Some Cheeses Get Stringy
Another issue with using cheese in cooking is that it can get stringy when added to soups or sauces. According to Dr. Norman Olson of the University of Wisconsin, some cheese, especially Swiss and mozzarella, contain calcium phosphate, a substance that has a tendency to tie cheese proteins together into lengthy chains. These cheeses stringy nature makes them difficult to handle and nearly impossible to stir or serve, even when heated gently.
Dr. Anthony Blake, director of food science and technology at a global flavor and fragrance company, notes that citric acid in lemon juice is considerably more powerful than tartaric acid in preventing calcium phosphate from binding cheese proteins together and causing stringiness. Even in the most extreme instance of mozzarella, stringiness can be eliminated by the way that citrus acid binds to calcium.
My favorite fettuccine recipe now includes a mozzarella, prosciutto, mushroom, and tomato sauce. Before adding the grated mozzarella to the cream sauce , try putting a little lemon juice on it. Stir the mixture while it is simmering. Youll be amazed at how stringiness is avoided.
What Makes Cheese Stretchy When Melted
Arrangement of calcium, casein, and other important atoms can be achieved through the use of glue. Cheese does away with its calcium-adhesive layer and takes on its casein-dissolving component when it is heated. Fresh unaged cheese has large molecules of casein that are stretchy, so they tend to tangle with ropes as it becomes stringy when melted.
Melty Stretchy Gooey Vegan Mozzarella
This is my love language.
Ooey, gooey, stretchy, melty, where have you been all my life- vegan mozzarella. I’m pretty sure I just made all my vegan dreams come true. I made this recipe four times this week, FOUR. That’s how amazing this is. Just dip some tortilla chips in this bad boy and welcome to heaven.
You can also use this anywhere you would like a melty mozzarella experience, which is, um, everywhere! Let’s see… pizza, lasagna, grilled cheese, dips, the possibilities of deliciousness are endless.
I haven’t even gotten to some of the best news yet. This takes only 7 ingredients, one of them being water. It takes only 15 minutes to make, AND it doesn’t even have any oils or “bad stuff”. Can you tell I’m excited? I’m SO excited.
So what makes it stretchy and gooey. Tapioca! Who knew right? It’s the main ingredient in Daiya, a well-known brand of vegan cheese, and I found that Somer McCowan from the blog Vedged Out also used tapioca starch in her Fresh Moxarella Cheese. She is one smart cookie, er.. well some smart cheese, because she knew what was up. I adapted her original recipe to make a mozzarella that suited my own taste buds but be sure to try her original recipe and check out her blog. So many delicious vegan recipes to be had!
This recipe will stay in a melty stretchy state, even when cold, but if you are looking for a grate-able cheese, try my recipe for The Best Vegan Mozzarella.

How To Brown Vegan Mozzarella In The Oven:
Ive discovered something new lately about this cheese. It will totally brown and bubble in the oven, like real mozzarella would! Simply spray the cheese with a little oil , and broil for 5-10 minutes in the oven. I spread some cheese on sourdough bread and broiled it, and wow, it was incredible cheesy bread. I think this would work on top of casseroles , pizza and more.
A Little Starch Can Rescue A Sauce
Starch can stop curdling in some foods that require prolonged heating, including potato gratin or baked cheese casseroles. Before adding the cheese, start the procedure by adding a little flour or cornstarch to a roux or slurry. It is unknown exactly how starch stops proteins from curdling. It could be as simple as the heated starch granules being big enough to physically separate proteins when they soak up liquid and swell. Regardless of the science, we are aware from personal experience that the starches in flour, cornstarch, potato starch, and tapioca may keep cheese sauces smooth and allow us to cook them without concern.
How To Serve Cashew Mozzarella Cheese
Now comes the best part- eating this melty stretchy vegan cheese! Since this cheese will is stretchy and softer, it’s not going to be a good option for a cheese board or a dish like a Caprese salad.
Instead, this cheese works great in the following recipes:
- Making a simple grilled cheese with two slices of sourdough bread filled with layers of the melty cheese .
- On top of my favorite Vegan French Onion Soup
- This recipe also makes the best vegan mozzarella for pizza. If you’re looking for a crust recipe, check out my Vegan Garlic Herb Dough which is my personal favorite.
- Mix up this gooey vegan mozzarella with pasta for a decadent vegan mac and cheese sauce.
- Add it to my Vegan Baked Lentil Ziti. When combined with tofu ricotta, it makes the absolute best cheesy dish.
PS- if you decide to broil the cheese, it will brown and form a crust on top just like real cheese. How cool is that?!

To Make Melty Stretchy Gooey Vegan Mozzarella:
To make Melty Stretchy Gooey Vegan Mozzarella: Boil the cashews for 10 minutes until softened. Then toss into the blender with the remaining ingredients, and blend until completely smooth. It will be very watery, don’t worry, it will get cheesy!
Pour it in a small sauce pan, and heat over medium-high heat. Stir to keep anything from burning. You will start to see clumps forming.
Then all of a sudden, magic! Everything comes together and makes this cheesy, melty, deliciousness. Keep stirring and cooking for another minute or two, to make sure it’s finished firming up. It should take about 5 minutes to cook total. That’s it! Done. So easy.
If you want to save it for later, store in an air tight container in the fridge. It won’t firm up like a hard cheese, it will stay pretty soft, but let’s get real, who needs hard mozzarella anyways?
Serve as a dip, spread onto some toast, dollop onto pizza, do whatever your creative cooking spirit tells you. Don’t worry if you eat it all in one sitting , you can always make more.

How Do I Store Vegan Mozzarella
Vegan Mozzarella can be stored in a closed container in the fridge for 3-4 days. It will solidify a bit but still works great in any of the recipes mentioned above. Just expect the cheese to lose some of that stretchy texture if not used right away.
I’ve never tried freezing this plant-based mozzarella cheese . However, I don’t recommend it as it will likely change the texture too much.
Can You Reheat Cheddar Cheese Sauce
Reheating cheese sauce can seem like a daunting taskall that solidified dairy, seemingly immovable. But wait, it can be done. The best way to do it, is not in the microwave, but on the stovetop. Slowly reheating over low heat, and stirring frequently, is the best way to ensure a smooth sauce on the second day.

But Also Add A Dry Buffer If Necessary
If youre worried the cheese might go from moist to watery because of other adjacent ingredients, like tomato sauce, you can put a dry layer between the wet ingredient and your cheese. Our chef rockstars used olives and pepperoncini to make sure the cheese didnt become sauce saturated. Just be sure to pat dry any veggies you decide to incorporate.
How Can Cheese Be Melted To Make It Creamy
Many of our favorite recipes, from delicate cheese souffls to fondues and hearty casseroles, rely on cheese for flavor, texture, richness, and nutrients. Melted cheese can be creamy, smooth, and completely incorporated into the rest of the meal when handled correctly. But occasionally, even a dish as straightforward as macaroni and cheese may go wrong, leaving you with stringy mess or tight curds on top of an oily puddle. Curdling and stringiness are two risks that can be readily avoided with the appropriate method or by making a small adjustment to your recipe.

I think the simple solution is more plain milk or water in your recipe. Might back off a tablespoon of the flour too, which just thickens it to glop. What Tools Do I Need
You’ll only need a blender, a saucepan, and a stove to make this Vegan Nut-free Mozzarella Cheeze. After blending, you’ll be cooking it on the stove top for just a few minutes, stirring constantly.
The cheeze will be a sauce at first, then will start to curdle and clump–this is normal. After a few minutes it will come together as a gooey, stretchy, melty cheeze that can be used in any way you like.
When using this sauce, it can be a bit troublesome to work with. I recommend using two spoons or small spatulas to “scoop” a dollop out and drop or spread it onto the intended dish. It can be further baked or broiled and the top will turn a lovely golden brown color and crisp up just like real cheese.

Next Cut The Curds Into A Grid And Heat
Its best to create a grid pattern through the curds, first slicing one way, then the other. Make sure to cut deep into the cuts, by touching the bottom of the pot.
Then, heat the curds over medium heat and stir very slowly but continuously. Try not to break the curds too much. They only need to reach 41ºC/106ºF, so they will warm up quite quickly .
Remove the pot from the heat as soon as the required temperature is reached. Continue to stir, slowly, for another 5 minutes. During this time, the curds will begin to separate from the whey.
Cheese Can Curdle When Proteins Get Overheated
Foods high in protein include cheese, which contains up to 36% protein in Parmesan and 30% protein in Gruyre. In any food, a protein molecule is typically tightly wrapped, like a spring. The protein unwinds when heated because the bonds holding the coil together fall apart. The unraveled protein is now eager to join forces with other unraveled proteins to create a loose web. Coagulation is the name given to this bonding process. The mesh will tighten and the proteins will continue to coagulate into clumps or curds if the proteins are overheated. There are still some uncoagulated and weakly coagulated milk proteins in cheese that can tighten to form curds despite the fact that many milk proteins in cheese were coagulated during the cheese-making process.
This curdling can easily happen when grated cheese is added to boiling liquid or when making a cheese casserole. The fat and other cheese constituents separate from the curdled proteins, resulting in an ugly mixture of rubbery curds and an oily puddle from your silky sauce.

Why Does My Mac And Cheese Sauce Break
Causes of Curdled Cheese SauceThe cheese itself may be the cause, assuming it’s also made from dairy. The proteins and water in the cheese will separate if exposed to high temperatures. The oil in cheese may also separate when it’s melted, causing the sauce to appear broken instead of smooth…. continue reading
