    If you have never been to NYC and had a chopped cheese though, you may have no idea what a chopped cheese is or why you even may want to consider it, but trust us you definitely want to try this.

    A chopped cheese sandwich, sometimes also called a chop cheese, is a sandwich that can be found in bodegas throughout most of the boroughs. It is made on a hot grill with beef, onions, and cheese, then served with lettuce, tomatoes and your favorite condiments on a roll.

    Making Mac And Cheese Ahead Of Time

    • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
    • Before baking, let dish sit on counter for 30 minutes.
    • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

    As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

    I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

    Baked macaroni and cheese doesnt have to be complicated with layers of ingredients to be the soul-warming food you crave. This homemade baked macaroni and cheese is my most favorite and has pleased crowds, small families, kids and picky eaters alikegive it a try and youll see why.

    Sometimes you buy that glowing yellow macaroni in the box. Your kids like it, but it glows like the kryptonite they used in the old Christoper Reeve Superman movies.

    Thats not normal people.

    And I hate to break it to you, but theres nothing real in that box either.

    I hate feeding it to my kids and I dare say that you hate it too. But I can also guess you dont know many other alternatives. Sure, you can get a box of Velveeta and melt that over some noodles. That works too, but that stuff doesnt even need to be refrigerated. Its mystery cheese.

    So if youre looking for the real deal, the old school baked macaroni and cheese the way your grandma might have made itthis is it.

    And just so you know, aside from the baking, this easy macaroni and cheese took 15 minutes and only two pans to make. One for boiling the pasta and a good enameled cast iron pan for the sauce and the baking cuts down on dishes. So yes, even you can make this on a week night.

    CROCKPOT MAC AND CHEESE RECIPE

    Here it is the recipe youve been asking for! Youve LOVED, and continue to love, my Baked Mac and Cheese recipe some of you have even won awards in cooking competitions using that recipe. But we all love a great slow cooker recipe, and Ive been busy developing the PERFECT crock pot mac and cheese recipe. One that yields an ultra creamy sauce, doesnt get too thick, and one that tastes every bit as delicious as the OG baked mac and cheese.

    Variations Of Mac And Cheese

    • Bacon if you love bacon, feel free to add some crispy, crumbled bacon to the topping, or even inside the mac and cheese as well!
    • Stovetop if youd prefer not to bake this mac and cheese, you dont have to! Make sure you boil your pasta until al dente , and youll only need about 3 3 1/2 cups of cheese total. No need to layer the pasta and cheese, just add all the cheese to the sauce, then combine with the pasta.
    • Different Toppings Im a huge fan of the cheese layer on top, since it gets nice and crispy, but we also love tossing 1 cup of panko with 2 Tbsp of melted butter and using that as a topping. 1 cup of crushed Ritz crackers with 2 Tbsp of butter work amazingly well too!
    • Different Baking Times the recipe calls for a lower baking temperature and time, but most of the time I find myself adjusting that based on my familys tastes. I like to bake this mac and cheese at 350 F degrees for 30 minutes, then broil for 2-3 minutes to get that glorious cheesy crust.

    I should probably say right now that this recipe is the real deal. Because on the special occasions when I indulge in creamy mac and cheese, Im not interested in healthy shortcuts. Gimme all the carbs + all the cheese, please. ?

    Lets talk about this delicious recipe thats ready to go in about 20 minutes from start to finish and only requires one pot.

    For most of my homemade mac and cheese making life, Ive always done the two-pot method one for cooking the pasta, and one for making the cheesy sauce which totally works! But dishes have always been the bane of my existence. AND when I started posting on Instagram about my macaroni and cheese recipe experimenting this month, I heard from many of you who recommended the one-pot method. Because apparently cooking the pasta in the sauce itself releases all of those starches into the saucewhich makes it extra creamyand also helps bind the sauce to the pasta even better. Also, the entire process only takes about 15 minutes to cook. And also, no need to wash the extra pan.

    Sounded like a win-win-winwinwin to me.

    Sure enough, after testing a few batches, Im now a total convert to the one-pot camp. Works like a cheesy charm! ?

    Also, if you want an even creamier mac and cheese, youre welcome to use half cheddar, and half gouda or fontina . But 99% of the time, I keep things simple with straight cheddar and never regret it.

    Mac and Cheese is worthy of serving as a meal in its own right, served with just a fresh green salad or simple vegetable side. Nothing heavy because Macaroni Cheese is so rich as it is!

    As a side dish, it will compliment virtually any non-Asian main dish. From simple Baked Pork Chops to Steak, a Roast Chicken to Crispy Garlic Chicken Thighs, the only things I probably would not serve with Mac and Cheese would be very light summery mains such as a Tuna Tartare just a little too much contrast.

    Store It In The Refrigerator:

    To make ahead and serve later, ensure that your pasta isnt overcooked. Err on the side of a little firm rather than too soft, as it will continue to absorb some of the sauce in the fridge.

    Store up to 4 days in the refrigerator, tightly covered.

    To reheat, add a big splash of water, milk or broth and place, covered, over low heat on the stove. Stir occasionally. If it is still thick and not saucy and creamy, add in another splash of liquid.

    Add Liquid To Make A Sauce

    After cooking roux, you’ll usually add a liquid ingredient to make a sauce .

    To ensure lump-free thickening when making sauces, the liquid ingredient should be cold or room temperature, and slowly whisked into the hot roux. Do this by adding the liquid a little at a time, whisking until smooth between each addition, until the roux forms a thin paste, then whisking in the remaining liquid and bringing the mixture to a simmer. Cold or room temperature roux is simply whisked into a simmering soup or sauce until it dissolves. These methods ensure the roux is incorporated slowly and the mixture will not form lumps.

    Roux begins to thicken soon after it is combined with a liquid, but it must be simmered for 10 to 20 minutes in order to reach its full flavor and thickening potential. This additional cooking time allows the flour to soften and absorb the liquid, resulting in a silky smooth soup or sauce. If the simmering time is too short, the flour in the roux will remain grainy.

    How To Freeze Mac And Cheese:

    If you know you want to freeze your mac and cheese, make sure that you quit cooking while your pasta is still slightly firm a couple minutes before you would want to eat it.

    Let cool slightly before covering tightly and placing in the freezer for up to 3 months.

    To serve, I recommend thawing at room temperature for several hours or in the refrigerator overnight.

    Then you can add a big splash of water, broth or milk, and reheat in the oven or on the stove top until heated through. Stir at least a couple times once the pasta starts to warm up.

    And stir together until its all melted. Go ahead and turn off the heat.

    Now its time for seasoning! Add about 1/2 teaspoon salt, 1/2 teaspoon seasoned salt If youre sensitive to salt, start really low and work your way upand remember that the cheese imparts quite a bit of salt to the mix.

    BUTand this is importantbe careful not to UNDERSALT the mac & cheese. It really needs ample salt to put the flavor over the top.

    *I also use paprika, cayenne pepper, even ground thyme every now and then. Play with different ground spices and see what you like best.

    And finally, add plenty of black pepper, of the Black Dust variety. Honestly, I love freshly ground pepperbut not in homemade Mac & Cheese. For me, it has to be the powdery stuff.

    Now THATs what Im talkin about.

    And guess what? You can just steam some fresh broccoli and spoon some of this over the top. Kids from all over the land will show up at your doorstep.

    Did you know a single serving of broccoli is positively loaded with Vitamin C?

    Now just dump in the drained, not-fully-cooked macaroni!

    And stir the mixture together.

    I use a little less than the full amount of cooked macaroni, because I love it extra creamy and coated. Just add it according to how you like it.

    Now, you can either dish it up as it is right now, which makes for an ultra-creamy love fest

    OR you can pour the macaroni into a buttered baking dish. This is a 2-quart dish, but a 9 x 13 pan would work just fine.

    Southern Baked Mac & Cheese

    There are three major takeaways from Millie Peartree’s famous baked mac & cheese.

  • Make sure your pasta is super al dente. Boil it for too long and your baked macaroni will be mushy.
  • Layer it like a lasagna! Millie puts an entire layer of pure cheese in between two layers of macaroni. Game. Changer.
  • Make a custard. Whisking together eggs and milk and pouring it over the mac & cheese will make it extra creamy, saucy, and decadent.

    Salt and pepper, to taste

  • Preheat oven to 350° and butter a large, deep baking dish. In a large pot of boiling salted water, cook macaroni according to package instructions until just al dente. Drain and set aside.
  • In a large bowl, combine cooked pasta and butter and season with salt and pepper to taste. Stir in 2 cups cheddar cheese.
  • Add half of the macaroni mixture to prepared baking dish. Sprinkle Colby-cheddar cheese blend over pasta mixture, then top with another layer of pasta .
  • In a medium bowl, beat together eggs and milk then pour evenly over pasta.
  • Cover baking dish with aluminum foil and bake for 25 to 35 minutes. Do not overbake! It may be a bit jiggly when you take it out of the oven.
  • Turn on oven broiler. Top with the remaining cheddar cheese. and broil until golden! It will firm up as it cool.
  • If you dont like sharp cheese please feel free to use mild or any other cheese you like
