This little miraculous white ball, also called quesillo, was born at the end of the 19th century in
Central valleys of Oaxaca.
The legend has it that young, 14 years old girl called Leobrada, living in Reyes Etla, Oaxaca, was left in charge of cheese production at her home.
Still, just like any other child, on one occasion, she got easily distracted and forgot to take care of the temperature of the curdled milk.
As a result, this mixture lost its moisture and crumbled when cut.
To hide this mistake and avoid getting into problems with her parents, she added hot water to the mixture, causing it to melt and creating a stringy, chewy mass.
She named this mass quesillo.
To her surprise, Leobradas parents were delighted with the flavor of a said strange mix.
Quesillo became very popular among the whole neighborhood almost immediately.
As a result, more and more families started producing mentioned buttery sensation.
And not too long after that, it spread into whole Mexico.
These days, during the Guelaguetza festival, the city of Reyes Etla organizes a Quesillo Fair. This event is promoting the consumption of local products and informing the public about the making of quesillo.
