  • Sauté olive oil, apples, pecans and maple syrup in a small frypan until sizzling. Set aside.
  • In a small mixing bowl, combine grated cheese and cornstarch until cheese is well coated.
  • In a small saucepan, bring water and lemon juice to a boil. Reduce heat to low and add cheese mixture while stirring constantly with a fork. Continue to stir until all cheese is melted. The mixture should be bubbly and smooth.
  • Pour cheese mixture into a mini individual cast iron skillet and broil until the top is browned, about 2 minutes.
  • Remove from oven and top with apple/pecan mixture. Broil again until apple mixture starts to sizzle. Remove and serve immediately with your choice of crackers, chips, or bread.

    We recommend reheating this chili cheese dip just like you cooked it on the stovetop.

  • Transfer it back into a medium saucepan.
  • Turn the heat to medium/low and stir as the cheese melts.
  • Add a little bit of milk to thin things out.
  • Microwave Instructions: if youd like to reheat in the microwave, transfer the chili cheese dip into a microwave-safe bowl. Add a little milk and microwave on high for 60 seconds. Stir and continue microwaving until warm.

    Freezing Cheese Dip: because cheese has a difficult time with drastic temperature changes, we do NOT recommend freezing this chili cheese dip!

    Step one As always, measure out the ingredients. We like a good strong cheddar, but use your favourite cheese.

    You need grated cheese, cornflour, milk, and some garlic powder, as well as turmeric and tomato puree for colour.

    Step two Mix together the grated cheese and cornflour, until the cheese is well coated. I find the easiest way to do this is to tip it into a plastic box and give it a good shake.

    Step three Add all the ingredients to a saucepan. Heat gently for a couple of minutes, stirring constantly.

    Step four The cheese will melt into the milk. Keep stirring!

    Step five When the dip has thickened, serve immediately. If you want to make it in advance, you can set it aside and then reheat in the microwave for 30 seconds on half power.

    Start With Your Flavour Base:

    Sauté green onions: white parts only for a deeper flavour, reserving the green parts of the onion to stir through right at the end. 1 bunch of green onions is the perfect amount, then add fresh garlic.

    Add tomatoes: use finely diced Roma, cherry or grape tomatoes for a sweeter flavour. Make sure you throw in those tomato juices as well!

    Spices: We use fire roasted green chiles to get that smoky flavour through the dip, but you can use pickled jalapeños OR fresh chiles. The choice is yours! Ground cumin, onion powder and cayenne pepper add to the flavour profile but can be substituted for whatever you have on hand, or omitted completely.

    Make your dip is mild or as hot as you like by adding more cayenne or throw in some red chili powder or hot sauce. The beauty of our queso dip is how forgiving it is!

    How To Make Cheese Dip In The Microwave

    • I use a 4-cup Pyrex measuring cup to make this cheese dip, but any microwave-safe bowl that holds at least three cups will work. I like to toss the cheese with the cornstarch in the container until the starch is evenly coating the cheese.
    • Pour the evaporated milk over the cheese
    • I like to add some canned diced tomatoes with green chile , but its optional. If you use it be sure to drain of any excess liquid before adding it to the cheese.
    • Place the bowl in the microwave and cook it for one minute. Stop and stir the dip and cook it again for 30 seconds and stir. Continue cooking it in 30-second increments, stopping and stirring each time, until the dip is smooth and creamy.
    • The dip will thicken as it stands.

    This is a quick 15-minute cheesy treat add some chips, guacamole, and a margarita and Monday night will feel a whole lot better.

    Grate the cheese, then make the roux a butter-flour blend that thickens the sauce.
