Do You Need To Bake Mac And Cheese

Creamy mac and cheese recipes that start with a roux-based sauce , do not need to be baked before serving. A creamy stovetop mac and cheese recipe is designed to go straight from the pot to the plate — no oven necessary. You could also serve this mac and cheese without baking — it will just be really saucy. By contrast, Southern-style mac and cheese recipes must be baked in order to cook the egg and help the dish set.

There are as many different baked macaroni and cheese recipes as there are home cooks. In the South, baked mac and cheese is typically just a simple combination of pasta, eggs, butter, milk and cheese. The eggs set up to create a firm casserole that you can slice into squares to serve. If you prefer that style dish, try my favorite Southern Baked Mac and Cheese recipe. This recipe, by contrast, uses a roux to make a creamy béchamel that coats the noodles in sauce. If you’re looking for the ultimate creamy baked mac and cheeserecipe, then you’ve come to the right place!

For me, its important that the mac and cheese stay flavorful and doesnt become one-note. The cheese flavor really needs to come through. When you take a bite you should taste cheese and not flour or worst yetnothing!

Thats why I like to use both extra sharp cheddar cheese and Parmesan cheese. The two complement each other nicely and their flavors dont get lost in this baked dish.

Faq About Homemade Mac And Cheese

What cheese is best in mac and cheese?

There are so many options when deciding what type of cheese to use. It depends on the flavor you are going for! If your recipe makes a béchamel sauce before adding the cheese, really any cheese will work, as long as its a smooth melter. Avoid dry cheeses, like feta or cotija. If you are adding cheese without making a béchamel first, you may want to add a portion of processed cheese for a creamier consistency, such as Velveeta or american cheese. Adding a little cream cheese also works for this. Personally, I find mild cheddar to be lackluster in flavor, so I lean towards sharper cheeses for more pronounced flavor, such as extra sharp cheddar, gouda, or parmesan cheese.

Why is my dish grainy / not creamy?

There could be several reasons why its dry or clumpy. First, be sure not to add the cheese too quickly. Grating or cubing cheese and adding a bit at a time helps it emulsify into the sauce. Also, lower the heat of the milk before adding cheese. If the mixture is too hot the cheese will seize and separate. If baking the macaroni and cheese, pull it out of the oven when it starts to bubble around the edges and middle is very hot. Overcooking will make the dish grainy.

How To Keep Mac And Cheese Creamy

I’m sharing a handful of tips to help keep your baked mac and cheese creamy, smooth and saucy.

    • First, no eggs. Unlike the Southern-style mac and cheese, this creamy version does not include eggs. The eggs help to “set” the casserole, giving it a firm, dry texture. Since that’s not what we’re going for here, you’ll need to leave out the eggs.
    • Next, lots of sauce. We’re not skimping on cheese, milk or cream in this dish. We’ll make plenty of cheese sauce to coat the noodles. It looks like a lot of sauce, but you need that amount in order to keep the dish creamy in the oven.
    • Velveeta cheese. That’s right, I said it. Blasphemy?! Maybe! But trust me here: Velveeta melts smoothly into the sauce giving the mac and cheese a rich, creamy texture that you just can’t quite replicate with other types of cheese.
    • Baking Time. This casserole goes in the oven at a low temperature for just 15 minutes. This short baking time is important because it’s just long enough to melt the cheese on top and get the noodles hot inside, but it’s not so long that it dries out the pasta and sauce. If you like a crispier crust on top, you can pop it under the broiler for a few minutes at the end.

How Long Do You Bake Mac And Cheese:

Macaroni and Cheese is typically baked for 30 minutes in the oven at 350 degrees when using an egg to help set the milk and cheese mixture. If you arent using an egg, additional cook time will be needed, from 45 minutes to up to an hour.

What are the best cheeses for Mac and Cheese? Sharp cheddar, jack cheese, pepper jack cheese, mozzarella and gouda are all top favorites. Adding a harder cheese like Parmesan as anything other than a topping will result in a grainier mac and cheese filling. Of course any processed cheeses like Velveeta or American cheese are popular options as well to create a more creamy filling.

Yes, I have frozen it with success! I make it up to the point of baking, cover well, and freeze right in the pan. Then I bring it out and let it thaw at room temp for an hour or so, and then into the oven. Just like making it ahead and refrigerating it, the result isnt quite as saucy. But still delish.

Tips For The Best Homemade Baked Mac And Cheese

    • Use block cheese and shred, do not buy the pre-shredded cheese. The pre-shredded cheese is great for so many things but not macaroni and cheese. Its coated and wont melt properly. You need to shred it yourself for the best result.
    • Cook your pasta to slightly less than al dente, about one minute shy is perfect. The reason is that this is baked mac and cheese so the pasta will continue to cook in the homemade cheese sauce in the oven. You dont want soggy macaroni.
    • I used elbow pasta but really, any tubular past will work.
    • This mac and cheese recipe starts with a roux. The roux is super important to getting the creamiest cheese sauce of your life. Here is what you need to look for:
    • The roux is whisked together until bubbly and golden.
    • Whisk in cold milk not warm to prevent the flour from clumping.
    • Cook the roux until you see bubbles on the surface and then continue cooking for an additional 2 minutes before adding the cheese.

What You Need To Make Baked Mac And Cheese:

Really simple ingredients in this one, and lots of room to adapt the recipe to make it your own. For this macaroni and cheese recipe, youll need:

    • Elbow Macaroni other shapes will work, as will whole wheat pasta. We havent tested this with a grain-free pasta, but it would probably work. Of course, the texture would be slightly different.
    • 1 pound of shredded cheese we like extra sharp cheddar, but you can use many types of cheese. We always recommend shredding your own cheese fo the best texture , but pre-grated will work in a pinch.
    • Flour this helps the mac and cheese thicken up.
    • Ground mustard this is totally optional but it adds depth to the flavor. You can also use dijon mustard if you dont have ground mustard.
    • Milk whole, 2%, skimtheyll all work
    • Butter helps you get that golden brown top on the macaroni and cheese!
    • Salt and Pepper always! You wont need a lot of salt since cheese is salty.

Making Mac And Cheese Ahead Of Time

Easiest ever baked macaroni and cheese
    • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
    • Before baking, let dish sit on counter for 30 minutes.
    • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

    Sweet And Savory Meatballs

Mac and cheese tastes great when paired with a meaty side. The savory and sweetness of these meatballs works very well against the creaminess of the cheese sauce. A great thing about meatballs is that you can tailor the taste to suit your preferences.

Whilst some may prefer traditional meatballs that have been cooked in an ol marinara sauce, others may opt for meatballs that have a barbeque or chili flavor.

A great thing about meatballs is that they are fairly easy to make from scratch, but you will likely find pre-made varieties at your local grocery store too. If you are going to be making your own meatballs, you simply need to combine the ingredients before frying or baking them.

Can Mac N Cheese Be Made Ahead

This is really best served immediately, but if you need to make it ahead, here is what I recommend:

  • Cook the macaroni, shred the cheese, and make the sauce, keeping all 3 components separate until just before youre ready to serve it.
  • Then, rewarm the sauce over low heat, stirring often.
  • When the sauce is heated through, combine it with the pasta and layer it in the pan with the remaining cheese.
  • Bake it off and serve.
  • If you need to buy yourself a little extra time, keep it warm in the oven on the lowest possible setting.

You *could* assemble it and keep it in the fridge or freezer, but I find the above method preferable because the macaroni will absorb a lot of the sauce as it sits.

I love adding seasonings to the roux to amp up my mac and cheese. This one has smoked paprika for yep a smoky note. And I love how dry mustard powder helps emphasize the cheesy flavor. Some readers like to add a hefty pinch of onion powder, others love a bit of nutmeg. If you like heat, adding jalapeños is delicious .

You can also tweak the flavor by varying the cheeses. Readers report using smoked cheese for tons of sultry goodness Other readers have added mozzarella or jack for some stretchy goodness, creamy havarti, parmesan , or prefer to go with extra-sharp cheddar.

Speaking Of That Toasted Panko Topping

My baked macaroni and cheese is incredibly cheesy and creamy, but what really sets it over the top is the buttery panko topping. I love the crisp, crunchy texture of panko . Panko gives the smooth and creamy mac and cheese that extra something that makes it irresistible.

Before adding it to the top of your baked mac and cheese, youll add it to a small pan along with some butter and olive oil and then stir it frequently until it becomes lightly golden/toasted.

Its such an easy extra step and it adds everything to this baked mac and cheese!

Can I Make This Macaroni And Cheese Ahead And Bake It When Im Ready

Yes you sure can. Just let it cool down, put some plastic wrap right against the surface of the mac and cheese and stick it in the fridge. If you have a few minutes to bring it out and let it warm slightly before you bake it, do that. But if you cant, just bake it till the center is hot and the edges are bubbling.
