Chili Cheese Dip Recipe!!! – How to make Quick and Easy Chili Cheese Dip

Were SERIOUS! This chili cheese dip is super creamy and flavorful, and made with just FOUR ingredients on the stovetop. Whip up a batch in 15 minutes flat

Whether youre making this for the next game day, or just serving as a fun appetizer or side for the fam, this chili cheese dip recipe will not disappoint!

How Do You Make A Smooth Cheese Sauce

To get the smoothest cheese sauce possible, follow these golden rules:

  • Use full-fat cheese that you grate yourself as bagged cheese has additives that can prevent it from melting smoothly.
  • Let the shredded cheese sit at room temperature for a short time so youre not putting cold cheese into hot liquid.
  • Remove the sauce from heat before you stir in the cheese. Overheated cheese can clump.

Fresh Fruit Tray Ideas

This fresh fruit dip is smooth and creamy with a hint of citrus. It complements the flavor of every kind of fruit. These are some of our favorite fruits to use with this dip. Fresh fruit, in season and bought locally, is always the best. Even the best fruit dip cant compensate for fruit that isnt ripe. You can choose just one fruit to serve it with, or you can fill a tray with lots of different kind of fruit, kind of like a fruit charcuterie board!

How To Store And Reheat Cheese Sauce

Cheese sauce can last up to 4 days in the fridge and 4 months in the freezer, granted no one double dips. You can portion out your cheese dip to avoid bacterial growth while its being stored. Place them in airtight containers and youre good to go. You can reheat them in a skillet until the cheese is fully warm and melted or pop them in the microwave for 20 seconds. If your cheese dip appears too thick, stir in a little milk for a smoother consistency.

I find colby jack perfect in this recipe, but if you wanted to use another cheese you totally could.

Or, if you like spicy sauce, double the paprika in this recipe for a spicy nacho cheese or use pepper jack cheese.

I definitely plan on making a white cheese/queso blanco sauce based on this recipe in the future.

Heres my favorite way to serve it: drizzled oh so generously over my 30 minute sweet potato refried bean nachos.

The History Of Blue Cheese

Legend has it that it came about by accident sometime around 600AD. Roquefort was said to be the first. The story goes that a scatter-brained shepherd boy fell asleep in a cave in rural France, when he awoke he returned to his duties, forgetting his lunch.

Days later, he discovered that the Roquefort had grown a blue mold. As well as being a forgetful shepherd, he was also very curious and somewhat greedy. So he munched down the mouldy Roquefort sandwich and was pleasantly surprised by the taste.

From sleepy shepherd boys to kings and noblemen, it soon became a delicacy. By the 11th century, it had a special production process. Over the years, different types, from Stilton to Danablu, would crop up all over the world.

  • Sauté olive oil, apples, pecans and maple syrup in a small frypan until sizzling. Set aside.
  • In a small mixing bowl, combine grated cheese and cornstarch until cheese is well coated.
  • In a small saucepan, bring water and lemon juice to a boil. Reduce heat to low and add cheese mixture while stirring constantly with a fork. Continue to stir until all cheese is melted. The mixture should be bubbly and smooth.
  • Pour cheese mixture into a mini individual cast iron skillet and broil until the top is browned, about 2 minutes.
  • Remove from oven and top with apple/pecan mixture. Broil again until apple mixture starts to sizzle. Remove and serve immediately with your choice of crackers, chips, or bread.

How To Reheat Chili Cheese Dip

We recommend reheating this chili cheese dip just like you cooked it on the stovetop.

  • Transfer it back into a medium saucepan.
  • Turn the heat to medium/low and stir as the cheese melts.
  • Add a little bit of milk to thin things out.
  • Microwave Instructions: if youd like to reheat in the microwave, transfer the chili cheese dip into a microwave-safe bowl. Add a little milk and microwave on high for 60 seconds. Stir and continue microwaving until warm.

Freezing Cheese Dip: because cheese has a difficult time with drastic temperature changes, we do NOT recommend freezing this chili cheese dip!

Step one As always, measure out the ingredients. We like a good strong cheddar, but use your favourite cheese.

You need grated cheese, cornflour, milk, and some garlic powder, as well as turmeric and tomato puree for colour.

Step two Mix together the grated cheese and cornflour, until the cheese is well coated. I find the easiest way to do this is to tip it into a plastic box and give it a good shake.

Step three Add all the ingredients to a saucepan. Heat gently for a couple of minutes, stirring constantly.

Step four The cheese will melt into the milk. Keep stirring!

Step five When the dip has thickened, serve immediately. If you want to make it in advance, you can set it aside and then reheat in the microwave for 30 seconds on half power.

    Start With Your Flavour Base:

Sauté green onions: white parts only for a deeper flavour, reserving the green parts of the onion to stir through right at the end. 1 bunch of green onions is the perfect amount, then add fresh garlic.

Add tomatoes: use finely diced Roma, cherry or grape tomatoes for a sweeter flavour. Make sure you throw in those tomato juices as well!

Spices: We use fire roasted green chiles to get that smoky flavour through the dip, but you can use pickled jalapeños OR fresh chiles. The choice is yours! Ground cumin, onion powder and cayenne pepper add to the flavour profile but can be substituted for whatever you have on hand, or omitted completely.

Make your dip is mild or as hot as you like by adding more cayenne or throw in some red chili powder or hot sauce. The beauty of our queso dip is how forgiving it is!

How To Make Cheese Dip In The Microwave

    • I use a 4-cup Pyrex measuring cup to make this cheese dip, but any microwave-safe bowl that holds at least three cups will work. I like to toss the cheese with the cornstarch in the container until the starch is evenly coating the cheese.
    • Pour the evaporated milk over the cheese
    • I like to add some canned diced tomatoes with green chile , but its optional. If you use it be sure to drain of any excess liquid before adding it to the cheese.
    • Place the bowl in the microwave and cook it for one minute. Stop and stir the dip and cook it again for 30 seconds and stir. Continue cooking it in 30-second increments, stopping and stirring each time, until the dip is smooth and creamy.
    • The dip will thicken as it stands.

This is a quick 15-minute cheesy treat add some chips, guacamole, and a margarita and Monday night will feel a whole lot better.

    Happy cheese-dipping!

    How To Make Cheese Sauce:

Gather all the ingredients ahead of time because the sauce comes together really quickly. If youre using it over Air Fryer Roasted Broccoli, you can make this cheese sauce in less time than it takes to air fry the broccoli .

Grate the cheese, then make the roux a butter-flour blend that thickens the sauce.

In a medium saucepan, melt the butter over medium to medium-low heat, then sprinkle the flour over the top and whisk until smooth.

Pour in the milk and season with salt then continue whisking constantly until the milk and flour mixture are combined. Increase the heat, bring to a full boil then reduce the heat and simmer until the white sauce thickens.

Remove the pan from the heat then slowly add the cheese, gently stirring until its melted and the sauce is smooth and silky.

Taste and adjust salt as you like then eat right away. If your sauce is too thick, add a splash of milk and stir.

How To Make Chili Cheese Dip:

    On the Stovetop:

    1. Combine ingredients in saucepan. Place all ingredients in a medium saucepan over medium-low heat.

    2. Cook, stirring constantly, until all ingredients are thoroughly combined and the cheese is bubbly, about 6-8 minutes. Add more milk to thin the mixture, if necessary.

    3. Serve.

    For Crockpot Chili Cheese Dip:

  • Layer in slow cooker. Spray the bottom of your slow cooker with non-stick cooking spray . Place cream cheese cubes in the slow cooker. Smoother them with chili, then salsa, then the cheddar cheese.
  • Cook on LOW for 1-3 hours.
  • Stir and serve.
  • Why Isn’t My Cheese Sauce Smooth

One reason may be that the rouxthe melted butter and flour mix that thickens the white saucemight be overcooked or burnt. The recipe’s recommended heat and cook times should prevent that. It’s also important to add the dairy slowly and stir constantly while doing so. The cheese may be a factor as well. Freshly shredded cheese works better than packaged shredded cheese. When adding it, the heat should be low to avoid breaking the cheese, which will cause a grainy sauce. Try adding half of the cheese and stir that in until it melts, then add the rest. You can also remove the pan from the heat during that step, heating it only if needed to aid melting.

Cold cheese dips, on the other hand, are best made up in a food processor or with a hand mixer. Some dips may need to be cooked first and then cooled, depending on the types of cheese and mix-ins used. In those cases, cover the cheese dip and refrigerate at least a couple of hours before serving.
