Kraft mac and cheese is meant to have a long shelf life, yes. But does that mean you toss it on to the top of your cupboards, forget all about it and come back to it in two years?

Well, yes.

That is precisely what a majority of people do, and to a great extent, it works. That is the whole point of boxed mac and cheese, isnt it? But, there are certain things you can do to remove any risk of your mac and cheese going bad.

Remember, dry pasta stores really well. It is the sauce packet or the flavor sachet that is the weak link. Be careful not to break or damage the seal of the packet in any way. A 2017 study of boxed mac and cheese had people swearing off one of their favorite comfort foods due to the presence of phthalates. But what the heck is a phthalate, and should we really be worried?

Phthalates are a group of chemicals commonly found in things like rubber, fragrance, soap, plastic, and more. These chemicals get into foods during the manufacturing process, and a small study found that 29 of 30 cheese products tested contained phthalates, with the powdered cheeses containing the highest amounts four times more than natural cheese. CNN reports that these chemicals are endocrine disruptors, and according to the National Institutes of Health, “may interfere with the production or activity of human hormones.” They may cause reduced fertility and an increase in some diseases, including endometriosis and some cancers.”

Because of a lack of scientific data, the US Centers for Disease Control and Prevention says “the impact of low level exposure on humans is unknown,” but certain phthalates have been banned in children’s products since 2008.

There arent exactly many physical indicators to show that a box of Kraft Mac and Cheese has gone bad, if it ever does. Unlike fresh produce or fresh pasta which are likely to go bad and spoil beyond a certain time frame, dry pasta in a box is preserved to last longer.
