Does Ricotta Contain Lactose
Ricotta Cheese contains lactose. This means you should avoid it if you are lactose intolerant. Cheese is made by adding bacteria to the milk to convert lactose into lactic acid. Subsequently, rennet is added to curdle the milk. However, when it comes to making ricotta cheese, bacteria that turn lactose into lactic acid are not added. Therefore, this means that ricotta, unlike other types of cheese, contains a significant amount of lactose.
Can You Substitute Buttermilk For Ricotta Cheese
Cottage cheese, cream cheese, tofu, goat, and buttermilk cheese are the most common and readily available substitutes of ricotta cheese that make dishes as soft and delicious as ricotta. While Cream cheese is the best substitute for ricotta due to its similar consistency and creaminess.

Recommended Ingredients & Equipment
There are several plant-based foods that are a popular base for homemade vegan ricotta. I prefer cashews in this ricotta recipe because of the natural richness and creaminess of the nut. When blended together with some nutritional yeast, lemon juice, and salt you get a creamy nut-based cheese that is incredibly versatile and satisfying.

Adjusting The Amount Of Water
I usually start the recipe using 3/4 cup of liquid 1/2 cup of water and 1/4 cup of unsweetened almond milk. Then, I add more water, up to 1/4 cup of extra water, to achieve fluffy, creamy ricotta.
But again, this is up to you! If you want thicker ricotta with more texture like in the picture below, dont add more water.

Use White Slivered Almonds
To make a white ricotta cheese without soaking your almonds, you must use:
- Slivered almonds white in color, they dont contain the almond skin, and they are small, so you can easily blend them into a creamy, cheesy texture without pre-soaking.
For this recipe, do not use
- Whole almonds with or without skin. They are too hard to break into a creamy cheese without soaking them.
- Sliced almonds with skin if you want to use sliced almonds, make sure they are blanched. You will also need to watch out for the blending time! They turn really fast into a creamy paste, and you will lose some grainy texture.

The Two Bases For Making Vegan Ricotta Cheese
There are two main recipe approaches to making vegan ricotta cheese that we use all the time and truly recommend you give a try. One uses tofu as a base and the other one uses cashews. In this article, we present the recipe that uses tofu. You can get the cashew recipe here.
Personally, we prefer the tofu recipe because of its superior protein profile and much easier and quicker preparation, however, if youre willing to put in the time , the cashew ricotta cheese substitute is really to die for!

Ingredients For Vegan Ricotta
Tofu is the key ingredient here. It does such a great job of giving this vegan cheese that great ricotta-like texture.
I’m actually not a huge fan of tofu, and use it pretty sparingly. I much prefer the texture of soy-free Burmese chickpea tofu in stir fries and similar dishes.
But for this vegan ricotta, it actually works perfectly. I used extra firm tofu, to get the perfect fluffy texture. This is the exact brand that I used for this recipe!
Nutritional yeast is the other essential ingredient, because it adds that distinct cheesiness.
You can purchase it at most grocery stores in the health food section, or you can .

Can I Use Regular Whole Almonds
Raw slivered almonds are a much better choice because the skins have already been removed. You absolutely do not want almond skins in your ricotta, so whole raw almonds just wont work here.
If you want to blanch whole almonds and remove their skins, you could do that. But its quite a bit of work, and much easier simply to buy raw slivered almonds instead. Or use raw cashews instead.

What Makes This Ricotta Cheese Dairy Free
To make dairy free ricotta, you typically need blanched whole almonds, but I didnt have any on hand. As I was thinking about it, I realized that almond flour is exactly that, super fine blanched whole almonds!
So, making it even easier for you, I have created the yummiest dairy free ricotta cheese recipe using the almond flour you probably already have in your pantry! Add in just a few more ingredients, blend them up, and thats it!
How To Make Almond Ricotta
This almond ricotta could not be easier to make. Ive seen quite a few almond ricotta recipes with incredibly complicated and time-consuming instructions like soaking, straining, letting it sit for 8-hours. This recipe is much more simple and a lot quicker. All you need is a food processor or blender, five ingredients, and 10 minutes.
To make the almond ricotta all you need is slivered blanched almonds, water, lemon juice, nutritional yeast and sea salt. I like buying the slivered blanched almonds from Trader Joes or Whole Foods bulk bins. I find these to be the best deals. The nutritional yeast is optional but it adds a little cheesiness and a boost of protein and B vitamins. The lemon juice and salt are necessary for that salty ricotta-like tang. The ingredients are blended together in a food processor or high-speed blender and thats it! It can get much easier than that.
To make an herb version, after the ricotta is blended stir in 2 teaspoons dried basil, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder.

Ricotta is a soft cheese with a mild, pleasant flavor. Its quite versatile and can be found in everything from breakfast recipes, to dinner and dessert. While most popular for pasta dishes like lasagna and manicotti, its also used for filling crepes and even cheesecake.
No matter what you are making, if you need a dairy free ricotta alternative, you have a few options. The key to using a replacement ingredient is to achieve a similar texture and flavor. And any of these options will provide your recipe with exactly that.
Suitable Alternatives Without Lactose
If you are intolerant to ricotta cheese lactose, all is not lost because we have some friendly cheeses, which can make an excellent substitute for lactose cheese.
Whenever you are looking for a substitute ricotta cheese, you should go for cheeses with below 3 grams of sugar per serving, if you dont have a severe form of lactose intolerance. The reason we mention sugar is that lactose is technically the cheese sugar.
There are a variety of artificial cheeses in the market that are made from non-diary products. These are a great substitute for people who are extremely sensitive and cannot tolerate lactose. These cheeses have great taste, spread well, and are perfect for almost every purpose in the kitchen and dining. Whether you are a lactose intolerant, vegan, or want to avoid lactose for another reason, these lactose-free cheese substitutes might be right for you. You dont have to look at the sugar content of these plant-based cheese alternatives, because the sugar in them is not lactose.

Making Ricotta For Sweet Dishes
This tofu ricotta also works great in sweet treats as well like cakes, blintzes, and cannolis. For use in sweets, make sure to omit the garlic and herbs. Also, be sure to use a light olive oil or swap it out for another neutral-flavored oil. Extra virgin olive oil will have too strong of a taste in sweets. . You can also add a little sugar to the ricotta if you want to sweeten it up a little.

Prep your base ingredients. Youll need to soak your almonds overnight and press the liquid out of your tofu before starting.
Measure the rest. Combine your prepared ingredients in the bowl of a food processor and measure out the rest, adding it to the processor.
Blend everything. Process the mixture until it resembles the texture of real ricotta cheese.
Season to taste. If it seems too thick, stir in a bit of additional yogurt, or a splash of dairy free milk.

Choosing Tofu For Dairy
There are two major types of tofu: silken and regular tofu. They come in a variety of textures: extra-soft, soft, medium, medium-firm, firm, extra-firm, and super firm. Non-silken tofu is also known as regular tofu. This recipe specifically calls for extra-firm silken tofu. You may find that silken tofu is packaged differently than regular tofu, which means silken tofu may be in a different area of the grocery store. Because silken tofu does not require refrigeration, you may have to look harder to find it. You’ll also find both solid and crumbled varieties of silken tofu. The best option to go with is drained and crumbled. Although this recipe lists instructions to mash the tofu with a fork, buying it crumbled will help the remaining ingredients combine with it better, and create a more uniform consistency that some prefer with ricotta cheese. Some vegan ricotta cheese recipes call for blending, but this one does not. If you like a smoother texture, you can blend the ingredients together.
Whats The Difference Between Almond Flour And Almond Meal
Almond flour is made from blanched skinless almonds and is super fine, powdery, soft and pale creamy yellow in colour. It has a mild, buttery flavour which is why it works so well in this recipe and in my vegan butter recipe.
Almond meal on the other hand is made with raw almonds, often with skins still on. It is coarser, harder and grainier than almond flour, slightly stronger in flavour and darker in colour with small brown flecks throughout if the skins were still intact.

Blending Scraping The Jug And Repeat
This is not a complicated recipe, but you must be patient and repeat the same steps a few times to achieve the right ricotta texture.
First, add the ingredients below into the blender:
- Slivered almonds it means thin pieces of blanched almonds with no almonds skin and golden-white color.
- Water tap filtered water, no need to use hot water.
- Unsweetened almond milk I found that the best vegan ricotta is made from a combination of water and unsweetened almond milk. The touch of almond milk adds the light sweet taste that mimics the classic ricotta cheese even more!
- Nutritional yeast for a light cheesy flavor, but you can omit this ingredient as ricotta is mild in flavor, and you dont expect a strong cheese flavor. Nutritional Yeast is a vegan-friendly ingredient.
Blend all the ingredients for 30 seconds, stop the blender, scrape down the sides of the jug with a silicon spatula and repeat!
You will have to repeat these steps 3-5 times until it forms a fluffy, creamy ricotta cheese with a grainy texture.

Something Salty Something Sweet
The sweet and salty versions of the recipe are both super easy to make and are very similar. Basically, in the sweet version, instead of using salt and vinegar, you use sugar, cinnamon, and lemon juice. Optionally, you can add nutmeg or pumpkin spice, too.
Each of the recipes is accompanied by recommendations for dish combinations, such as using vegan ricotta cheese in lasagna. Bon appetit!
How Do I Substitute Cream Cheese For Ricotta Cheese
If youre looking for a sub for lasagna, though, reach for cottage or goat cheese instead. Cream cheese: Cream cheese is made with milk and cream, while ricotta is made with just milk. The lower fat content makes the latter cheese slightly less creamy. However, cream cheese can still be substituted for ricotta.
