    Why do I say “the good stuff?” Because I want to differentiate fresh mozzarella from the mass-produced part-skim and fat-free cheeses that tempt healthy cooks. First, let me clarify. I often use part-skim mozzarella in sauces, baked toppings and casseroles because it shreds and melts easily, blends well with other ingredients and using fresh would be a waste of a fabulous ingredient. I never use fat-free because its flavorless and doesnt melt correctly.

    I use fresh mozzarella when I want to experience the smooth, velvety cheese in all its glory, embellished very simply with fresh fruits, vegetables and herbs.     We will call it low sodium for a once in a while, comparative sense. While it may be lower sodium for a Mac and cheese, you will more than likely still be pairing it with another main meal entree. In the end that could potentially put you over your sodium per meal goal.

    Unfortunately the main ingredient besides the pasta is cheese. And most cheese is just not our friend in a low sodium diet world.

    Mac and cheese has never been a side dish Ive eaten very often. I would mainly have it when at a cookout or around a holiday. But when I do, I like it a little saucier rather than just a clump of dry, sticky cheese covered noodles.     Low Carb Mozzarella Stuffed Meatballs Recipe

    Ingredients:

    • 2 pounds of lean ground beef. 1 small onion, diced
    • 2 cloves garlic, pressed
    • 1/3 of a red or green bell pepper, diced
    • 100 grams of mozzarella, balled
    • ½ teaspoon oregano, dried or fresh and chopped
    • ½ teaspoon dried or fresh basil, chopped
    • ½ teaspoon sea salt
    • ¼ cup of fresh parsley, finely chopped
    • 1 egg
    • ½ cup reduced-sugar marinara sauce or tomato sauce
    • ¼ cup water

    Instructions:

You may need to braise them in batches so you dont overcrowd the pan. Dont worry if theyre not cooked all the way through at this point, they will go into the oven later.
  • Once the balls are braised, add them to a large 2 inch deep baking pan or casserole dish.
  • Add water to marinara or tomato sauce and stir well to thin out sauce . Pour marinara sauce over the balls, cover with aluminum foil and bake in a 350 degree oven for about 30 minutes until bubbly and meatballs are fully cooked.
  • Top with additional shredded cheese and place back into the oven for another 5 minutes.
