Cheese is a dairy product made from curdled milk, usually cow’s milk, but goat’s and sheep’s milk are also frequently used in cheesemaking. There are roughly a dozen cheese varieties in the world, with thousands of subcategories, so you definitely won’t feel any shortage of options.
Cheese is more compact than milk, meaning it is dense in nutrients like fat and protein and low in water content.
But what about its carb content?
- Well, the amount of carbs varies from one cheese to the next. But generally speaking, fresh cheese is higher in carbs than hard, aged cheese.
- Cottage cheese, for example, has 3.5g carbs per 100g, while Edam cheese has only 1.4 g of carbs in the same serving size. But, as usual, there are many exceptions to this rule.
To play it safe with carbs in cheese, read the label, go for high-fat cheeses, and limit fresh cheeses since these tend to be low in fat. Also, try to avoid processed cheese like American or Gjetost.
If practical, go for grass-fed products as these are higher in vitamin A, omega-3s, conjugated linoleic acid , and antioxidants than conventional dairy products .

Celery is a rich source of antioxidants. Antioxidants are an important part of any diet because they work to protect the structure and health of cells, blood vessels, and prevent internal organs from suffering any oxidative damage.
The primary antioxidants and phytonutrients that are found in celery include: vitamin C, beta carotene, potassium, magnesium, folate, vitamin K, flavones, flavonols, dihydrostilbenoids, and phenolic acids.
Additionally, celery is able to retain most of its antioxidants after being cooked. A recent study concluded that even after 10 minutes of steaming celery was able to maintain 83 to 99 percent of its antioxidants, which is an incredible amount, considering most vegetables lose most of their beneficial nutrients after being cooked.

Snack on celery smart. Celery is on the Dirty Dozen list of being one of the most pesticide contaminated produce. Pesticides get absorbed through the roots of the stalks, so if you can, buy organic. Celery is typically inexpensive. I buy mine organic from Trader Joes for a little over 2 bucks. Well worth it.

Cottage cheese first became popular during the days of low-fat dieting. If you buy the skim-milk version, you end up with a pretty low-fat, high protein snack. But the days of low-fat dieting are over thank god.
So where does this leave cottage cheese?
Lets start by talking about what cottage cheese is.
How To Fill Your Sticks
Option 1: You can use a good ole’ spoon to scoop your filling into the crevice. This is easy and works just fine. The only negative is it could come out looking a little messy.
Option 2: Use a plastic baggie with the corner snipped off as a make-shift piping bag. Then add the cream cheese filling and use the bag to squeeze your filling into your celery sticks. This works well but you need to make sure the hole you cut will fill the sticks evenly.
Option 3: Use a fancy piping bag with a pretty star tip. This is what I used. I think it looks so pretty and neat. Plus it is SO fast! This is also convenient if you want to fill them last minute or at another location outside of your home.

If youre eating peanut butter on the South Beach Diet or another carb-conscious eating plan, it needs to be a natural peanut butter, without added sugar. This is my favorite brand, but there are lots of good ones.
Peanut butter is a calorie-dense food, so limit the serving size if youre trying to limit calories. These are short little pieces of celery, but this is enough of a snack to satisfy me when I need something to munch on.
Hummus is something I eat in moderation, and I love to stuff it inside celery, or just eat with the celery as a dipper. This Meza hummus is something I always have in the fridge, but hummus is easy enough to make from scratch, so check the recipe links after the photos if youd like to make your own. Hummus does have some carbs, so watch the portion size if youre limiting carbs.
I usually limit hummus to about 1/3 cup serving per day which is about 6 net carbs, so keep that in mind when youre eating hummus as a snack.
This gourmet garlic and herb cheese is something else I absolutely love stuffed into celery. I buy this at Costco, but there are other brands of similar cheese available in most supermarkets or specialty food stores.
Cheese like this is a great choice for low-carb diets, and this one only has 2 carbs in an ounce of cheese.

What Can Be Eaten With Cream Cheese On A Low
A tablespoon of cream cheese contains less than 1 gram of carbohydrates, making it a good choice if you’re following a low-carb diet. Unfortunately, many of the common pairings for cream cheese, such as bagels and English muffins, aren’t low in carbs. If you enjoy the taste of cream cheese, there are plenty of other foods that you can eat with the food that are low in carbs. Keep in mind, however, that cream cheese isn’t an impressive source of nutrients, so it should have a limited place in your diet.
How To Make Stuffed Celery
Step 1: Fry the bacon on a very hot pan until its crispy. Set aside on pieces of paper towel to drain and cool.
Step 2: Clean the celery stalks, cut them in thirds, and set aside. Clean the fresh herbs and chop them into smaller pieces.
Tip: To make the celery sticks look nice and even, use a vegetable peeler and peel a layer off the bottom of the celery stalks so that they can stand upright on the plate.
Step 3: Add the cream cheese to a food processor and process until whipped and creamy. Stop to scrape down the sides if necessary.
Step 4: Add in the cheddar cheese, fresh herbs, salt, pepper, and bacon bits and pulse until combined. Scrape down the sides as necessary.
Tip: You can control the texture of the filling by blending it more or less. I prefer to have the mixture more on the chunky side so I only give it a few pulses.
Step 5: Spoon the filling into the middle of the celery sticks, leaving an inch on the bottom free of filling and sprinkle with bacon pieces. This clear space makes it easier to handle the celery sticks.

- For the creamy element, you can use Greek yogurt, mayo, cream cheese, or any combination of those three. Greek yogurt is the lightest and healthiest choice but it’s pretty dang delicious with cream cheese. It’s also 0 Weight Watchers Freestyle SmartPoints with made with nonfat Greek yogurt.
- You can top the buffalo chicken bites with ranch, crumbled blue cheese, or blue cheese dressing. They are also delicious with some diced carrots or green onions on top for a healthier option.
- The chicken salad can be made ahead of time and you can stuff the celery about an hour before you want to serve them, perhaps even a little longer.
- If you aren’t a huge fan of celery, you can serve this in hollowed out cucumbers, zucchini, lettuce wraps, or tomatoes. For a party, serve them on endive leaves, cucumber slices, apple slices, or baked chips.

All you need to make these is your favorite cream cheese, a jar of everything bagel seasoning and some crisp FRESH celery!

Despite being a fresh cheese, you can enjoy cream cheese on keto. Cream cheese is creamy due to its high-fat content around 33-65% of cream cheese is fat. Furthermore, a 3.5 oz serving comes with around 4.1g carbohydrates, which isn’t all too bad.
However, don’t just buy any brand of cream cheese you come across. Go for cream cheeses that list as few ingredients as possible. Some brands may include additives like carob bean gum, natamycin, and whey salt to get a more desirable texture and flavor, but these may not be best for health.
As with most dairy food, keep your intake moderate to stay within your macros. While you can definitely use it as a spread, there are other ways to incorporate cream cheese into a keto diet.
