Good Snack : Pistachios

Ricotta can be made out of the leftover whey from making mozzarella cheese. This is how it is done.

Pistachios are one of Grottos favorites, because theyre low in carbohydrates and rich in monounsaturated fatty acids, which can lower bad cholesterol levels.

Buy the nuts that are still in their shells. People eat fewer calories when they choose in-shell pistachios over the shelled ones. Its the effort of cracking open the shell, besides having the visual reminder of the shells in front of you, that helps keep you from overdoing it, Grotto says. For a single serving, stick to 1 ounce or one handful.

Nutrition info: For 1 ounce or a handful , youll get about 160 calories, 13.1 grams fat, and 7.9 grams carbohydrates.

Potential Risks Of Cheese

Some people are allergic to a protein in cheese called casein. An allergic reaction to this substance can cause inflammation throughout the body, rashes, acne, headaches, and sinus congestion.

If youre intolerant to lactose, the sugar that naturally occurs in cheese, this can also trigger a reaction. Symptoms of lactose intolerance can include bloating, flatulence, and diarrhea.

If youve never been tested for these sensitivities, talk with your doctor or a dietician about them.

Finally, while the saturated fats in cheese can be beneficial in small amounts, diets high in saturated fats and sodium have been linked to heart disease, diabetes, and high blood pressure. Since cheese has higher amounts of saturated fat and sodium, its best to eat it in moderation.

What Is Mozzarella Cheese

Mozzarella is a soft and mild-tasting fresh cheese that originated in Italy. However, at the current time, Mozzarella production happens all around the world.

Buffalo milk is used to make authentic, traditional Italian Mozzarella, but many producers in different countries now use regular cows milk.

The cheese itself comes in the form of round-shaped, white curds that are easy to slice.

Additionally, Mozzarella comes in pre-shredded form, which many people prefer for convenience .

Mozzarella is almost always the cheese used to make string cheese too.

Frozen Meals Can Be Freakishly Salty

The frozen foods section of your grocery store can be another hiding place for salt. A single slice of a frozen pizza can contain up 750 mg of sodium and who eats just one? A single serving of frozen meatloaf might have 900 mg.

All that excess salt causes your body to retain fluid, which will not only leaving you feeling bloated, but can also lead to high blood pressure. Look for low-sodium options, or better yet, cook your own meals from scratch in bulk, and freeze leftovers for days you dont feel like cooking.

Is Violife Cheese High In Saturated Fat

Most Violife cheese products have more saturated fat than real dairy cheese. The saturated fat in Violife cheese comes from coconut oil, rather than milk fat.

One of the reasons why cheese is commonly said to be unhealthy is its saturated fat content. In fact, cheese is reported to be the biggest source of saturated fat in the American diet.

You might assume that vegan cheese would be lower in saturated fat. After all, most plant-based fats are unsaturated.

And indeed, when you look at other brands of vegan cheeselike Daiya and Follow Your Heartthey are generally lower in saturated fat than real cheese.

But you actually cant say the same about Violife. This is because Violife is made from coconut oil, which one of the few sources of plant-based saturated fat.

Keep in mind: Saturated fat from some sources may be healthier than others. I do not mean to necessarily equate coconut oil with dairy fat by making these comparisons.

Anyway, lets compare the saturated fat content of Violife to real cheesestarting with the mozzarella:

Violife vs Real Cheese: Parmesan Saturated Fat Content.

And once again, Violife has more saturated fat, although not by much this time.

Overall, theres a clear pattern here: Violife generally has more saturated fat than dairy cheese.

Although cottage cheese isn’t as high in calcium as some other cheeses, it’s a great source of protein, says Weinandy. This can be beneficial for vegetarians who aren’t getting protein from other sources, such as meat.

Opting for a low-fat version is preferable if you’re watching your weight and following a heart-healthy diet, says Weinandy. Also, you can easily blend up cottage cheese and add it to other foods for a protein boost. Weinandy says cottage cheese can be blended into smoothies, pancakes, or muffins.

A 100 gram serving of low fat cottage cheese contains:

    • Calories: 80
    • Saturated fat: 3.5 grams
    • Calcium: 19.9 milligrams

Tip: Instead of cream cheese on your bagel, use goat cheese, which contains 30% less saturated fat in a one-ounce serving.

    Fresh Mozzarella: The Good Stuff

Why do I say “the good stuff?” Because I want to differentiate fresh mozzarella from the mass-produced part-skim and fat-free cheeses that tempt healthy cooks. First, let me clarify. I often use part-skim mozzarella in sauces, baked toppings and casseroles because it shreds and melts easily, blends well with other ingredients and using fresh would be a waste of a fabulous ingredient. I never use fat-free because its flavorless and doesnt melt correctly.

I use fresh mozzarella when I want to experience the smooth, velvety cheese in all its glory, embellished very simply with fresh fruits, vegetables and herbs. Fresh mozzarella is typically sold in a liquid bath which helps the cheese retain hydration and shape. It’s mild and slightly sweet with a distinct milk flavor. The creamy texture is much softer than mass-processed mozzarella.

Nutritionally speaking, you might be shocked to learn how similar the varieties are, especially if youre watching fat and salt intake. Fresh and part-skim mozzarella are basically the same in terms of calories, fat and saturated fat, BUT part-skim has carbohydrates and ridiculously more sodium .

Note: Keep fresh mozzarella in its liquid bath until ready to eat, and eat it within 2 to 3 days.

    Is It Really Low Sodium

A Feast for the Soul: Reflections of a Clergy Cook

We will call it low sodium for a once in a while, comparative sense. While it may be lower sodium for a Mac and cheese, you will more than likely still be pairing it with another main meal entree. In the end that could potentially put you over your sodium per meal goal.

Unfortunately the main ingredient besides the pasta is cheese. And most cheese is just not our friend in a low sodium diet world.

Mac and cheese has never been a side dish Ive eaten very often. I would mainly have it when at a cookout or around a holiday. But when I do, I like it a little saucier rather than just a clump of dry, sticky cheese covered noodles. Either way, it is probably not a side dish that you really should be eating every day, but it does hit the spot once in a while.

I had to make and eat four different versions of Mac and cheese to achieve what I thought was a decent mix between low sodium and for it to still have a cheesy taste. I am officially Mac and cheesed out for a while.

So it was a push-pull process getting a moderate amount of cheese and balancing that with a dish that you really dont eat every day but would still taste good. I had to reduce the cheese to the bare minimum but still taste like Mac and cheese. Then I cooked the pasta in unsalted chicken broth and milk in a low boil, reducing the amount of cheese and calories to give it more flavor and extra creaminess.

Low Carb Mozzarella Stuffed Meatballs Recipe

    Ingredients:

    • 2 pounds of lean ground beef. 1 small onion, diced
    • 2 cloves garlic, pressed
    • 1/3 of a red or green bell pepper, diced
    • 100 grams of mozzarella, balled
    • ½ teaspoon oregano, dried or fresh and chopped
    • ½ teaspoon dried or fresh basil, chopped
    • ½ teaspoon sea salt
    • ¼ cup of fresh parsley, finely chopped
    • 1 egg
    • ½ cup reduced-sugar marinara sauce or tomato sauce
    • ¼ cup water

    Instructions:

  • In a large mixing bowl, combine meat with all ingredients except mozzarella balls, oil, marinara/tomato sauce and water, mixing ingredients well until combined.
  • Cover each ball of mozzarella with meat, forming a large meatball. (These may look overly large at this point, but they will shrink down quite a bit when cooking.
  • In a large skillet, heat up olive oil and add meatballs slowly and braise them at high heat until they get dark brown color on the outside . You may need to braise them in batches so you dont overcrowd the pan. Dont worry if theyre not cooked all the way through at this point, they will go into the oven later.
  • Once the balls are braised, add them to a large 2 inch deep baking pan or casserole dish.
  • Add water to marinara or tomato sauce and stir well to thin out sauce . Pour marinara sauce over the balls, cover with aluminum foil and bake in a 350 degree oven for about 30 minutes until bubbly and meatballs are fully cooked.
  • Top with additional shredded cheese and place back into the oven for another 5 minutes.

The 9 Healthiest Types Of Cheese

Cheese is a dairy product that comes in hundreds of different textures and flavors.

Its produced by adding acid or bacteria to milk from various farm animals, then aging or processing the solid parts of the milk.

The nutrition and taste of cheese depend on how it is produced and what milk is used.

Some people are concerned that cheese is high in fat, sodium, and calories. However, cheese is also an excellent source of protein, calcium, and several other nutrients.

Eating cheese may even aid weight loss and help prevent heart disease and osteoporosis. That said, some cheeses are healthier than others.

    Stomach Issues Such As Constipation

Eating too much cheeseor any dairy for that matterhas been linked to the risk of stomach issues, such as gas and bloating, especially for those who may be lactose intolerant.

“Although cheese is a lower lactose food with one ounce of sharp cheddar cheese, mozzarella cheese, and Swiss cheese providing less than 0.1 grams of lactose, there may be a limit that your body can tolerate at one time,” Amidor says. “Eating an amount of lactose greater than the body’s ability to digest it can lead to gastrointestinal disturbances, which is the definition of lactose intolerance.”

It could be difficult to decipher if you are lactose intolerant, so Amidor notes that it’s important to look out for symptoms like abdominal pain, flatulence, and bloating or see your physician for testing.

Overindulging in cheese can also make it difficult to go to the bathroom. Smithson shares that although cheese is a good source of protein, “it’s not a source of fiber and if you are eating your cheese with an already low fiber eating plan, you will feel the effects of constipation.”

    Don’t Eat: Spray Cheese

    Mozzarella Cheese for Babies

Drew Barrymore’s face in thisTonight Show memory says it all. And there’s a reason Wired called spray cheese “one of the world’s most unnatural foods,” while Everyday Health says that “it’s heavily processed cheese that isn’t really, well, cheese.” Look, just as a simple, undeniable fact you know that cheese delivered from a pressurized can via depressed nozzle has no business entering your body. This cheese is just all wrong in principle. And it’s all wrong in practice, too.

Wired broke down the ingredients you’ll find in a can of spray cheese, like Kraft Easy Cheese Cheddar Pasteurized Cheese Snack, and identified, among other things, canola oil to maintain its liquid texture, sodium phosphate, whey, and about twice as much salt as you get in other cheeses. This affront both to human health and human dignity belongs in the history books, not grocery aisles, and it certainly does not belong anywhere near anything you are planning to ingest or, worse still, feed to your growing children.
