Making the Roasted Cauliflower
To begin making this cauliflower mac and cheese, heat a skillet on medium heat and preheat the oven to 425 degrees. Next youll want to dice your bacon into small bits in order to roast it alongside the cauliflower. Break the cauliflower into small bite sized pieces, we used elbow noodles for reference size. You can do this with a knife, or your hands like we did.
Now its time to add the cauliflower and bacon into your skillet. Cook for 5-7 minutes, you are looking for slightly browned cauliflower and fully cooked bacon.
