  • Pepper Jack Cheese Shred a block of pepper jack to help balance out the intense cheddar flavor of the Velveeta. You can swap for other Mexican style cheeses here as well.
  • Fire Roasted Tomatoes Use your favorite brand of fire roasted tomatoes . The canned tomatoes add a ton of flavor and the liquid helps thin out the cheese.
  • Green Chiles I like to add a large can of green chiles to help add some flavor to the mixture.
  • Onion Dice up some onion and sauté it before adding it to the dip .
  • Fresh Jalapenos I like to dice these up and add them in to give it some heat. This is optional but great if you enjoy it! I cook this along with the onion and the chorizo to get them a little more tender prior to smoking.
  • Cooked Chorizo Sausage While you can always use ground beef, I am absolutely obsessed with a cook crispy cooked, ground chorizo. The flavors and spices are out of this world and make this dip go a long way. Pre- cook it and drain the grease and add the onion in as well.
  • Garnish- Top with fresh, chopped cilantro, diced tomatoes and green onion if desired. I also sometimes like to sprinkle on some of this homemade Tajin seasoning blend too!

We love a boxed mac and cheese. Who doesn’t? Part of the appeal is that there is some assembly required. You have to boil the water and cook the pasta. You have to rip open that powdery cheese packet and pour it in. You may even add some butter if you’re really feeling like flexing your chef muscles. But Lean Cuisine Favorites Macaroni and Cheese takes that sense of accomplishment away from us, leaving us with nothing to do but stare at the slowly rotating frozen brick in the microwave, wondering how all of our life’s patterns became so cyclical.

Not everyone is a fan of frozen prepared meals, and it’s not just because of their reputation as “lazy” foods. Frozen meals often just don’t taste as good as fresh, especially when it comes to pasta. The cheese in this Lean Cuisine meal is almost plastic-y, and the macaroni is limp, sad, lifeless a far cry from the al dente delight you can get when you make your own pasta. Our take? How to make Crock Pot broccoli cheese soup with Velveeta and frozen broccoli. This is a delicious recipe made with noodles that can be eaten as a meal or with a sandwich.

I live near a very small town. There is only one stop light in town, and that’s just because there’s a state route that runs through town. There aren’t many businesses in town, but there is a touristy restaurant on the edge of town.

The Barn in Smithville, Ohio, is appropriately named because it’s in an old barn. It’s a large restaurant with two levels. One has a full menu and salad bar, and the other level has a buffet.

The Barn attracts visitors from several hours away. They are famous for their broccoli cheese soup and soup and salad bar. When we do go there, that’s what I order.

A few years ago, my step mom gave me a recipe for The Barn broccoli cheese soup. I don’t know anyone who works there, so I don’t know if it’s exactly how they make theirs, but it does taste close.

I’m pretty sure they don’t use Velveeta, but I do and it tastes great.

I adapted mine for the Crock Pot because I’m a busy mom. I also make this on the stove sometimes, and it’s delicious either way. I’ll include directions both stovetop broccoli cheese soup and for Crock Pot broccoli cheese soup.

Bring Some Bags Or Snag A Box

If you’ve got reusable grocery bags, bring ’em. Otherwise, you’ll be stuck paying a few cents for each paper or plastic bag, when it’s time to check out. I confess that I forgot bags, but I discovered an easy Aldi hack: I just used empty cardboard boxes the same ones the food is shipped in that I found around the store.
