    Id like to challenge myself to try to make it perfectly.

    I understand mac and cheese from scratch usually requires some kind of emulsification. Ive heard cream cheese suggested, various emulsifying powders, and Ive also seen an Italian simple cheese sauce where the cheese is melted in I think butter at a very low temperature so it does not become stringy. Ive tried cream cheese and I found it hard to use enough to emulsify the cheese/thicken the sauce but not so much it affects the flavour, taking on too much of the chalky yet neutral flavour of cream cheese.

    First of all, should I even use sharp cheddar? Real cheddar has an intense bite to it. The beauty of Annies is its not actually overpoweringly cheese-flavoured.

    Im guessing ratios will be the secret trick here.

    Can anyone suggest the right ratios of simmered milk, certain types of cheeses, butter, and possibly a necessary emulsifier of some kind?
