    • Butter Dont skip the butter and make sure to use a high quality butter not margarine for this recipe. I prefer Land O Lakes butter but any 100% butter will work great in this recipe.
    • Green Chiles I use the canned ones and they work awesome. You can use fresh diced fresh green chiles as well if any are available in your area.
    • Cumin Dont skip the cumin in this recipe. Its add the perfect flavor to this dip recipe that you will miss!
    • Garlic Salt Garlic powder would work as well. If you use garlic powder, I recommend using ¼ of the total amount.
    • Cayenne pepper I just use a pinch and this recipe and it adds a little zip. You can use more or less depending on how spicy you enjoy your dip recipe!

    For the cream cheese: Cream cheese is a major player in this recipe in terms of the flavor and consistency it adds. I recommend Philadelphia cream cheese and definitely recommend sticking with the full fat version!

    For the cheese: I use pepperjack and sharp cheddar cheese. I beg you to avoid buying pre-shredded cheese at the store. I know its convenient but, especially when your melting cheese, pre-shredded cheese is NOT the way to go. Block cheese melts much smoother and tastes SO much better!

  • Brown meat and drain.
  • Add Rotel tomatoes and cheese to the same pan.
  • Stir until melted.
  • Remember, do not drain the Rotel, as the juices provide the right consistency. We do sometimes add two cans of Rotel! Of course, like most recipes, you can add in your own favorites or change the flavors/additions based on what you have on hand.

    • You can certainly make Rotel Dip without meat but we absolutely love making this dip hearty with the addition of ground beef or sausage.
    • Brown the meat and drain any fat. Once drained, add your Rotel tomatoes and cheese. Stir it all in the same pan until melted.

  • If youd perfect to skip the processed cheese loaf you can certainly make this dip with cream cheese instead. Simply replace the processed cheese with an 8oz package of cream cheese.
  • If using cream cheese, I also like to add in a handful of sharp cheddar cheese.
  • Regardless of the type of cheese, this recipe can be thinned out with a bit of milk if youd like a thinner consistency.
