Now its time for a gilled cheese tip from Blood, Bones and Butter author Gabrielle Hamilton, as revealed in the Holiday issue of Canal House Cooking. Her unusual grilled cheese method? Spreading the outsides of the bread with mayonnaise instead of butter before frying. This was something I had to try! Read on for my review.
First, let me say this: I know some people might be unsure about hot mayonnaise but using a store-bought brand is perfectly safe. While its somewhat unusual, I have used mayo in hot dishes before with no problems and excellent results.
Ms. Hamilton instructs us to spread the outsides of the sandwich with mayo and fry it up in a non-stick skillet over lowish heat. I gave it a try with a simple whole grain bread and a nice, sharp cheddar. The results? Sublime! The mayo browned nicely into a delicious crust and offered a rich, slightly tangy flavor.
This is going to be my go-to method for grilled cheese from now on.
Gabrielle Hamilton served her grilled cheese sandwiches to company at Christmastime, along with glasses of chilled, crisp champagne. Besides the usual cheddar with mustard, she also made a blue cheese and bacon on pumpernickel and cheddar with mango and jalapeno. Yum!

Choose A Cooking Method
When it comes to cooking your grilled cheese, you have three options.
- Stovetop: A standard skillet is the most straightforward and convenient method. Preheat a skillet over medium-low heat, then cook the assembled sandwich uncovered, flipping halfway through, until both sides are golden, about 3 to 4 minutes per side.
- Oven: Making grilled cheese for a crowd? Save yourself time and effort and simply cook sandwiches on a rimmed baking sheet in a 450-degree F oven. Cook, flipping halfway through, until the cheese is melty and the bread golden, about 10 minutes total.
- Panini Press: For a maximum crispy sear with minimal effort, try cooking grilled cheese in a panini press. Preheat a panini press to medium heat, place sandwich in press, close the top and cook until lightly browned and the cheese is melted, about 5 to 6 minutes.

How To Make A Grilled Cheese On The Grill
Get a grill ready for direct grilling over medium heat.
Get out two slices of bread. Spread one side of each with softened butter or mayonnaise. . Flip the bread slices over. Put a couple of cheese slices onto one slice of bread. Invert the other bread onto it so that it is butter-side-up.
Transfer the sandwich to the preheated grill. Cook for 2-3 minutes, until grill marks appear. Shift the sandwich around, moving it 90 degrees. Cook for another minute or two, to get those lovely hash marks.
Flip the sandwich over and repeat on the second side, cooking for 2-3 minutes to get the initial grill marks and then turning the sandwich 90 degrees to create hashmarks.

The Open Face Technique
For years, I assembled the sandwich and then grilled it. But recently I came across a new technique I like a lot better. Lets call it: Open-face grilling.
Open-face grilling allows the cheese to melt more thoroughly. The tradeoff is you can only make one sandwich at a time. But if its perfection you want, this is your method.
- Put both slices of bread in the skillet butter-side-down
- Arrange half the cheese over each slice. Once its halfway melted, invert one slice onto the other.
- Press down lightly with a spatula .
- Finish grilling as needed until the cheese is melted and both sides of the bread are golden brown.
Open-face grilling makes it easy to insert accouterments like tomato slices or chutney midway through grilling. The partially melted cheese bonds to the filling and keeps it from sliding around.

My cheesemonger friend got me onto using mayonnaise instead of butter.
Its always spreadable, it gives you a fabulous golden-brown crust thats not as apt to burn as butter, and it offers just a little zip.
My favorite brands are Hellmanns/Best Foods and Dukes. I havent tried Miracle Whip , but I figure its too sweet to work well here. You can also make your own mayoits actually just as easy as making a grilled cheese!

If you are 100 percent Team Butter, I understand. You can either butter the bread directly or melt a pat of butter in the pan. I prefer to butter the bread directly, but lets say your butter is straight from the fridge and rock-hard. In that case, melt it in the pan.
