Can I make this vegan mac and cheese gluten-free?
The sauce can be made gluten-free if you use a gluten-free all purpose flour blend instead of the regular flour. And then of course you can use a gluten-free macaroni. You would also need to use gluten-free bread for the crumb topping, or alternatively you could add vegan cheese to the top instead of breadcrumbs.
Can this be made ahead?
Yes! If you need to make it ahead of time you can make up the sauce and macaroni up to 2 days before and mix it up and assemble in the 9×13 dish. Cover with foil and keep refrigerated. Then when youre ready to bake it, add the breadcrumbs and bake. In this case, since it is going into the oven cold from the fridge, add an extra 5 minutes of baking time.
How long does it keep?
Leftovers keep very well in the fridge for 3-4 days.
Can you freeze vegan mac and cheese?
Yes you can! This freezes very well.

- Swap the sweet potato. If you dont have sweet potato on hand but you still want to try this recipe, dont worry. An equal amount of diced carrot or butternut squash would work just as well.
- Make it smoky. Blend 1/4 to 1/2 teaspoon smoked paprika, to taste, into the vegan cheese sauce for a smoky twist. Or, for texture, stir in a handful of crumbled tempeh bacon bits!
- Spice it up. Make spicy vegan mac and cheese by pureeing the sauce with 1 tablespoon pickled jalapeños or a chipotle pepper from a can of chipotles in adobo.
- Go gluten-free. Use your favorite gluten-free pasta! I like to use brown rice elbow macaroni.
- Add extra veggies. Of course, this vegan mac and cheese tastes good on its own, but adding extra veggies certainly doesnt hurt. Stir in thawed frozen peas, spinach, or steamed broccoli for a bright pop of green.

Pretty much any noodles will work here, and whole wheat or gluten free pasta is fine to use as well. Im partial to tube noodles because they trap more vegan cheese!

I have served this many times to non-vegans and they always go for seconds. I use cashew or almond milk for their mild flavor, but you can always experiment with other plant-based milks.
MACARONI AND CHEESE
For the macaroni and cheese:
1/2 teaspoon kosher salt, plus more for pasta water
1 pound short pasta, such as cavatappi, elbows or small shells
3 tablespoons extra virgin olive oil
5 tablespoons all-purpose flour
4 1/2 cups unsweetened cashew or almond milk
16 ounces shredded plant-based cheddar cheese
2 tablespoons nutritional yeast
¼ teaspoon freshly ground black pepper
teaspoon cayenne pepper
1 cup panko or coarse dried breadcrumbs
3 tablespoons extra virgin olive oil
¼ teaspoon kosher salt
teaspoon freshly ground black pepper
1 clove garlic
2 tablespoons chopped fresh flat leaf parsley, for serving
Position the oven rack about 8 inches from the top and heat the oven to 400 degrees F.
Make the macaroni: Bring a large pot of water to a boil, then salt it. Add the pasta and cook until its a few minutes short of al dente . Drain into a colander and pass under cold running water to stop the cooking. Shake out any excess water.

This vegan mac and cheese is ultra cheesy yet we did not use one shred of actual vegan cheese in it. So if youre living somewhere where its hard to find vegan cheese in the supermarket, no worries, this recipe is for you.
I did try a version with some vegan cheese added to the sauce, and quite honestly I just didnt think it worked as well as the version without, so this is it.
I created a bechamel sauce with some vegan butter, all purpose flour, coconut milk and vegetable stock and once that was thick and creamy like a white sauce should be, I added some cheesy flavorings in the form of dijon mustard, nutritional yeast, onion powder, garlic powder, smoked paprika, salt and pepper.
The spices in this sauce really make it, you wont have any doubt that this is a cheese sauce. We used our cheesy garlic vegan alfredo sauce as major inspiration for this.
Add the cooked macaroni to your big pot of sauce and toss it all together and then transfer into a 9×13 baking dish, top with breadcrumbs and bake for 20 minutes until beautifully golden brown on top.
Super easy and extremely satisfying.
Tips For Making The Best Vegan Mac And Cheese
1. If you are in countries where nutritional yeast flakes are not readily available then substitute for the equal amount of noni juiceand you will get that cheesy taste. This is what dreams are made of!
2. All vegan and gluten-free pasta are created equal because some gluten-free kinds of pasta are not firm enough or taste favorable when cooked.
I recommend that you try a few different brands to see which you prefer. I have had great results with Barilla Pasta.
3. You can bake your macaroni and cheese by scooping the cooked recipe in a casserole pan and baking it until it is golden brown.
4. You can substitute the red bell pepper with cooked carrots for a nice orange color.
5. Substitute the coconut milk with any other unsweetened non-dairy milk like almond, soy. You can also substitute with vegan sour cream, vegan cream cheese.

How About That Texture
It does get very hard in the fridge, so its a lot like a traditional butter in that sense, if you want to spread it on bread or cream it up with sugar for baking, its best to let it soften slightly out the fridge first.
Spreading on toast is of course fine as is and it doesnt need to soften first.
Youll also find the texture of it tends towards crumbly when its still hard straight from the fridge, but this doesnt have any impact on the result once spread. And to avoid this, let it soften a bit first.
How To Thin The Sauce If Its Too Thick
Serve the mac and cheese right away for the best texture and flavor. The sauce will thicken as it sits, even after 20 minutes. But I have a solution! Simply add some additional warm water and stir it in well. The sauce will thin perfectly problem solved!
Do the same thing with leftovers. When reheating, add some more water and stir until you reach the desired consistency. This wont work well with the baked version, but I found these leftovers saved better anyhow.

You can bulk up the mac and cheese by stirring steamed or roasted veggies in at the end. I especially love adding chopped steamed broccoli.
Or give the pasta a protein boost by adding crumbled tempeh, baked tofu or seitan, or your favorite protein of choice.

Once ready, you can bake the mac and cheese covered at 350 degrees for 30 minutes or until reheated.
