What To Serve With Baked Mac And Cheese

Mac and Cheese is worthy of serving as a meal in its own right, served with just a fresh green salad or simple vegetable side. Nothing heavy because Macaroni Cheese is so rich as it is!

As a side dish, it will compliment virtually any non-Asian main dish. Macaroni and cheese may be a staple when it comes to kids’ diets, but this Thanksgiving, why not make a homemade, over-the-top side dish that will take the cheesy goodness to the next level? Mac and cheese can be creamy, spicy and when it’s done just right, simply delicious.

Chef, author and restaurateur Deborah VanTrece makes a Praline and Bacon Mac and Cheese that puts her own spin on the dish that women in the 1960’s made with commodity cheese to serve a lot of people cheaply.

VanTrece previously explained to TODAY that James Hemings, the chef and slave of Thomas Jefferson, is credited for introducing America to what we call macaroni and cheese. “Originally it was considered a refined, upper-crust dish. As the dish gained popularity and its ingredients became more accessible to the average person, it became more of a comfort food for the masses, rather than a dish reserved for the rich,” she said.

“One of my best secrets for creating a mouth-watering mac and cheese dish is to season the pasta itself,” VanTrece told TODAY Food. “I like to combine a little salt, white pepper, onion powder and garlic powder together, then sprinkle and toss the pasta. Also, I like my ratio of sauce to pasta to be a little heavier on the sauce side. That helps to ensure that the texture will stay sumptuously creamy.”

Make The Cheese Sauce

While the macaroni is cooking, make the cheese sauce. It’s really easy but there are a few notes that we’ll go over to ensure your success!

Make a Roux

This homemade mac and cheese sauce starts with a roux. What is a roux? It’s a mixture of fat and flour that is used to create thick sauces. Start by melting the butter and then adding the dry ingredients .

Use a whisk to combine the ingredients until the mixture is homogenous . Let it cook for about 60 seconds before moving on!

Add wet ingredients.

After the roux has cooked for 60 seconds, add the milk and whisk the mixture really well. Add the sour cream or Greek yogurt and whisk again. At this point the mixture will be fairly runny. Cook over medium heat whisking every 10-15 seconds until the sauce starts to thicken.

Do NOT let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Once the sauce has thickened enough to stick to a spatula, turn the heat to low. Then it’s time for the next step…

Add the cheese & whisk until smooth

Add the cheese and whisk until the sauce is smooth and all the cheese is melted. This will take 1-2 minutes over low heat. At this point it is important to taste the cheese sauce and adjust the salt/garlic according to your tastes!

We’ve already talked about the sin of trying to make mac and cheese healthy, so it’s not a surprise that Banza Elbows & Classic Cheddar is next on the chopping block. It’s made with chickpea pasta, which is what sets it apart from its bleached-flour cousins. The cheese is a “classic cheddar,” which is likely an attempt to equate it with more classic mac and cheese options like Kraft. Now, chickpea pasta can be delicious, but is it really the best type of pasta for mac and cheese? Judging by Banza’s recipe, no.   • Use block cheese and shred, do not buy the pre-shredded cheese. The pre-shredded cheese is great for so many things but not macaroni and cheese. Its coated and wont melt properly. You need to shred it yourself for the best result.
  • Cook your pasta to slightly less than al dente, about one minute shy is perfect. The reason is that this is baked mac and cheese so the pasta will continue to cook in the homemade cheese sauce in the oven. You dont want soggy macaroni.
  • I used elbow pasta but really, any tubular past will work.
  • This mac and cheese recipe starts with a roux. The roux is super important to getting the creamiest cheese sauce of your life. Here is what you need to look for:
  • The roux is whisked together until bubbly and golden.
  • Whisk in cold milk not warm to prevent the flour from clumping.
  • Cook the roux until you see bubbles on the surface and then continue cooking for an additional 2 minutes before adding the cheese.

Cooking Tips For Baked Mac And Cheese

  • Boiling the pasta cook the pasta less than you normally would. I like to boil my elbow pasta for between 4 and 5 minutes. The pasta will continue to cook in the oven, and you dont want it to get mushy.
  • Use room temp liquids if you can cold liquids generally take longer to thicken than warmer ones. I usually set my milk and half and half out while the water for the pasta is coming up to a boil.
  • The cheeses use your favorites! Our personal favorites are the cheddar and gruyere used in this recipe, but you can be very creative with the cheese selection here.   • Shred your own I know its a pain, and its SO tempting to use the pre-shredded cheese in the bags. But those bags of cheese contain a starchy substance that keeps the cheese from clumping which also prohibits it from melting as well as it should.

Cracker Barrel Sharp Cheddar Macaroni and Cheese was a standout in our test. Peeking at the package post-sampling, this brand sets itself apart from the others with its box. The black box made this brand seem more sophisticated like this mac and cheese was designed for grown-ups.

When it came to taste, we definitely agreed that this macaroni was just a bit more refined than the other brands we tested. The sauce was paler and less artificial-looking . The flavor was also more distinctively cheddar rather than just being some sort of generic cheese flavor.

However, what we loved most about Cracker Barrel were the noodles. The large, ridged macaroni noodles were just right for holding onto the cheesy sauce.

Take a moment to think about the best mac and cheese youve ever had. Perhaps youd describe it as ooey-gooey, creamy or cheesy. At its worst, mac and cheese is grainy, stringy or greasy. The type of cheese you use can make or break your sauce. But perhaps the name itself is a misnomer. The ideal mac and cheese needs more than one kind of cheese.

When youre cruising down the cheese aisle, two factors to consider are meltability and flavor. Generally, young and processed cheeses melt smoothly but taste bland when theyre mixed with a few pounds of pasta. Aged and funky blocks are tricky melters but add a lot of complex cheese flavor to the dish. This dichotomy explains why mac and cheese recipes often call for not one, but several types of cheese.

But there is one go-to that you’ll almost always see. An overview of Food Networks mac and cheese roundup reveals that most recipes have one type of cheese in common: sharp Cheddar. Pasta: The shape and size are entirely up to you. Look for pasta that will hold onto the creamy sauce. Elbow macaroni and shells are great options.

Butter and Flour: Its the combination of butter and flour that thicken the sauce. We like to use unsalted butter for this and then adjust salt to taste when making the sauce. That said, salted butter will work if that is all that you have.

Whatever cheese you use, its best to grate it yourself. I know its extra prep time, but hand-grated cheese melts so much easier into the sauce.

Cream cheese: The mac and cheese would be excellent with just cheddar cheese added, but to make it ultra creamy, well stir in some cream cheese. It adds a lovely silky texture, and since it has a little zinginess, it brightens up the flavor a bit.

I honestly use different cheese combinations almost every time I make this mac and cheese recipe but the one I always come back to is sharp cheddar and Gruyere. How To Avoid Grainy Cheese Sauce:

  • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
  • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
  • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
  • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

  • Preheat the oven. Preheat to 325 degrees and lightly grease a square baking dish.
  • Cook the macaroni. Slightly undercook your noodles . Drain and set aside.
