    The legend has it that young, 14 years old girl called Leobrada, living in Reyes Etla, Oaxaca, was left in charge of cheese production at her home.

    Still, just like any other child, on one occasion, she got easily distracted and forgot to take care of the temperature of the curdled milk.

    To hide this mistake and avoid getting into problems with her parents, she added hot water to the mixture, causing it to melt and creating a stringy, chewy mass.

    She named this mass quesillo.

    To her surprise, Leobradas parents were delighted with the flavor of a said strange mix.
