still eat cheese, but choose carefully. Hard, aged cheeses like Swiss, parmesan, and cheddars are lower in lactose. Other low-lactose cheese options include cottage cheese or feta cheese made from goat or sheep’s milk. Certain types of cheeses — especially soft or creamy ones like ricottta and cream cheese — are higher in lactose. If you want to avoid dairy completely, try lactose-free and dairy-free cheeses.

How To Make Vegan Ricotta Cheese
I like to take the old-fashioned route and use a fork to mash the tofu. I find that with a blender you lose a bit of the ricotta-like texture and the cheese becomes a bit too smooth.
Also, I’m lazy and don’t want to wash the blender.
Then mix in the the rest of the ingredients – nutritional yeast, minced garlic, dried basil, a squeeze of lemon, salt and pepper.
If you find that the vegan ricotta is too thick, you can add 1-2 tablespoons of water to reach your desired consistency.
The nice thing about making homemade vegan ricotta, rather than store-bought, is that you can adjust the recipe to make it your own.
I use this as a base recipe and simply add various fresh herbs or seasonings to customize it for the type of dish I’m making.
You can try it with oregano, fresh cilantro, or even chili powder for a spicy Mexican enchilada.
This vegan ricotta has so many uses! Try it as a substitute for traditional ricotta in pasta dishes like lasagna or manicotti, stuff it into Italian calzones, or even serve it as a dip for fresh veggies or crackers.
