Dr. Anthony Blake, director of food science and technology at a global flavor and fragrance company, notes that citric acid in lemon juice is considerably more powerful than tartaric acid in preventing calcium phosphate from binding cheese proteins together and causing stringiness. Even in the most extreme instance of mozzarella, stringiness can be eliminated by the way that citrus acid binds to calcium.

My favorite fettuccine recipe now includes a mozzarella, prosciutto, mushroom, and tomato sauce. Before adding the grated mozzarella to the cream sauce , try putting a little lemon juice on it. Stir the mixture while it is simmering. Youll be amazed at how stringiness is avoided.

What Makes Cheese Stretchy When Melted

Arrangement of calcium, casein, and other important atoms can be achieved through the use of glue. Cheese does away with its calcium-adhesive layer and takes on its casein-dissolving component when it is heated. So what makes it stretchy and gooey. Tapioca! Who knew right? It’s the main ingredient in Daiya, a well-known brand of vegan cheese, and I found that Somer McCowan from the blog Vedged Out also used tapioca starch in her Fresh Moxarella Cheese. She is one smart cookie, er.. well some smart cheese, because she knew what was up. Pour it in a small sauce pan, and heat over medium-high heat. Stir to keep anything from burning. You will start to see clumps forming.

Then all of a sudden, magic! Everything comes together and makes this cheesy, melty, deliciousness. Keep stirring and cooking for another minute or two, to make sure it’s finished firming up. It should take about 5 minutes to cook total. That’s it! Done. So easy.

If you want to save it for later, store in an air tight container in the fridge. It won’t firm up like a hard cheese, it will stay pretty soft, but let’s get real, who needs hard mozzarella anyways?

Serve as a dip, spread onto some toast, dollop onto pizza, do whatever your creative cooking spirit tells you. Don’t worry if you eat it all in one sitting , you can always make more.

How To Make Queso Cheese Dip:

Start by making a roux in your skillet. You can do this by mixing melted butter with tapioca starch until its evenly combined.

Next, youll add milk and stir it until its fully incorporated. You may need to let it simmer for a minute or so until it thickens and looks like the picture below.

You’ll only need a blender, a saucepan, and a stove to make this Vegan Nut-free Mozzarella Cheeze. After blending, you’ll be cooking it on the stove top for just a few minutes, stirring constantly.

The cheeze will be a sauce at first, then will start to curdle and clump–this is normal. After a few minutes it will come together as a gooey, stretchy, melty cheeze that can be used in any way you like.
